Etch is the newest culinary venture from Chef Deb Paquette. Located in the ground floor of the Encore tower in downtown Nashville, Etch offers a private dining room, full bar and an open kitchen with bar-style seating.

In her 13 years as Chef/Owner of Zola, Deb received accolades for Nashville’s best chef and Nashville’s best restaurant multiple times. Nashville restaurants are many, but Etch sets itself apart with bold flavors and colorful presentations.

The cuisine at Etch is complemented by our comprehensive wine list, featuring an extensive collection of wines from around the world. Guests can also enjoy our modern take on classic cocktails, along with a variety of eclectic beers and regional drafts.

We invite you to come try Chef Paquette’s latest endeavor, a menu referred to as “signature Deb – unique, playful, over-the-top, and as the address at Encore implies, ovation-worthy” (Carrington Fox, Nashville Scene).

Diner Reviews
  • "This was our second trip to Etch this time with friends. Everyone loved it! The shrimp octopus bruschetta was a great starter and our table enjoyed the pork chop, the filet, the cobia and the lamb. The flavors were complex and fresh and thoroughly enjoyable! Our favorite place in Nashville!"

  • "We had to ask the server multiple times to bring our bread to us, and he never did. Actually ended up getting another server to bring us some. The service lacked in quality but the food was outstanding! The Cobia is a must eat dish!"

  • "We've been here several times and generally have loved it. In particular, we've loved going to lunch there. The Moroccan roast beef sandwich is about the best I've had. We were a little disappointed in dinner this time. The octopus appetizer was great, but the duck confit was a bit disappointing in both flavor and tenderness. The filet was cooked well, but undistinguished. We'll certainly go back, but this was far from our best meal there."

  • "This was our second time dining at Etch. Took friends with us. Each of us chose a different entree. My Husband had Cobia, probably the best fish we have ever eaten. I had the halibut, again delicious. Our friends enjoyed the filet and the lamb. The presentation was beautiful and the food was excellent!! Can't wait to visit Nashville again to dine at Etch."

  • "Dinner at Etch, as always, was delicious--especially the Corvina (special) and duck leg confit. The only improvement would be for the server to use a cloth to wipe the drips from the wine bottle instead of his fingers."

  • "From start to finish...........everything was fantastic! Five stars because the service matched the food experience!!! Reservations for 5:15 pm (only time we could snag for that day) which was too early for us, however, planned our day accordingly, and it was well worth it! For special occasions we will call months ahead! Don't miss the pork belly appetizer or the cauliflower, both delicious! Filet cooked to perfection with burnt brown butter sauce........ OMG! Husband had the lamb chop....equally delicious! Great location, beautiful restaurant and able to talk through dinner as the noise level is contained and well managed (not sure how with open ceilings). The place was full by 6:00 pm!"

  • "In town for a conference and had made reservations a month in advance. Glad I did, all 3 of us thoroughly enjoyed every bite."

  • "Spectacular food, service & presentation! Roasted Cauliflower with truffled pea pesto to start followed by a grilled Lamb Porterhouse with a feta/garbanzo bean Filo clutch, Tunisian poached apricots & pomegranate walnut sauce (not to forget a side of Brussels Sprouts in Duck Schmaltz), can only be followed by their warm (melt in your mouth), triple chocolate/strawberry cobbler for dessert. A wonderful dining experience indeed!"

  • "We had a wonderful time at Etch; the food and service was excellent The grilled cauliflower is a must do even if you normally don't link it. The cocktail was just right and it was a generous pour I had the Cobia based on previous reviews and it was as described in previous reviews. If you are adventurous, I would highly recommend. The contrasting flavors were amazing, going from sweet, to tart, to salty. I was on a food high. Those in our group that had the filets of beef found them succulent, juicy and grilled to perfection. Our desserts were top notch as well Our waiter was knowledge and anticipated our every need I enjoyed the open kitchen concept; especially seeing chef Deb Paquette controlling the kitchen Thank you"

  • "Having first had Chef Deb's fare at the Boun'dry years ago, I've been a fan if hers. She is amazing with her combinations of flavors- hits it out of the park every time. I dream of the pork belly.... Do yourself a favor- eat it! Never had anything less than a perfect experience at Etch"

  • "First time to visit Etch. The pork belly appetizer was to die for! Had the Halibut special and my wife had the pork chop. Couldn't ask for a more excellent meal. Robert was a very knowledgeable and attentive server! He made the meal even more special. Will be back for sure!"

  • "Everything I've had here is outstanding. It's Nashville's downtown best kept secret for lunch. I like entertaining clients and can get in and out without having to wait for a table. I highly recommend it for dinner as well. The new dinner menu is outstanding and the desserts are always out of this world."

  • "Delicious food and outstanding service! The cauliflower app came highly recommended and was worth the recommendation. Had the pork chop which was great but wish I had chosen the filet. A friend shared a taste and it was amazing!! Also had the chocolate pretzel bar a a shared dessert...yum!!"

