  • Catering: dashi is excited to now be offering full service catering options as well as private chef services which will bring a unique options to the valley when it comes to off premise dining. Tyler has had extensive experience catering in Park City for the Sundance Film Festival and other high end events which require a trained eye for detail. He also spent time as a Catering Service Mangager for Park City Mountain Resort and did numerous weddings and high volume events. Whatever you catering needs dashi will exceed all expectations in taking your next event to the next level.

Focusing on local, organic and sustainable products, dashi is the newest addition to the Ketchum dining scene. The new restaurant, opened by Chef Tyler Stokes, who has a spontaneous, open minded approach to food, has built a reputation the last five years in the valley as someone who cooks with passion, integrity and respect for food and the diner alike. Dashi will focus on modern Asian cuisine with a strong New American influence and a commitment to local products and farmers
The menu at dashi will be dictated by the seasons and the inspiration that each one brings. The freshest, most sustainable seafood will be presented in sushi rolls, sashimi, salads and plated entrees designed to show the qualities and versatility of each individual fish. Local, organic and natural meats will be featured as well as wild game and fowl.

Several diners indicated the best meal item of the weekend. Mike, our server provided great input on wine selection and menu items. Our group ordered sushi, soups, noodles, cod, chicken, beef, and scallops. Every item was delicious. Dessert ice-creams were liked by everyone. One person asked if he could "lick the plate". Reservations suggested for weekends. Not enough space left to provide detailed info on our specific menu choices. We will definitely return for future meals."

  • "With all the other gems in Hailey and Ketchum, Dashi is a restaurant you can afford to miss. While the service was outstanding, the food was just fair and the ambiance completely lacking. Our party of 6 had 4 appetizers, 5 entrees and a dessert. While we liked all the appetizers, none were so inventive that we couldn't find them elsewhere. With the entrees, we had 1 person find his to be outstanding, 3 to find their entrees tasty but not excellent and one couple who shared their entree to find it fair at best. And the dessert? No thank you. We did appreciate the impeccable service - very attentive, knowledgeable, patient and friendly - but unfortunately that won't be enough to bring us back given the other standouts in the area."

  • "For a place as hip as Dashi I was impressed by their warm and friendly service. The Miso soup, which is usually pretty boring, in most Asian fusion places, was unusual and really tasty. My bass was exquisite with a very tasty puree of artichokes. The mushroom dumpling rolls were light. The ribs were excellent, lean and flavorful. The pomegranate, pecan, goat cheese salad was flavorful. Beware when eating the pomegranate seeds, the crunch simulates teeth cracking! Their Calamari were seasoned to perfection.The Argentinian white wine Recuerdos was unexpectedly a good match for the Asian inspired dishes. All and all a very sophisticated dinner for four that didn't break the bank. We'll return for sure."

If the idea is to be like Chinese and/or Japanese ramen then there are way too many noodles dumped into the ramen bowls in proportion to the dashi/broth. It is difficult to enjoy the meal this way and to taste the other ingredients."

I looked on Open Table for the restaurants with the best reviews that were open on Christmas Eve. Dashi had very good reviews, and the menu looked innovative with a great, very well priced wine list, so we decided to give it a try. We were not disappointed. The food was delicious, both my elk main course and beef carpaccio sushi appetizer were outstanding. The server was knowledgable and very friendly. It was a great experience, we will definitely return."

The deck was a great place to unwind and relax after the Beaver Creek Fire.   • "Dashi never fails to excite. Dinner after the Symphony started with an unusually spiced hors d'oeuvre-size Kobi Steak Tartar with mint leaves, Asian chilies and other unexpected nuances. The lobster roll is a delicious lobster sushi roll. Others enjoyed marinated fried chicken, summer rolls, papaya salads, and fresh salmon, I think. Dinner on the deck this time of year is a special treat and the noise level is comfortable. Try this place!"

  • "The Fried chicken is first marinated in some interesting Asaonraration, rather than breaded or battered like KFC, so it has a fascinating, unusual flavor. Can't wait to have that again. My wife invariably orders the summer rolls and fish. No matter what the fish of the day, it is always spectacular and fresh. The terrace is great in July-August, very quiet and peaceful, and the service attentive, not overbearing. Great spot."
