A word from Etch
Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

We invite you to come try Chef Paquette’s latest endeavor, a menu referred to as “signature Deb – unique, playful, over-the-top, and as the address at Encore implies, ovation-worthy” (Carrington Fox, Nashville Scene).

  • "I have friends that talked Etch up so much that I was almost preparing myself to be let down. But, the restaurant lived up to everything I had heard about it. I didn't even know I liked cauliflower, but the roasted cauliflower at Etch was to die for. For my meal, I had the venison. The chef is a genius. You wouldn't think that grits, ginger, sweet potatoes, guava, banana, and venison would combine to make such a delicious meal, but it did. My only complaint is that service was rather slow. That may be due to the fact that our server also had a larger party that seemed to be sat right before our party of two, which I feel could have been avoided. Overall, it was an excellent experience and I cannot wait to go back!"

Everything from the bar drinks to the dessert is absolutely fabulous! I'm not usually a dessert person, but I never pass on desserts here because I know I'm always in for a wonderful treat. For starters, some of my favorite must haves are the cauliflower and the octopus bruschetta."

  • "Every dish that we tried at Etch was outstanding! Started with the Octopus and Shrimp Bruschetta and Roasted Cauliflower. Each was amazing good - full of luscious tastes. We had Cobia, and Pork Tender Loin and Filet (7oz) for the main courses along with the ginger grits. Each one of our party felt that the dish we had was the best that we have ever had. True compliments to the chef. Honestly, the best restaurant I have ever had the please to dine. THANK YOU"

  • "I dined here before a TPAC Broadway show with friends. The food combinations were intriguing and everything we ordered tasted wonderful! We had a reservation for 5:45 and while we were 10 minutes late, we thought we still had plenty of time to make our 8:00PM show at TPAC. The server had even noted that the entrees take about half an hour, so we ordered everything (appetizer, salad and entrees) at the beginning. It still took much longer to receive our entrees, which while they tasted excellent and were cooked well, we had to scarf down because we were going to be late to our show. We did end up being 20 minutes late to the show. So only go here if dinner is your primary event or if you are going after an event."

  • "The great food was so over sauced too many things going on the plate. Even though the pork was good it was ruined by the barbecue taste and the gravy. The filet was tender but taste was changed by the accompaniments. All in all there are too many things going on to really enjoy it and the three in my party are all well versed in food"

The atmosphere was lively, professional, and enjoyable. What really stood out was the food. I had the Cobia, which was a little on the sweet side, but delicious otherwise. My boyfriend had the filet, and it was looked nicely - smoked and tender. I think Etch stands right next to Flight on my list of restaurants in Nashville. We'll see how others compete..."

  • "This was a great end to our visit to Nashville. We had a fab lunch. My wife had the duck sandwich and I had the chicken entree w sweets, Kale, cocoanut and lemon grass seasoning. We had a great server and Managed to find room for dessert. Both were awesome. I had the pecan Shortbread w rhubarb sorbet my wife the chocolate/caramel cake. I would recommend this place without hesitation. Great vibe, nice clean Interior design, very creative dishes!"

  • "From the valet parking to the wonderful service to the delicious food, we thoroughly enjoyed our meal at Etch. The bartender was was very friendly and we laughed as he showed some ladies how to eat the cauliflower starter by dipping the cauliflower and feeding them. Our server was friendly and attentive. The food was very well prepared and beautiful to look at. We will definitley be going back in the future."

These all offered unique flavors and textures that blended extremely well. Living in Chicago, the Filet would equal or exceed any steak offered here. We highley recommend Etch, make sure you have a reservation, they are hard to come by as the restaurant has a strong local following."

  • "After finding out the owners were previously Zolas on Westend, we couldn't wait to try it the next time we were in town. We were not disappointed! We arrived early, sat at the bar, and were seated close to reservation time. The bar had fresh squeezed ruby red grapefruit juice for drinks. The service at bar and dining area was excellent. The food was creative and so was the plating. It is within easy walking distance from the hotels downtown. This is a must stop when downtown."

  • "I recently ate at Etch for lunch. The appetizer of roasted cauliflower was delicious. For my main course, I had the thai chicken quinoa with shiitake mushrooms, onion, and sugar peas for lunch. The peas were crunchy and the chicken was nicely done. The dish was not too hot spice wise and wasn’t drowning in sauce the way thai dishes can sometimes be. For dessert, I had the chocolate caramel pretzel bar, which was very good. The service was great and all the staff were very friendly. I would go back, maybe for dinner this time."

  • "This restaurant is everything I look for in a restaurant. A beautiful presentation of healthy and inspired choices with many vegetable and salads options. I enjoy a pescetarian diet so I loved the salad with raw tuna. I only wish there were more seafood/vegetarian choices on the dinner menu. I was in Nashville for a conference and once I found Etch, I didn't go anyplace else. Sorry that I am flying back tomorrow and can't go one last time. I wish there was a place like this near me. It rivals some of the best Boston restaurants."

  • "This seems like a good place for doing business; there are a lot of business people here. It's very high-end...$28-$40 a person. Service was excellent. The ambience is very modern and clean and professional, but too sterile for my personal taste. If you're looking for someplace more "colorful," for lack of a better word, I would go to East Nashville. The food was very excellent gourmet though, I will say that - compares with Cafe Margot and Firefly Grille and the like."
