A word from Etch
Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

We invite you to come try Chef Paquette’s latest endeavor, a menu referred to as “signature Deb – unique, playful, over-the-top, and as the address at Encore implies, ovation-worthy” (Carrington Fox, Nashville Scene).

Reservations for 5:15 pm (only time we could snag for that day) which was too early for us, however, planned our day accordingly, and it was well worth it! For special occasions we will call months ahead! Don't miss the pork belly appetizer or the cauliflower, both delicious! Filet cooked to perfection with burnt brown butter sauce........ OMG! Husband had the lamb chop....equally delicious! Great location, beautiful restaurant and able to talk through dinner as the noise level is contained and well managed (not sure how with open ceilings). The place was full by 6:00 pm!"

Roasted Cauliflower with truffled pea pesto to start followed by a grilled Lamb Porterhouse with a feta/garbanzo bean Filo clutch, Tunisian poached apricots & pomegranate walnut sauce (not to forget a side of Brussels Sprouts in Duck Schmaltz), can only be followed by their warm (melt in your mouth), triple chocolate/strawberry cobbler for dessert. A wonderful dining experience indeed!"

  • "Excellent food & service. 3 of us had dinner and each had something different. Appetizers were shrimp&calamari and roasted cauliflower; both excellent. Entrees just pop with fresh herbs, make common foods so delish. Everyone had dessert and the best of the 3 was the peaches/pound cake, second was the chocolate pretzel bar and lastly was the fresh fruit w/goat cheese. Can't wait to return. Hardest part is getting a weekend reservation!"

  • "We were very excited to try Nashville's food scene since we just moved here from Las Vegas. We perused magazines, websites, reviews, talked to locals, and we came back with a pretty hefty list. Near the top of that list was Etch, so, of course, that was our first reservation. Inside, we were encouraged. The smells were woody and the décor was fresh, upscale, and not overdone. Our waiter was attentive at first, but steeply dropped off as the place filled. While the shrimp bruschetta was amazing, the butter tasting was only so-so and the entrees were entirely lacking. I didn't even finish mine. However, the desserts were divine. The new one - the creamsicle - was a wonderful treat. Maybe we'll try again in a few months, but not next week."

  • "The calamari and shrimp bruschetta appetizer was to die for! The cauliflower appetizer was also quite enjoyable! There was a delay in the arrival of our main course, however, the wait staff was very apologetic and handled it beautifully by giving us a free dessert. Three of us shared two entrees, which was more than enough. Both the filet mignon and Corvina were prepared to perfection! The chocolate pretzel bar dessert was from out of this world!"

The waiter was very pleasant, helpful and did not engage in that awful "dinner theatre" where some servers seem to think you are there to see them. But the food was the rightful star.   • "Wonderful meal at Etch! The only weaknesses were minor, but stood out compared to the otherwise very high quality of the food and service. The rolls served with our meal were only mediocre. If there is bread, it should be really good. There was a bit of a problem with pacing, our entrees came a little too long after our previous course. My entree, the filet, was not as exciting as my husband's lamb, or as interesting as our shared salad, which ranked as one of the best I've ever had. All in all, a really lovely meal, priced appropriately in a nice setting."

Generally they are getting some great reviews so I've been going with fairly high expectations. I did so with Etch and have to say that I was delighted. Service was excellent. Food was not only perfectly executed but more importantly was unique and seasonal. If I see one more chicken and waffles on a menu, I'll scream so it was a pleasant surprise to see unique items here."

The banana soup was superb as was the rutabaga entrée. The flavors were complex using healthy plant-based ingredients - this is the true measure of an talented chef."

The food is absolutely fantastic. Many varied and subtle tastes but not overdone at the expense of a great meal. Quiet atmosphere if you want to talk but can accommodates a larger party.   • "Poor does not begin to describe our experience @this restaurant. Service is lacking big time. There were only 2 of us dinning. After waiting over n hour for our entrees to arrive, we had to ask the waitress how much longer? Prior to this she never came over to ask if she could get us anything or mention anything about the long wait. I could not eat my dinner as the butter in the dish was overwhelming. Management came over to the table behind us n to the side of us (we were seated at the window) but not to us. The table that was to the side of us didn't even wait that long for there dinners (a party of 4) n the manager came over to them n said "sorry for the wait. I would like to buy you desert. Skip Etch and try Germantown Café instead!!"

  • "This is a 'must eat' if you're ever in or around Nashville! We originally had a late reservation because it was the first available. We stopped by the restaurant a couple of hours earlier to see if they had any last minute availability. Fortunately, they accommodated us and we were seated at the Chef's Bar which was basically a counter that looked directly into the kitchen. We were amazed at the level of attention and detail every plate received before being sent out. Our meal consisted of appetizers including the Butter Sampler, Roasted Cauliflower; entrees included the cobia and their fresh fish of the day which happened to be scallops; dessert was their Chocolate Pretzel Bar. This was an explosion of flavors that we didn't want to end!"

  • "For our 20th wedding anniversary we wanted to try some place special. Something other than the ordinary restaurant on every corner. From the time we arrived to the time we left the people of Etch did not let us down. Our waiter was knowledgeable and made great suggestions. He put us at ease with our lack of knowledge about wines and helped us select a great Italian red. The food gets four stars only because the fish of the day was just good. A white salmon that just failed to deliver at the same high standard as the rest of out meal. The cauliflower and Cobia dish were as good as described in every review we read. I had to try the strwbry cheesecake sundae, the idea do black pepper in the whip cream...you'll have to try it."
