A word from Etch
Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

  • "Had an early reservation at 5:30 due to availability. The decor is contemporary with clean lines. Ed, our waiter, was very friendly, attentive and made suitable menu recommendations. Liked him a lot. We are light eaters and Ed arranged for our salad and entree to be split for us. We enjoyed all our selections...pork belly, octopus and shrimp on bruschetta, beet and berry salad, and cobia with Turkish spices (the fruit juice was a tad too sweet). The cherry and chocolate ice creams were homemade but not exceptional. Wish I had tried the vanilla goat ice cream. Overall, we were happy we made the choice to dine at Edge. We hoped to find an upscale dining place with reasonable prices downtown near the Hilton and we found it!"

  • "We absolutely loved etch! Not only was the food amazing but the service was as we'll! Definitely try the butter tasting it was like nothing I've ever had before! We also had the white fish dish which they have had on their menu since day one and the flavors were soo distinct and bold! The last thing we had was the tenderloin which was nothing short of what meat should taste like with added extra flavors to make it probably one of the best tenderloins I've ever had! We will definitely be back every time we go to Nashville!"

  • "The whole experience was wonderful and the best part was that the vegetarian entree was fantastic. I'm used to the same few things when it comes to vegetarian entrees (e.g. a collection of side dishes or a delicate plate of roasted vegetables), but the rutabaga dish was amazing and like nothing I had ever had before. It was tasty, hearty without being too heavy, and it was a substantial dish (despite loving it, I couldn't finish it)."

  • "I went here for the first time on Saturday with my family to celebrate my birthday and it was so great! Everything from the outstanding service and knowledge to the food itself. Everything we had was delicious!! Started off with their most popular appetizer the 'roasted cauliflower' and our entrees were the cobia, filet and fish of the day. We were all very pleased with our choices and ended with their peach and brown butter cake! The restaurant had a great atmosphere and beautifully decorated. The owner and head chef stood in the window garnishing every dish that went out with fresh ingredients. Everything about this place is perfection!"

  • "Visited on Sat night w/group of 4; good description of menu by waiter as the menu reads as complex & lots of ingredients. Tasting the food proved the kitchen was capable of boldness & restraint. Lots of ingredients and they shine through individually and in concert. Butter tasting was interesting & worth it (smoked Parmesan was outstanding). Roasted cauliflower w/truffle oil was great but the truffled pea puree & almonds was amazing (best taste of the night), cobia was excellent w/orange sauce & Turkish spices; lamb tartare was flavorful w/great sauce & tempura eggplant. Consistently great food and great combination of flavors."

  • "Ordered their "Signature" dishes. The cauliflower appetizer was undercooked which is such a shame with cauliflower because the flavor of cauliflower changes dramatically as it is cooked. I do cauliflower better in my own kitchen at home. The spreads for it were really good but my mouth was exhausted from chewing huge hard pieces of the florets. The Cobia was disapointing and way too involved with it sitting on a strange beignet that just got soggy in the sauce. The Cobia I got was in pieces as opposed to a single filet and was over cooked almost like I got someone's left overs. We ordered the brussel sprouts which again were overcomplicated and dripping with oil. Ugh!"

Their first choice would gave been the palm who has a better fish selection, but it was my special occasion and I wanted somewhere I had never been. The service was outstanding, the food was fantastic and cooked to perfection. Very different and I am happy to have been there! And I WILL return!"

  • "Took our son back to Vandy and I had researched nice restaurants in Nashville and Etch came up. Made a reservation. I thought it would be very trendy inside, but it was not. Make sure you take a sweater because it was a bit chilly. I will have to say the food was delicious, unusual, and presented beautifully. The pork belly appetizer and the signature cauliflower appetizer were wonderful! The brussel sprouts and beet salad were tasty as well. We all shared. The duck was on a salad. I wish it would have been on something else. My husband liked his fish on a beignet and my son loved the filet. I would recommend Etch if you are a foodie."

The Cauliflower and Shrimp/Octopus appetizer was an immediate hit with our out-of-town guest (as always!) - she especially loved the Smoked Pea Pesto - if only Deb would post that recipe!!! They even split the Bruschetta into 3 for us for sharing. We continued with appetizers mostly, my husband had the Lamb tartare, one of the new menu items. It was outstanding and highlights again why Deb Parquette is one of the best chefs in the country. Mediterreanean flavors were abundant and the lanb was incredibly tender and fresh tasting. My friend had the Pork Belly, an extremely generous appetizer which she devoured."

The entrees and salads burst in flavors and the each ingredient was treated with care. Together they achieve a culinary balance that I have rarely tasted in any other restaurants classified as serving the "American cuisine". The service was attentive and friendly. The only small (nit-picky maybe) criticism is that the wait staff tried a bit too hard to talk up the accolades of the chef and food. Too much time spent telling us about awards, articles, recognitions and mentions. Best to let the experience speak for itself...which by the way it did wonderfully. I look forward to dining here again."

Everything was perfect! We ordered 3 apps for 4 people and we cleaned each one. Every single one of us could not stop talking about how fantastic our entrees were. To make our night perfect, we had the BEST server in Brooke. This is now our new favorite place."

  • "I made the reservation because Etch is close to the Ryman. I then asked a friend that lives in Nashville about it & she said 'Keep it, they are great' & suggested we sit at the bar facing the kitchen. That was a great suggestion. Our servers were also outstanding, very attentive, knowledgeable & friendly. The roasted cauliflower was wonderful. We had the Cobia (amazing combination of flavors) & the filet. The filet was tender and had wonderful mixed veggies that put normal mixed veggies to shame. Overall it was the best meal I've had in a long time & I love good food. Totally recommend it, particularly to those open to trying different flavors!"

  • "Went once and loved it and couldn't wait to go a second time but they changed about 90% of the menu. No duck confit app, no scallops, no lamp chops, all excellent things from before. The replacements aren't that exciting :( I had the duck entrée which was called "ratatouille" but it was just meh and served with a side salad that was nothing at all like ratatouille (boring). hope they bring back the other stuff or make another change soon."

  • "A short walk from the Omni and a perfect stop en route to an evening on Broadway listening to music. My halibut was amazing. The "stacked" presentation was impressive from the flavors of the chorizo blended with sweet potato chunks as a base and ending with the guacamole topping were a delight to the taste buds. My companion had the roast duckling and it was equally enjoyable. Our server, Kim, was pleasant and timely and added to the experience. We will definitely return on our next visit to Nashville."
