A word from Etch
Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

We invite you to come try Chef Paquette’s latest endeavor, a menu referred to as “signature Deb – unique, playful, over-the-top, and as the address at Encore implies, ovation-worthy” (Carrington Fox, Nashville Scene).

Their first choice would gave been the palm who has a better fish selection, but it was my special occasion and I wanted somewhere I had never been.   • "Took our son back to Vandy and I had researched nice restaurants in Nashville and Etch came up. Made a reservation. I thought it would be very trendy inside, but it was not. Make sure you take a sweater because it was a bit chilly. I will have to say the food was delicious, unusual, and presented beautifully. The pork belly appetizer and the signature cauliflower appetizer were wonderful! The brussel sprouts and beet salad were tasty as well. We all shared. The duck was on a salad. I wish it would have been on something else. My husband liked his fish on a beignet and my son loved the filet. I would recommend Etch if you are a foodie."

  • "Everything about our night at Etch was awesome. From the complimentary valet parking to the friendly staff everything was great. The bartenders were very nice and accommodating. Sitting at the chefs bar was also really amazing. Our service by our waiter was very conscientious and was very knowledgable about everything on the menu."

We were seated promptly, the service was first rate and everything was delicious. My husband had been a couple of times for business dinners (which he raved about), but this was my first time to dine here (but certainly not our last)."

  • "We have eaten here several times and have always loved it. The Cauliflower and Shrimp/Octopus appetizer was an immediate hit with our out-of-town guest (as always!) - she especially loved the Smoked Pea Pesto - if only Deb would post that recipe!!! They even split the Bruschetta into 3 for us for sharing. We continued with appetizers mostly, my husband had the Lamb tartare, one of the new menu items. It was outstanding and highlights again why Deb Parquette is one of the best chefs in the country. Mediterreanean flavors were abundant and the lanb was incredibly tender and fresh tasting. My friend had the Pork Belly, an extremely generous appetizer which she devoured."

The entrees and salads burst in flavors and the each ingredient was treated with care. Together they achieve a culinary balance that I have rarely tasted in any other restaurants classified as serving the "American cuisine". The service was attentive and friendly. Overall, a great dining experience."

  • "We really enjoyed dining here. The food was interesting and complex. The atmosphere and vibe was great. Service attentive but not overbearing. Clearly one of the hottest Nashville spots. The only small (nit-picky maybe) criticism is that the wait staff tried a bit too hard to talk up the accolades of the chef and food. Too much time spent telling us about awards, articles, recognitions and mentions. Best to let the experience speak for itself...which by the way it did wonderfully. I look forward to dining here again."

  • "Usually when there's a lot of hype about a restaurant we are disappointed once we try it. However Etch lived up to its reputation. We had one of the best dining experience of our lives. Everything was perfect! We ordered 3 apps for 4 people and we cleaned each one. Every single one of us could not stop talking about how fantastic our entrees were. To make our night perfect, we had the BEST server in Brooke. This is now our new favorite place."

  • "I made the reservation because Etch is close to the Ryman. I then asked a friend that lives in Nashville about it & she said 'Keep it, they are great' & suggested we sit at the bar facing the kitchen. That was a great suggestion. Our servers were also outstanding, very attentive, knowledgeable & friendly. The roasted cauliflower was wonderful. We had the Cobia (amazing combination of flavors) & the filet. The filet was tender and had wonderful mixed veggies that put normal mixed veggies to shame. Overall it was the best meal I've had in a long time & I love good food. Totally recommend it, particularly to those open to trying different flavors!"

  • "Went once and loved it and couldn't wait to go a second time but they changed about 90% of the menu. No duck confit app, no scallops, no lamp chops, all excellent things from before. The replacements aren't that exciting :( I had the duck entrée which was called "ratatouille" but it was just meh and served with a side salad that was nothing at all like ratatouille (boring). hope they bring back the other stuff or make another change soon."

