A word from Final Cut - Hollywood Casino at Charles Town Races
The Final Cut is a contemporary American steakhouse featuring hand selected USDA Mid-Western Prime Beef, corn-fed and naturally aged up to four weeks to insure maximum flavor and texture. Each steak is hand cut to order, seasoned with kosher salt and tri color peppercorns, then broiled at 1600 degrees to create a thin charred crust that seals in the delicious natural beef juices. All steaks are finished with a touch of butter to enhance their natural richness. In addition to serving the highest quality beef, The Final Cut Steakhouse also features American Kobe Beef, Colorado Lamb, Duroc Pork, Free-range Chicken, Wild Salmon, Cold Water Lobster, Sushi Grade Ahi Tuna and many seasonal shellfish delivered daily to our door, plus incredible side dishes and fresh baked breads. On top of all that, The Final Cut Steakhouse offers a three hundred bottle wine list that features both New and Old World wines to pique any diner's interest. Welcome and enjoy a touch of Hollywood!Continued

  • "We recently celebrated our wedding anniversary at The Final Cut based on word of mouth recommendations. We would most definitely return again and again! Not having ever been, we decided to go with the Pre Fixe menu and it was really outstanding. Everything was cooked perfectly, presented beautifully and tasted perfectly delicious! Our waiter and all other staff we dealt with, were top-notch. We even had a card from the restaurant wishing us a Happy Anniversary. The prices are a little high on the al a cart menu but that would not stop me from returning. Very high quality."

  • "Arrived a bit early and the staff were very gracious and got a table for us right away. We ordered the filet (wonderful) and lamb chops (order medium rare and arrived rare). Service was spot-on, however there were things that were a bit off: menus arrived with grease spots on both the menu and dessert menu (restaurant manager should check), no bathroom in the restaurant (no control by the restaurant) and no dress requirements (many people in flip flops and tee shirts). However, that being said it was a fine meal and we certainly shall return."

  • "Our server was outstanding however the same cannot be said of the food. The steaks were good but the sides were disappointing to say the least. Again, service/our server was great but is way overpriced for the amount and quality of food received."

  • "PERFECT. We have dined in 471 cities, 42 states and seven countries. Final Cut rates on our "Top Five" list, beaten out ONLY by Las Vegas, Italy, Niagara-on the Lake (Canada) and Switzerland. Value of 100% for price, consistency of food and service, also providing remarkable "team work" from their entire staff. Truly a "Diamond in the Rough". We have been there 37 times and every time we take others - they are ALWAYS amAzed. GREAT job from all of the staff."

  • "Best ceasar salad and new york bone-in steak I have ever had...outstanding...also the salt encrusted baked potatoe was awesome..."

  • "My husband and I dined with two couples we have not seen for a while. We knew they loved a good steak dinner and The Final Cut did not disappoint. We had a lovely time. Nathaniel made sure our service was excellent and reconfirmed our order before it was placed. The food was delicious, especially the steaks, and cooked to perfection. The sides are ample for sharing and that's exactly what we did. The vegetables were fresh and flavorful. The bread is out of this world! A few of us had drinks but we did not partake of the wine list. The ambiance was enjoyable. Even though the restaurant is located inside a casino, it was quiet. Although a bit pricey, we enjoyed the meal and our time together at this establishment. Thank you!"

  • "We had excellent service and great food and drink. They were especially considerate for my wife's birthday. We had a great night out!"

  • "We had a wonderful meal at Final Cut. The service was impeccable from start to finish, from the Hostess to the Waiter to the Assistant waiters. The pace of the meal was impeccably managed. The food was sumptuous. Very unique presentation for shrimp cocktail appetizer. The scallops were perfectly cooked. Excellent wine list featuring international wines, West coast US wines and more nearby Virginia wines. We were delighted."

  • "The food and service were very good, however, the table was uneven and rocked about and there was no bathroom in the restaurant: you had to use the public bathroom in the casino."
    Dined on 7/5/2014
  • "The serving sizes are large, however, expensive. Service was very good. Dinner for 2 people with drinks and 1 dessert was $145 plus 20% tip. Expensive."

