A word from Etch
Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

    We ate at Etch on a busy Saturday night. The service was excellent and the food was outstanding. The featured appetizer was roasted Cauliflower. While this vegetable is not among our favorite vegetables, but the truffle pea pesto and the feta dip were perfect compliments! One member of our party always orders fish and he reports that the Cobia was outstanding, The meat eater in our group thoroughly enjoyed the pork chop, which was perfectly cooked. Make a reservation early as this restaurant deserves its popularity as one of the best restaurants in downtown Nashville.

    Our family of four had an early dinner at Etch. We really enjoyed the modern setting and the friendly - totally NOT stuffy- service- yet very professional. The food was excellent- everyone was very pleased with his dinner. We ordered 2 appetizers to share with the table- the Cauliflower is Killer! The wine list is not huge - and therefore easy to review. We were very happy with the red zin we chose, and our server let us know it had just been added to the list. He checked with us early to learn if we had time constraints that evening, which we did not, but it would have been reassuring had we specific plans after dinner. We look forward to our next opportunity to visit Etch!

    Fabulous dinner! Deb Paquette is a tour de force in the Nashville Chef scene. Excellent cuisine with excellent service- a rare combination that works in this restaurant. Great ambiance and great vibe.

    Starters were wonderful, tried the pork belly and roasted cauliflower - wonderful Pea Puree withe cauliflower. Cobia was a bit sweet with the beignet and the texture of the two were a little too similar but the fish was cooked superbly. We also had the pork chop which was a simpler dish than the Cobia and was fantastic - LOVED the fried polenta. We also had the filet with vegetables - filet was butter tender and the vegetables were out of this world good! Ended with a pear tort and good old Panacotta (there was some fighting at the table over the panacotta but I totally boarded my pear tort lest anybody else find out how good it was and make me share! Service was extremely well paced and informative. A wonderful experience!

    Took two out of town "foodies" and everyone was very pleased! The pork chop notes special merit. Service was outstanding. Etch will remain high on my list for taking visitors who appreciate a good meal. It also helps to show downtown isn't all just honky-tonks.

    The cauliflower is always spectacular and salads are outstanding. Unfortunately, the filet was not as flavorful as our last visit. But very good service and still really like the restaurant. Looking forward to returning.

    Etch is all the good things you've read about it. The food was delicious AND interesting - amazing blend of flavors, layered perfectly to surprise and please. I ordered the Cobia and would go back to have it again. We even ordered dessert which we almost never do just to see if it was fabulous too - it was. (Warm Vanilla Pound Cake - sounds boring but it's not) Presentation is excellent and the service impeccable. Highly recommend Etch!

    Etch was the perfect place to celebrate 41 years of marriage! As in marriage, sharing is important; at the Etch we shared our entrees and a great bottle of 2009 Wooley Cab. The tempura Oyster Mushrooms were great; then my wife and I split the Warm Kale Salad with Shaved Pork and the Roast Beef Sandwich - all were excellent! Ask for Ashley - her recommendations made the day - and her service was exceptional. We'll be back!

    In a word, Etch was fabulous. The Etch salad, and roasted cauliflower alone were worth a visit to the restaurant. My husband and I got the filet, which was cooked sous-vide, resulting in the most tender piece of beef we had ever had. We are from NYC and eat at fine restaurants with some frequency. Etch can hold its own among the great ones.

    We had been wanting to eat at Etch for years but with children, we could tell that the restaurant is not kid-friendly. Well, at least when we were there at 9 pm. The food was amazing. Farm to table with regular ingredients, such as cauliflower and peas, elevated to a new and delicious level. The wine list was superb. All of the food on the menu seemed delicious. We enjoyed everything we ate. The duck soup was particularly amazing. We highly recommend as a date night restaurant.

    Four of us visiting Nashville from the Washington, DC area had dinner on a Thursday night on a recommendation of a friend. The food was exceptional and the service was impeccable. I had the filet and it was one of the best cooked and most tender pieces of meat I have ever eaten. All of us were very impressed and would be anxious to visit again if it were local. I would definitely recommend without hesitation.

    I love Etch and eat there at least 4-5 times a year. I think the kitchen is at their best when the medeterranean flavors are direct and the sauces do not combine more than 3 flavors in one dish. I found my food too complicated to actually represent the excellent selection of vegetables and the combination of the vegetables which was brilliant, were masked by sauces that were overly complicated. The salads were dressed too wet. I forgot to instruct "lightly dressed" but at this quality and price point one should not have to do that. The wine list is over priced and the pour size small for the cost of glass.

    Etch remains a high quality find for which you are going to pay. The roasted cauliflower that everyone raves about lives up to it's reputation. The lunch crowd is on the light side here, but that is probably because with tip, you can expect to pay $20- $30 per person. Everyone at my table of three enjoyed their meal.