  • "My wife and I had early reservations due to a show. We arrived about 5 minutes before our reservations. We were able to enjoy wine and appetizer specials prior to our meal. The octopus and shrimp bruschetta was the best bite that I've had in the state of Tennessee."

  • "Food was ok, service was ok as well. Nothing special and the food was most certainly overpriced. Not enough options, either."

  • "We have eaten with Ms. Paquette before, when she was owner/chef at ZOLAs, Nashville, so we entered with great expectations. We were not disappointed. Four of us were greeted promptly and were quickly seated for dinner. We began with the butter tasting appetizer which was interesting and fun. Then the four of us fought over the pork belly appetizer. Absolutely wonderful. My wife had the Cobia and said it was one of the best fish dishes she had ever eaten. I had the Lamb porterhouse, a cut I rarely if ever see offered. It too was excellent. Our other couple got the special fish offering and the pork entree. Everything was cooked and presented to perfection. We would definitely return."

  • "Excellent food & service. 3 of us had dinner and each had something different. Appetizers were shrimp&calamari and roasted cauliflower; both excellent. Entrees just pop with fresh herbs, make common foods so delish. Everyone had dessert and the best of the 3 was the peaches/pound cake, second was the chocolate pretzel bar and lastly was the fresh fruit w/goat cheese. Can't wait to return. Hardest part is getting a weekend reservation!"

  • "We were very excited to try Nashville's food scene since we just moved here from Las Vegas. We perused magazines, websites, reviews, talked to locals, and we came back with a pretty hefty list. Near the top of that list was Etch, so, of course, that was our first reservation. Inside, we were encouraged. The smells were woody and the décor was fresh, upscale, and not overdone. Our waiter was attentive at first, but steeply dropped off as the place filled. While the shrimp bruschetta was amazing, the butter tasting was only so-so and the entrees were entirely lacking. I didn't even finish mine. However, the desserts were divine. The new one - the creamsicle - was a wonderful treat. Maybe we'll try again in a few months, but not next week."

  • "An absolute must in Nashville. Roasted cauliflower with truffle oil was scrumptious! Butter sampler was very good. Filet was exquisite..so tasty with so many distinct flavor enhancing veggies. Desserts are fabulous...reserve early, you will love it!"

  • "The calamari and shrimp bruschetta appetizer was to die for! The cauliflower appetizer was also quite enjoyable! There was a delay in the arrival of our main course, however, the wait staff was very apologetic and handled it beautifully by giving us a free dessert. Three of us shared two entrees, which was more than enough. Both the filet mignon and Corvina were prepared to perfection! The chocolate pretzel bar dessert was from out of this world!"

  • "Etch was the best meal we had in Nashville during our recent visit. The food was delicious and my whole family thoughly enjoyed the experience. The service was top notch with our food coming out perfectly prepared with excellent attention paid by our waiter. Even the valet to get our car ran full speed for prompt service. I will definately make it a point to to go back next time I'm in town."

  • "This was our first visit and all four of us were delighted. The waiter was very pleasant, helpful and did not engage in that awful "dinner theatre" where some servers seem to think you are there to see them. But the food was the rightful star. Everything we tried was innovative and delicious. We were delighted with the entire evening and will make this a regular stop in our Nashville restaurants."

  • "I am trying to eat all the time by michelin stars or zagat survey , I find this one at 28 is a little over rated . The service is good but the food just above average . Sorry but I eat better before in Nashville . I will not coming back"

  • "Wonderful meal at Etch! The only weaknesses were minor, but stood out compared to the otherwise very high quality of the food and service. The rolls served with our meal were only mediocre. If there is bread, it should be really good. There was a bit of a problem with pacing, our entrees came a little too long after our previous course. My entree, the filet, was not as exciting as my husband's lamb, or as interesting as our shared salad, which ranked as one of the best I've ever had. All in all, a really lovely meal, priced appropriately in a nice setting."

  • "My wife & I were very excited to try etch. We really enjoyed the food but the atmosphere was not our preferred style/feel. Nothing wrong with it, just preference. Service was exceptional! Our server was excellent at describing ingredients & how they compliment a dish - Very helpful. Would certainly recommend it & go there again."

  • "Recently a number of new restaurants have been popping up in Nashville which has been a refreshing joy. Generally they are getting some great reviews so I've been going with fairly high expectations. I did so with Etch and have to say that I was delighted. Service was excellent. Food was not only perfectly executed but more importantly was unique and seasonal. If I see one more chicken and waffles on a menu, I'll scream so it was a pleasant surprise to see unique items here."

  • "Etch was a 10 from start to finish!! The menu brought unique food combinations and the presentation of the food was remarkable. But the taste and mix of flavors was wonderful in each dish we ordered, from cauliflower appetizer to chocolate pretzel dessert."

  • "We've been to Etch many times and although the main reason we choose this restaurant is the proximity to the symphony center, the food and service never disappoint. The banana soup was superb as was the rutabaga entrée. The flavors were complex using healthy plant-based ingredients - this is the true measure of an talented chef."
