Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

We invite you to come try Chef Paquette’s latest endeavor, a menu referred to as “signature Deb – unique, playful, over-the-top, and as the address at Encore implies, ovation-worthy” (Carrington Fox, Nashville Scene).

Yes, you get what you pay for is befitting to Etch, but I sincerely believe the food we at and service we received went far beyond the price we paid. James was sincere, on the spot and actually listened to us so that his recommendations were in sync with us (1 vegetarian and 1 eat most anything tasty)... This seriously is a must place if you can plan far enough in advance to get a reservation.. We were there on a rainy Wed night and it was wall to wall people..

We picked Etch as one of our choices for dining in Nashville, Unfortunately, by the time we got there, we were worn down from six days of meetings and great meals. My regret is not doing Etch earlier, since we might have tried more of the menu options. As it was, the lamb chop and the Cbia were both excellent. there is a lot going on with the food, and the understanding is that every bite should be different. Some places cannot make this work. Etch does and more! When we return to Nashville, Etch will be the first place we stop. This is very like some of the finest places we have tried in Chicago (L2O/Naha/Charlie Trotters/etc.)

Still our favorite restaurant in town. The cobia is to die for and we also had the swordfish special which was outstanding also. Its loud, detracting from it being a "romantic" setting but the food makes up for it. Cant wait to go back.

Nice find in downtown Nashville - limited menu but the food is well prepared and tasty. My filet was better than you will find in 99% of the best steakhouses in the U.S. Nashville is being overrun by too many gimmick restaurants that don't deliver. Etch delivers excellent food and service in a nicely designed dining area where you can carry on conversation and not be bothered.

We had heard so much about this restaurant and decided to celebrate our anniversary there. Even though we could only get an early reservation at 5:45, it was really not an issue. Our waiter, Ed, was so very accommodating and extremely knowledgeable of every ingredient in every menu item. The food was really beyond description and I would be hard pressed to put any adjective on the presentation, taste, and customer service. Even though we live an hour and a half away, it is well worth the drive and we will definitely do it again!

This is the second time I have eaten at Etch. I ate at what Etch calls their "Chef's Table", which is really a bar overlooking the kitchen. My husband had the filet; it was delicious. I had the pork & it was great, too. Drinks were on point. Dessert was yummy, as well. It was well worth the money! We will enjoy Etch again.

Had a great time with new friends who have not been to Nashville. Roasted cauliflower app was amazing and so were our salads. I got the halibut special and it was meh...some kind of puff pastry and tomatoes and mushroom. My friend got the rutabaga veg dish that sounded amazing, but honestly, it was one of the worst dishes I've seen at this type of restaurant. Other friend got the pork chop and he was happy.

My husband and I went to Etch on a Friday evening before attending a concert at the Symphony Hall. The atmosphere had a clean and modern feel to it, and service was exceptionally good. They served warm rosemary rolls while we waited for our dishes. We shared the Etch salad, which was light and fruity, and had a variety of good flavors. For my main dish, I had the pork chops. Our server recommended getting it medium, but I requested that it be a little more cooked, to medium-well. It was still delicious and juicy. The vegetables, salad, and sauce base that came with it were also very good. I could tell that the ingredients were very fresh. I'd love to go back sometime and try something else on their menu!

Having recently started traveling here for business I can't tell you how impressed I have been with the Food Scene. First we ate at Husk which was incredible, then The Southern for a truly great Steakhouse experience and then during this trip we ate at Rolf & Daughters which was hip, great and a nice surprise given the really strange location. Now after trying Etch I'm perplexed at which is my favorite. A great meal starting off with the amazing Roasted Cauliflower with Pea Truffle Pesto--AMAZING! and then a delicious Cobia. Cocktails and wines were also good and the service was stellar! We will absolutely be back as soon as we return to Nashville!

I've been trying to get to Etch since Deb Paquette (Chef) got back into town. I loved her other restaurant Zola on West End and was disappointed when it closed. That being said, Deb is back and in true form. Etch was a fantastic choice for my birthday celebration. The ambiance was perfect. The room was full, but not too loud. The food was spectacular (as expected). Overall, I had had high expectations and walked away with an A++ experience. Go check out one of Nashville's true Chef's and have a great dinning experience.

I made an early reservation on a Monday evening before a concert at the Ryman. Etch was a short walk from my friend's office in the Pinnacle Bldg. I drove down and made use of complimentary valet parking during our dinner. We tried the shrimp and (tender) octopus bruschetta - delicious, if a bit messy to eat. We both ordered the fish special - "wreckfish" - it was delicious and served with hen-of-the-woods mushrooms, sweet potatoes and a kind of savory, fish-based mousse. We both opted for wine instead of cocktails, but the cocktail menu looked interesting. Etch is pricier than many of the other downtown pre-concert options, but our dinner was outstanding and the quieter atmosphere allowed us to chat comfortably.

We ate at Etch on a busy Saturday night. The service was excellent and the food was outstanding. The featured appetizer was roasted Cauliflower. While this vegetable is not among our favorite vegetables, but the truffle pea pesto and the feta dip were perfect compliments! One member of our party always orders fish and he reports that the Cobia was outstanding, The meat eater in our group thoroughly enjoyed the pork chop, which was perfectly cooked. Our family of four had an early dinner at Etch. We really enjoyed the modern setting and the friendly - totally NOT stuffy- service- yet very professional. The food was excellent- everyone was very pleased with his dinner. We ordered 2 appetizers to share with the table- the Cauliflower is Killer! The wine list is not huge - and therefore easy to review. We were very happy with the red zin we chose, and our server let us know it had just been added to the list. He checked with us early to learn if we had time constraints that evening, which we did not, but it would have been reassuring had we specific plans after dinner. We look forward to our next opportunity to visit Etch!

Starters were wonderful, tried the pork belly and roasted cauliflower - wonderful Pea Puree withe cauliflower. Cobia was a bit sweet with the beignet and the texture of the two were a little too similar but the fish was cooked superbly. We also had the pork chop which was a simpler dish than the Cobia and was fantastic - LOVED the fried polenta. We also had the filet with vegetables - filet was butter tender and the vegetables were out of this world good! Ended with a pear tort and good old Panacotta (there was some fighting at the table over the panacotta but I totally boarded my pear tort lest anybody else find out how good it was and make me share! Service was extremely well paced and informative. A wonderful experience!