  • "On a very busy night - made more so by the Creedence Clearwater concern - Chef John Harder found time to honor another special request for carpaccio. We have enjoyed his carpaccio creations more than 20 times and each one is very different from the last. This time, the plate was "painted" with a new sauce created for a Wagyu short rib special, featuring I believe lemongrass, sweet chili and anise, and the beef was enhanced with traces of celery root and aged balsamic. The short rib special was served two ways - braised with above sauce on one side, and grilled to temperature on the other. Genuine perfection here. My wife's tuna entrée was perfect. Perfect service from McLain and flawless management, as always, made it very special."

  • "I was bringing a group of friends as a way of thanking them for some help that they had provided me during a difficult time. I have been manageing in the food industry from 1990 til 2012. I worked at the Rainbow Room in NYC and had average expectations for my visit. Myself and all 3 of my friends were blown away at the level of service and the superior quality of the food that was served. It mad the visit over the top and you have created raving fans. we are now going to plan a quarterly visit to the restaurant. If lasker is there...he was our server, I must have him. His knowlegde level and the ability to anticiapte when to bring the next course was amazing. I will be back with new people to experience what I have found. Thank you!"

  • "Our first time at The Final Cut after years of hearing positive reviews. It certainly didn't disappoint. It is pricey yet the quality of food and service was outstanding."

  • "This very special anniversary/birthday celebration has happened in Atlantic City for more than a decade, but the Final Cut won out this year. On this night, Chef John Harder returned to his West Coast roots. A requested carpaccio arrived drizzled with chipotle cream, followed by an incredible Mexican shrimp ceviche, with fresh cucumbers and a lime/jalepeno marinade. This was followed by a presentation of Opah (a tasty fish native to Hawaii). The entrée was a perfectly presented porterhouse for two, along with a sample of six wonderful sauces. The first three courses were the sort of original creations that kept us local this year to celebrate. This chef is far beyond good; he is incredible! Service from McLain was perfect, as always."

  • "Wish we had one in Charlottesville! Best for special occasions. Great food! My husband loves the steak and I always get the sea bass. Great sides, wonderful atmosphere and professional staff especially George! We plan our trips for when the restaurant is open. Equal or better than Morton's!"

  • "We are never disappointed by the quality of food and the attention of the staff. We are treated as valuable diners and receive individual attention. My husband mentioned on one visit that I liked the pistachio shortbread and I was presented with six cookies to go. The staff is very knowledgable and personable. The steaks are always perfectly cooked and the sides are generous and flavorful."

  • "Steaks are cooked consistently to the desired temp. We have never had a bad meal. The chocolate lava cake is to die for. My favorite appetizers: shrimp cocktail (huge) and crab duo."

  • "My family recently celebrated a special birthday and enjoyed a wonderful experience. We ran late for our reservation--the staff was very accommodating. Our wait staff was wonderful, very familiar and helpful with the menu. Made us feel like home. The house Cabernet was very nice and was quickly followed by some to-die-for bread. I choose the seafood risotto, which was excellent, the rest of our group choose steaks--they are all still talking about how delicious they were. "best steak I've had in years" and the sides were equally as yummy, grilled asparagus, mashed potatoes, and mushrooms were notable. The desserts were spectacular if you like a sweet finish, the Opera Bar was worth a take out container if you don't have room. It's a gem!"

  • "A very late - and unreasonable - special request for Carpaccio appetizers was satisfied in spectacular fashion by Chef John Harder. Generally speaking, advance notice of a day or more for this appetizer would be reasonable, but only a few hours was given in this case. What made it to the table this night was an amazing presentation of Wagyu short rib carpaccio, which I have never seen attempted anywhere but the Final Cut (including one previous experience). The dish was presented artfully - which is normal here - and the taste was over the top. Perfect service from McLain and a very skilful management solution, couple with the incredibly talented kitchen keep the Final Cut at the very top of my fine dining list."

  • "Have been here three times in the past year. Notable decline in prep and service. We had the filet and the ribeye. Both came out charred, seemingly with a lot of flare ups on the grill beneath them. They were the correct inner temperate but the outside was charred and ashy tasting. Service was poor. The waiter was knowledgeable and experienced, but was rarely to be seen. We don't mind a lengthy, relaxing meal, but 20-30 minutes between courses is draining. The manager offered a free dessert to compensate for the slow service, but even that took another 20 minutes to arrive when we just wanted to get our check and leave. Not worth it anymore to us."

