A word from Etch
Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

We invite you to come try Chef Paquette’s latest endeavor, a menu referred to as “signature Deb – unique, playful, over-the-top, and as the address at Encore implies, ovation-worthy” (Carrington Fox, Nashville Scene).

Presentation was well done and the service was excellent. Comparable with the finer restaurants in DC, NYC and Philadelphia easily.   • "Once again Etch left nothing to be desired. The service was great, the food was outstanding, and it is just a great experience all around! My husband and i shared two appetizers: Roasted Cauliflower and Octopus & Shrimp Bruschetta. The Roasted Cauli was even better than the last time we had it and the Bruschetta was so flavorful!! The octopus wasn't fried but it was so tender and delish! My husband had the fish feature and I had the lamb ratatouille. Both dishes were amazing---flavorful, interesting, complex and just great! Our dessert was a chocolate pretzel bar---holy sweet and salty Batman! This was just divine! Rich chocolate, salty pretzels, pieces of toffee on the side---perfect way to end the dinner!!"

  • "Poor does not begin to describe our experience @this restaurant. Service is lacking big time. There were only 2 of us dinning. After waiting over n hour for our entrees to arrive, we had to ask the waitress how much longer? Prior to this she never came over to ask if she could get us anything or mention anything about the long wait. I could not eat my dinner as the butter in the dish was overwhelming. Management came over to the table behind us n to the side of us (we were seated at the window) but not to us. The table that was to the side of us didn't even wait that long for there dinners (a party of 4) n the manager came over to them n said "sorry for the wait. I would like to buy you desert. Skip Etch and try Germantown Café instead!!"

  • "We've been to Etch many times and although the main reason we choose this restaurant is the proximity to the symphony center, the food and service never disappoint. The banana soup was superb as was the rutabaga entrée. The flavors were complex using healthy plant-based ingredients - this is the true measure of an talented chef."

  • "Our second time to Etch, first time was in their private dining room that seats twelve...cool room, secluded but not stuffy as one can view the restaurant in action from there. The food is absolutely fantastic. Many varied and subtle tastes but not overdone at the expense of a great meal. Quiet atmosphere if you want to talk but can accommodates a larger party. We will definately be back."

  • "The cobia and lamb were both served room temperature at best. The cobia was delicious, but the lamb was fatty and the portion was small. Every course was a little too sweet especially the beet and berry salad. The waiter was patient and knowledgeable, but even though I said I disliked anything smoked, he didn't mention the large portion of smoked sauce that accompanied the cauliflower appetizer. When he noticed I hadn't eaten any of it, he commented that he hadn't said anything because there were other sauces on the plate. (?) The atmosphere was unhurried, and the service was attentive. Overall, a nice night, but not the sensational food experience we'd expected."

  • "This is a 'must eat' if you're ever in or around Nashville! We originally had a late reservation because it was the first available. We stopped by the restaurant a couple of hours earlier to see if they had any last minute availability. Fortunately, they accommodated us and we were seated at the Chef's Bar which was basically a counter that looked directly into the kitchen. We were amazed at the level of attention and detail every plate received before being sent out. Our meal consisted of appetizers including the Butter Sampler, Roasted Cauliflower; entrees included the cobia and their fresh fish of the day which happened to be scallops; dessert was their Chocolate Pretzel Bar. This was an explosion of flavors that we didn't want to end!"

  • "For our 20th wedding anniversary we wanted to try some place special. Something other than the ordinary restaurant on every corner. From the time we arrived to the time we left the people of Etch did not let us down. Our waiter was knowledgeable and made great suggestions. He put us at ease with our lack of knowledge about wines and helped us select a great Italian red. The food gets four stars only because the fish of the day was just good. A white salmon that just failed to deliver at the same high standard as the rest of out meal. The cauliflower and Cobia dish were as good as described in every review we read. I had to try the strwbry cheesecake sundae, the idea do black pepper in the whip cream...you'll have to try it."

  • "This was my second visit to Etch and I have to say it was even better the second time around. The staff was all extremely courteous and friendly. We started with the butter tasting which was soooo delicious--the one with the ginger was crazy good. We both had the fish special which was ivory salmon (I had never heard of or seen before) and it was tender, almost buttery with a very subtle salmon flavor. Delish!! Dessert was also a treat--loved the white chocolate lemon ganache and my friend had the Strawberry cheesecake sundae. We ate every bite. Etch is now one of my favorite restaurants."

