A word from Elevation
Elevation, the student operated restaurant at Cascade Culinary Institute (CCI), uniquely engages community diners as an integral part of the student learning experience. The Elevation menu, which changes two times per term, boasts of high quality ingredients that are sourced from regional growers, ranchers and producers. Patrons who dine in a "live classroom environment," are provided with an opportunity to offer feedback via an e-survey at the conclusion of the dining experience. Guest input is then integrated into the instructional process on a weekly basis in order to enhance the student learning process. As part of the CCI Capstone Course, learning outcomes within Elevation associate with students developing confidence in cooking and service techniques and developing effective communication and teamwork skills prior to their transition into the regional hospitality industry workforce as future leaders and innovators.

    The food was excellent and beautifully presented. The dining room was set up very nicely. The service needed improvement. We sat for a long time before our server came to us. Other tables were served bread long before we were. We had to remind our server 2-3 times to bring cream. It was finally brought by someone else. Our server was not familiar with the entree choices or the dessert. She mentioned a couple of times that she was usually in the kitchen, and that she didn't have experience as a server. We realize she needs to get experience in all phases of the restaurant business, but perhaps this major function was not the best place to start to learn to serve. Perhaps serving at a regular lunch would be a better place to start. We do have to say though, that she really tried.

    We had a group of 8 who visited Elevation for the first time on Nov. 22 for their Fall Fundraiser Dinner and Food Drive. We were greeted at the front door and seated right away. Our waitress was very friendly and accommodating. We all had the beef tenderloin roulade which was very good. The sides, mashed potatoes and cauliflower, were on the cold side but still good. The cheesecake dessert was yummy. We all will definitely visit again.

    Lighting in dining room was way too bright for an intimate experience for most people. Our wine orders were made with glass only 1/4th full. Tenderloin entree was just o.k. and served cold. Waitress slow and did not offer dessert that was included in the meal. The bill was presented by the manager before we were able to ask for dessert. Overall we agreed the entire school needs practice. Thanks for asking our opinion and we say these comments to help and not hinder the growth of CCI.

    Beautiful surroundings and an obvious attempt to please the customer. My salad was not as crisp as I would have liked it and others in our group complained that their food was not hot. Our waiter was very responsive but it was necessary for us to initiate requests to him several times during the evening.

    We were lucky to discover Elevation at the Cascade Culinary Institute when we were in Bend this week. The four of us had lunch and enjoyed one of our best Bend dining experiences ever. The menu, food preparation and service were all stellar and the value is amazing for the level of quality that Elevation delivers. If we lived in or near Bend, we'd dine there frequently.

    Our experience at elevation was great. Everybody enjoyed the flavorful steak! The presentation is fantastic. The chocolate bomb had beautiful decoration and tasted delightfull! The appetizers were scrumptious. The temperature of the dining room was a little on the cold side.

    We've been here several times over the year. Maybe we are lucky but we have never had a bad meal here considering it is a apprenticing restaurant. There is something special in every dish they serve, being the sauce, the ingredients, the cooking method. It is more sophisticated than what one strives to make at home and more so than most restaurants in the area. The price is, of course, excellent for the caliber of the overall dining experience. I recommend it without reservation.

    Each time I dine at Elevation, I can count on a delicious meal. And the friends I bring along are always pleased to discover such a gem. It's never been crowded, but I expect that may change once the word gets out! Eat outside if you can. The patio area is beautiful.

    This was my second time dining with a fair amount of people. Each time the service was over the top, the food perfect and the wait staff very well trained. We loved the room, fireplace and ambience. Several from each group have re-booked to come back.

    We appreciated the linens and table setting and the excellent food. We all felt the veggie side was too small (on the salmon plate). It was nice to be there in our casual clothes and to know that's OK. The bread is excellent!

    Our expectations were exceeded. Awesome appetizer with the Huntsman plate which included meats and cheeses and great bread. We had the salmon which was very good and the rib eye which was large but cooked just to my order. There could have been a few more vegies.

    This restaurant is for people who like good fare and are willing to help the students become better cooks and servers. The wine list was quite good, and the menu as well. The timing was a bit off - the soup course came out before the bottle of wine, but that might not have happened if the manager had not gone home early because there were only two reservations the night my party of two was there. I had the steak which was perfectly prepared and $17 which was half what it would have been at any other restaurant in town, so this leads me to believe they are subsidized. I recommend this restaurant for Bend locals, and I will no doubt return. Visitors to Bend have a wide variety of other better choices.

    We enjoyed our dinner at Elevation on Friday evening. Everything was almost perfect. The bread basket came after we asked for it. The iPad wasn't offered but when we asked for it upon leaving, we couldn't seem to make it work. Very small details and overall we appreciated our servers and the cuisine very much!

    Our first meal at elevation was very good. The prices were reasonable. I had hoped for a few more choices in all the categories (I thought menu was too limited) but everything we tried was good. The outdoor setting is fantastic! Service was kind of slow but friendly. The cookies at the end were super delicious. I would go again and am eager to try it for lunch.

    This is a teaching restaurant so perfection is not expected. The lay out is very nice and the staff is attentive. A little too much spice in the pasta for my taste. The salmon was dry and the asparagus was over cooked. We will go again, but not right away

    The students can be proud of their achievement. From the moment one walks through the door the whole experience is superior. The food is delicious and the presentation beautiful. The service is attentive and friendly. I can't wait to return.

    Even with just 4 lunch entrees offered (and 3 appetizers), everyone in our party of 8 had something to their liking. And the food was uniformly beautifully presented and delicious. The variety of tastes was shared, and we all agreed that our expectations were surpassed! The 2 desserts offered that day were a watermelon sorbet (heavenly) and a Snickers bombe (absolutely outstanding).