    Lunch was wonderful making us want to go back for dinner next time we are in Nashville. The sauces offered with the roasted cauliflower appetizer were great but needed something more creative than cauliflower. Turkish Fish Taco was good but short of great; however, the Duck Pastrami Panini was fabulous, the best take on duck pastrami I've eaten. We will be back.

    Anticipating a long evening at the Ryman (6 min walk) for the Americana Music Awards, we chose Etch for it's location, menu and reviews. With a long night ahead of us sitting in seats, we chose to eat on the light side and began with the pork belly appetizer, garnished with kim chee, and the cauliflower, perfectly cooked and adorned with a smoky pea pesto sauce. We added the delicious charcuterie salad along with glasses of Sonoma Cabernet. It was the perfect beginning to an exciting evening in beautiful downtown Nashville.

    We raise beef so needless to say we eat a lot of beef but this was the best Filet Mignon I have ever eaten. Everything about the meal was superb from the Roasted Cauliflower for an appetizer to the beets and berries salad, spectacular. We topped the meal off with the Chocolate Pretzel Bar, to die for!!!! Service was impeccable. Left very happy and satisfied, best meal I have ever had at a restaurant.

    Took my wife there for our anniversary and the food was awesome. The server was not exactly the sharpest knife in the drawer, however, the consistency of the dining experience (minus the server) outweighed the negatives. This was my fourth visit and Etch is in my top five along with the Yellow Porch, Mack and Kates, Cork and Cow, and Red Pony!

    Everything at Etch is an adventure. I will say that the food should not be regarded with any kind of reservation you may already have for a dish since what Chef Debbie does to it is always exciting. Last night I had the Cobia (mild fish) with wonderful Turkish spicing. Not too sweet and not spicy hot. Even someone who doesn't like fish (husband in this case) really liked it and will order it next time. My husband had the Grilled Lamb Petit Porterhouse. It was fantastic. He doesn't usually like lamb but he loved this dish. Even I liked the black olive tapenade and I don't like olives! Go with an open mind because nothing is as it seems here at Etch.

    I had Grouper, a kale salad as the vegetable and a mashed potato croquette, with various sauces and garnishes. It was so good I kept putting food in my mouth constantly so I wouldn't have to stop tasting it. It was the best grouper I have ever had, and I lived in Florida for almost 10 years. The croquette was like a potato chip on the outside, it was so perfectly cooked. One of the best meals I have ever had, the favors were fabulous, and I don't give praise like this lightly. The only tiny criticism would be that the rosemary rolls were a bit tough, but had great flavor. I also enjoyed sitting at the bar and watching the kitchen at work under the calm and polite direction of Chef Deb.

    Food was a combination of 5 star quality, an artists creativity, and portions big enough for someone with a hearty appetite. The ambiance was very sleek, minimalist, upscale. The service was top notch. Unintrusive yet didn't miss a beat. Overall highly recommended.

    Etch was recommended to us by a friend. We had no expectations other than everyone we talked to in Nashville raved about it. We were not disappointed from the time we entered until we left the service was attentive and friendly. The food was very good - the Roasted Cauliflower & Octopus/Shrimp Bruschetta Appetizers were amazing. My son had the fillet which was cooked to his asking, tender, and flavorful. My wife and I are vegetarians, she had the Rutabaga La Plancha - was excellent and they were very accommodating and made me a veggie plate which served me well. The wine we chose was good but wine list somewhat pricey. We shared the Chocolate Pretzel Bar for dessert, don't do that get your own. Overall great, would highly recommend

    I wanted to try a new restaurant to celebrate our birthday and had heard about Etch. Making the reservation was easy using the open table site. With a concert going on downtown, we chose to valet park and were quickly lead into the restaurant. Unfortanately, the catch of the day was already sold out for the night. We chose the catfish tempura appetizer, the pork chop and the filet as entrees. The preparation of everything was wonderful and timely. We had the peach and brown butter cake for dessert. I did not care for the sorbet on top, but the cake was incredible! The next day a coworker asked me if I recommended Etch and the answer is yes. Looking forward to another visit.

    Etch has a modern look. Definitely upscale, as dinner for 2 with no wine was about $100 (2 apps, 2 entrees, a salad to share,coffee, and mineral water). Our waiter, Justin was highly trained; subtle and yet, attentive. We asked about a choice between two fish entrees. Instead of saying "I would get the grouper", Justin went into a description of the flavors and high notes of each dish, allowing my wife to use her palette to maker the decision! Wonderful. Pork belly, great.The Etch salad; delectable with a tangy champagne dressing, I ordered the pork chop and my wife ordered the black grouper. Both dishes were sauced and paired beautifully with interesting sides. Great ambience, service and food. If you have a sophisticated palette, go!