  • "Off to a great start with being able to make reservations for lunch. Warm welcome by the hostess. Our server, Ashley, was very hospitable and knowledgeable about the menu. The food was impeccable. We shared the grilled cauliflower as an appetizer. My guest had the white bean melt sandwich and I had the fish taco. Wonderful combination of flavors with the freshest of ingredients. I'll be back!"

They did not rush the meal, allowing ample time between courses to enjoy the food, have pleasant conversations without feeling like they only wanted to turn their tables.   • "The cauliflower appetizer is amazing! Even if one only goes for a drink and this app, it is totally worth it! We had been in the past and absolutely loved it! I ordered the filet again, since it was so good the first time, but since the menu had changed it just wasn't the same. I probably won't order it again since it was just ok and way overpriced for just an ok dish. This doesn't mean we won't be back though!"

  • "Took clients for dinner and am so happy that it was at Etch. The service was wonderful with Thomas recommending the Octopus and Shrimp Bruschetta. He promised it wouldn't be chewy and we should take a chance - that we'd love it - and we did! Wow - so good! 2 of us had the Cobia. We both were amazed at how delicious it was and commented that it was probably the best meal ever! The others had the Pork Chops and again one commented that it was her best meal ever. Not often do you go to a restaurant and make that claim, so fantastic job Etch. If I were there another night, I would definitely go back. And when in Nashville again, will be sure to dine there."

  • "We went to Etch with friends visiting from out of town. A mix of locals and tourists. It was a Saturday and unsurprisingly got busy around 7:00, our reservations were at 6. We had taken our guests to Patterson House and City House. They enjoyed all three locations equally. A very good wine list, not much for cocktails, but good ones for what was on the list. I would definitely go back with my parents or in-laws or even for a date with my husband, but would likely take friends to a different venue."

  • "Overall food quality was very good. Seasoning and cooking done at a high quality. Drinks were a tad steep. Appetizer was great for cost vs. quality + quantity. We had the Califlower which came highly recommended. Filet was a fair price for the portion. Scallops were a bit high in my opinion. $33 for 5 and they were average sized scallops but they were cooked to perfection and were delicious. The ambience was lacking in our opinion. Lots of bar space and the kitchen is a big distraction. There were several plates that were dropped and broken during our meal. I would rate our experience average. Glad we came but most likely would look for other places to eat. Our total meal came in at $155ish for 2 drinks / 1 app / 2 meals."

  • "I am so often disappointed going out in Nashville as there are so few places with creative menus. If I can cook it myself, why am I there? The chef at Etch is outstanding, combining textures, flavors and temperatures so that each offering and mouthful is a surprising delight. We couldn't decide what to choose, so asked our amazing waiter, James H for suggestions. He was spot on from the wines to the dessert. Don't miss the sautéed cauliflower, the beet and berry salad or the cobia-cooked to tender and moist perfection. Obviously we will be back to try out more of the delectable choices, but this night when we were celebrating my daughters birthday won't be forgotten soon! Thank you for bringing northeast sophistication to the South!"

  • "So, her cooking is amazing and I'd highly recommend this place to anyone, so take the following comments with that in mind: The initial wait for food & drink was too long. The first round of wine was slow to arrive and the bread barely showed up before the appetizers (we were literally buttering it when they showed up with the plates.) I enjoyed my entree but it's a bit much - the lovely piece of pork is buried underneath layers of other ingredients and a lighter hand would have served the dish much better. On the plus side, the presentation was outstanding, especially the lamb crudo appetizer and the seasonal fruit dessert. Finally, our waiter Justin was outstanding, even dealing with a day-old new menu he was really on top of it."

  • "After reading all the great reviews I was exceptionally disappointed with Etch. Service was poor. Entrees arrive before apps cleared, had to ask for utensils, long wait to have plates cleared. Interesting menu. I had high hopes but we were all disappointed with food that was just trying too hard. Scallops beautifully cooked but on a very overdressed salad and sauces that were not explained and not necessary. Roasted cauliflower was good but only because of the feta and pea sauces. Phyllo veg dish was good but had way too much going on. Why the random dots of sauce around the plate? Again we weren't told what they were. Inattentive service and food that was trying too hard to be different made Etch a disappointment"
