The service was good, but we found the food came out too fast, and we were in and out of the restaurant in a very short amount of time. The chicken tacos seemed to be undercooked, so we sent them back. It came back cooked more thoroughly, but sort of chewy. The restaurant did not charge us for the dish, which was the right thing to do. Empellon Taqueria has great decor, excellent service, and wonderful food. My wife is gluten-free, and the waitress was very patient and thoughtful about her questions, and even volunteered to double-check ingredients with the chef. She and the other waitstaff were attentive but never intrusive, and had perfect timing--they never let our water glasses or coffee cups drop below 1/3. The food was heavenly. From the fresh guac, homemade chips and savory salsas to the toothsome slab bacon tacos and perfectly cooked chorizo scrambled eggs, we were all amazed and left thoroughly stuffed and satisfied. Nota bene: We have learned the hard way that you will only be seated at the exact time of your reservation and truly enjoy your experience at off-peak times, i,e, pre-theater or very late on a weeknight. This is not your padre's taqueria, but it's not uppity/yuppy either. If you are a mezcal/tequila fan (or are just curious) this is the place for you. My favorites: the cashew/chipotle salsa and the skirt steak tacos (otra vez, not your padre's taco). My only complaint: the music in the background is great but it consistently cuts out in the middle of tunes. A particularly annoying case is Sly's If You Want Me To Stay. The fact that I know that tells you how often I frequent this place (or how much I like that tune). I could go on and on. From the moment we walked in the door - the service was excellent.
The oyster appetizer with 7 different salsas is excellent. If you don't like oysters, then I would recommend you do the 7 salsas with chips as the salsas are great.
We split 4 of the appetizer portions of tacos. If it's just two of you, you really only need 2 maybe 3. The shortribs, lamb ad fish tacos were amazing. My only complaint of the evening was that we didn't love the chicken taco.

Said it once and saying it again - love, love, love this place. Staff and servers are uber-cool and super-nice. Food is wickedly good.