  • "This was a dining experience that dramatically show-cased the extraordinary talents of Chef John Harder; with a little extra fun. A special offered 4 courses of Wagyu beef, presented with a regional theme. Anyone guessing the specific cut of Wagyu would receive a free 5 course chef's tasting dinner. Not one person correctly guessed the cut (it was short ribs!); a credit to the skillfully designed presentations. Incredible carpaccio, flavored with crispy ginger strips and finger lime was beyond impressive; followed by a Taco, barbeque (a hint of rootbeer in the sauce!) and a wasabi-hinted presentation. This was the most innovative dining experience I have ever experienced. Service from McLain was perfect, as always. "

  • "Charles Town has a notable list of things to do...but this is THE place to have a special dinner. The Final Cut rivals any top-rated restaurant...my husband and I shared an asparagus bisque, a filet/scallop combo and an Amazing Creme brûlée! Not only we were there because of the Charles Town Classic horse race but we also wanted to watch another race in California. Hristina arranged the feed into the bar so we could see it...not just a channel change. McLean was our waiter...and quite a good one!!! The food and staff make this a very special place."

  • "There was only one thing that stopped our night from being perfect. the filet was under cooked. And the filet was the birthday girls. My fiancee enjoyed every other aspect of the restaurant. I enjoyed myself as well. Great place to eat. Outstanding food."

  • "This was our first visit to the Final Cut. Extraordinary service by a young man with great poise and personality. The food was above average with the steaks being very good but not excellent."

  • "The Final Cut at Hollywood Casino, Charlestown Races, WV is as good as any Morton's or Ruth Chris. But beware, while the Final Cut at Harrisburg location is more like a Long Horn Steakhouse. I always enjoy the Charlestown location. The food is always superb, the staff friendly and accommodating, and the steaks are always done to perfection. I would highly recommend this to any beef eating aficionado."

  • "Wife and I had dinner on a Friday night around 7pm. Both ordered NY strip steak I had the bone in she did not, both had been cooked to perfection! Salad was the best I've ever had. Top notch food and service, well worth price!!"

  • "Another reminder that Final Cut is far more than a great steakhouse. The special was roasted red pepper fettuccine served with "head-on" Hawaiian prawns, a creation from Chef John Harder, but delivered tonight by Chef Christian Evans. This perfect presentation was preceded by a requested carpaccio. Chef Christian prepared a "lobster carpaccio" which featured salmon sushi and jumbo lump crab which was nothing short of incredible. When it comes to unique shellfish and seafood presentations, Chef Christian has few peers. McLean's perfect service included the arrival of cocktails that he did not need to ask about and, as always, a very personal touch with everything being exactly right. A perfectly managed restaurant!!!"

  • "The Final Cut at Charles Town is probably the best restaurant that I have had the pleasure to dine at. Our friends also recommended Lasker as our waiter and he was absolutely the best at his job and friendly too! We were told we should request one of the semi circle booths. We did, and it seemed very private and cozy. We had been advised that we would be very pleased with the food, and we were!! Everything about the meal was enjoyable. I look forward to returning to the Final Cut at Charles Town."

  • "I hated my French onion soup, which is normally my favorite part of a meal. At the beginning of the meal the waiter said the steak are seared, mine was burnt! I won't be back I have had better steak at golden corral. This has nothing to do with the price, just the fact that my $44 steak was terrible!"

  • "A "Lobster Feast" was the special tonight, and it was indeed "special". A special request for Carpaccio, which arrived in wonderful presentation crafted by Chef John Harder proved a great start to the dinner. This was probably our 30th Carpaccio enjoyed here, and Chef Harder somehow always finds a way to do it differently, with each new treatment adding something unexpected and exciting. The lobster, with tails intact and part of the shell stuffed with a delicious creation that included Chilean Seabass, was pretty much as good as it gets. No surprise, given the talented chef guiding the kitchen, but it was another reminder that this is not just a great steakhouse, though it is certainly that as well. Perfect service from McLean as always."

  • "You will receive personalized service that makes you instantly a regular. What impressed me the most was their steak. They do not try anything outlandish. What you get is a perfect cut, grilled to your specification, with salt and pepper only. Prime example of when less is more."