  • "A short walk from the Omni and a perfect stop en route to an evening on Broadway listening to music. My halibut was amazing. The "stacked" presentation was impressive from the flavors of the chorizo blended with sweet potato chunks as a base and ending with the guacamole topping were a delight to the taste buds. My companion had the roast duckling and it was equally enjoyable. Our server, Kim, was pleasant and timely and added to the experience. We will definitely return on our next visit to Nashville."

  • "It's a short menu but has several countries themes. Weak wine list, again because they try to cover too many bases on a short list. And holy cow was it ever salty. Too much bacon and capers on a shrimp and octopus dish became over powering. Pork dish also over salted. Cobia fish is fabulous, but they drowned it a Turkish raisin sauce. It's like they're trying to be too many things at once, and use too many ingredients at times. Brightest spot was the dessert menu, and a surprisingly deep after-dinner wine list. Overall, considering the prices here, I expected better."

  • "What a great find in a city of excellent dining options. The decor and ambiance is very upscale chic, but the welcome and service is cozy and warm. Kim was our waiter and she was exceptional, so friendly and engaging and impeccable in service and timing. Food was excellent and well prepared. The filet was so tender, no knife required and the taste out of this world. We also had the halibut special and the white bean and greens with it was yummy. I noticed several times that the manager was checking in on tables to be sure all was well in a way that was caring and professional. I will return when visiting Nashville again and highly recommend."

The green pea concentrated dip with the roasted cauliflower was a powerful combination. The flavors on our dishes really popped, and the presentation was remarkable. For people who care about flavor and food combinations, Etch is a gem. I am excited to share our good fortune. When we get a chance to return to Nashville, Etch is a repeater!"

  • "The brisket had lots going on...almost too much to figure out which flavors to combine when eating. Meat was a little tough. Burger was very messy and ended up having to use a fork to eat it. Fish taco was good. The shrimp and octopus bruschetta was good except for the really long hair all entangled around a piece of bacon (not mine!)."

  • "What a meal, the roasted cauliflower app was unforgetable never thought that I would enjoy a veggie as much as I did. The cobina (fish) top drawer, the porterhouse lamb blew my mind. I had the filet and the abundance of flavor and variations created amazing dining experience. One thing to note I was under whelmed with dessert. It was the Only thing that left me disappointed. The wine list was quite good"

  • "We've been here several times and generally have loved it. In particular, we've loved going to lunch there. The Moroccan roast beef sandwich is about the best I've had. We were a little disappointed in dinner this time. The octopus appetizer was great, but the duck confit was a bit disappointing in both flavor and tenderness. The filet was cooked well, but undistinguished. We'll certainly go back, but this was far from our best meal there."

  • "The food here is AMAZING. The wait staff is AMAZING. I had a great time. We went in a group to celebrate my 21st Birthday! I had a great time. The food was 5 star quality, but I already expected that. :) I got the roasted Cauliflower, which is a MUST. Then I got the filet which was cooked perfectly and I ate every bite. For dessert I got a pretzel shortbread caramel chocolate mousse thing. Just thinking about it makes me want to go back!"

  • "From start to finish...........everything was fantastic! Five stars because the service matched the food experience!!! Reservations for 5:15 pm (only time we could snag for that day) which was too early for us, however, planned our day accordingly, and it was well worth it! For special occasions we will call months ahead! Don't miss the pork belly appetizer or the cauliflower, both delicious! Filet cooked to perfection with burnt brown butter sauce........ OMG! Husband had the lamb chop....equally delicious! Great location, beautiful restaurant and able to talk through dinner as the noise level is contained and well managed (not sure how with open ceilings). The place was full by 6:00 pm!"

Roasted Cauliflower with truffled pea pesto to start followed by a grilled Lamb Porterhouse with a feta/garbanzo bean Filo clutch, Tunisian poached apricots & pomegranate walnut sauce (not to forget a side of Brussels Sprouts in Duck Schmaltz), can only be followed by their warm (melt in your mouth), triple chocolate/strawberry cobbler for dessert. A wonderful dining experience indeed!"
