  • Catering: dashi is excited to now be offering full service catering options as well as private chef services which will bring a unique options to the valley when it comes to off premise dining. Tyler has had extensive experience catering in Park City for the Sundance Film Festival and other high end events which require a trained eye for detail. He also spent time as a Catering Service Mangager for Park City Mountain Resort and did numerous weddings and high volume events. Whatever you catering needs dashi will exceed all expectations in taking your next event to the next level.

Casual, local, independent
Focusing on local, organic and sustainable products, dashi is the newest addition to the Ketchum dining scene. The new restaurant, opened by Chef Tyler Stokes, who has a spontaneous, open minded approach to food, has built a reputation the last five years in the valley as someone who cooks with passion, integrity and respect for food and the diner alike. Dashi will focus on modern Asian cuisine with a strong New American influence and a commitment to local products and farmers
The menu at dashi will be dictated by the seasons and the inspiration that each one brings. The freshest, most sustainable seafood will be presented in sushi rolls, sashimi, salads and plated entrees designed to show the qualities and versatility of each individual fish. Local, organic and natural meats will be featured as well as wild game and fowl.

    The salad, entree, dessert and wine were all delicious! Especially the halibut entree special-divine! The staff is friendly and courteous and the service was excellent. One of our favorite restaurants. We are never disappointed!

    Our (locals) first visit to Dashi in spite of their being in Ketchum for a couple of years. Meal was very, very good with good service and a good but limited wine selection. I was saddened to hear they will be Leaving Ketchum for Salt Lake soon - the ups and downs of a resort clientelle apparently could not sustain them. Too bad, as Dashi served some of the best food in the Wood River Valley at competitive prices and with good service.

    Creative and delicious japanese fusion; artfully presented. We had planned to order large plates, too but wanted to try as many plates as possible so stayed with the small plates. Delicious vegetable options, too. We will definitely return.

    Appetizers, popcorn snack, soups and entrees all received rave reviews by our party of six. Flavors were great, sometimes unique, and cooking was perfect. Several diners indicated the best meal item of the weekend. Mike, our server provided great input on wine selection and menu items. Our group ordered sushi, soups, noodles, cod, chicken, beef, and scallops. Every item was delicious. Dessert ice-creams were liked by everyone. One person asked if he could "lick the plate". Reservations suggested for weekends. Not enough space left to provide detailed info on our specific menu choices. We will definitely return for future meals.

    With all the other gems in Hailey and Ketchum, Dashi is a restaurant you can afford to miss. While the service was outstanding, the food was just fair and the ambiance completely lacking. Our party of 6 had 4 appetizers, 5 entrees and a dessert. While we liked all the appetizers, none were so inventive that we couldn't find them elsewhere. With the entrees, we had 1 person find his to be outstanding, 3 to find their entrees tasty but not excellent and one couple who shared their entree to find it fair at best. And the dessert? No thank you. We did appreciate the impeccable service - very attentive, knowledgeable, patient and friendly - but unfortunately that won't be enough to bring us back given the other standouts in the area.

    For a place as hip as Dashi I was impressed by their warm and friendly service. The Miso soup, which is usually pretty boring, in most Asian fusion places, was unusual and really tasty. My bass was exquisite with a very tasty puree of artichokes. The mushroom dumpling rolls were light. The ribs were excellent, lean and flavorful. The pomegranate, pecan, goat cheese salad was flavorful. Beware when eating the pomegranate seeds, the crunch simulates teeth cracking! Their Calamari were seasoned to perfection.The Argentinian white wine Recuerdos was unexpectedly a good match for the Asian inspired dishes. All and all a very sophisticated dinner for four that didn't break the bank. We'll return for sure.

    We enjoyed a delicious meal for New Year's Eve with a prix fixe menus. The caviar lollipop was delicious as well as whimsical. The lobster tail was perfect and the lamb dish was coked perfectly

    This restaurant is nice. My major suggestion would be to decrease the amount of noodles in the ramen dishes. I've been here a few times. If the idea is to be like Chinese and/or Japanese ramen then there are way too many noodles dumped into the ramen bowls in proportion to the dashi/broth. It is difficult to enjoy the meal this way and to taste the other ingredients.

    We are vacationing in Sun Valley and did not feel like dining at a typical 'steak, lamb and trout ' restaurant. I looked on Open Table for the restaurants with the best reviews that were open on Christmas Eve. Dashi had very good reviews, and the menu looked innovative with a great, very well priced wine list, so we decided to give it a try. We were not disappointed. The food was delicious, both my elk main course and beef carpaccio sushi appetizer were outstanding. The server was knowledgable and very friendly. It was a great experience, we will definitely return.

    Tyler Stokes is probably the most creative chef in Sun Valley. His Asian fusion dishes combined the best local ingredients with Asian spices and sauces and the result is truly outstanding. Some menu favorites include the pork buns, tempura greenbeans, miso glazed cod, hoisin glazed pork ribs. The specials and desserts too are reliably delicious and provde oppoortunities to come again and again without eating the same thing twice and, in the case of dessert, a great way to end the meal on an especially high note. The service is always above the rest. With his high energy, positive attitude, hussle and friendliness, Mikey makies sure your every need is met. He'll make sure you're well fed, your glass is full and you have a great experience.

    We usually order several small plates (summer rolls, papaya salad, tempura lobster roll, crunchy fried calimari) but sometimes Asian fried chicken, or a a stack of pork ribs and wines by the glass. The deck was a great place to unwind and relax after the Beaver Creek Fire. These restaurants need our enthusiastic support, because the fire cost them one of their best months and we need them to thrive.

    Dashi never fails to excite. Dinner after the Symphony started with an unusually spiced hors d'oeuvre-size Kobi Steak Tartar with mint leaves, Asian chilies and other unexpected nuances. The lobster roll is a delicious lobster sushi roll. Others enjoyed marinated fried chicken, summer rolls, papaya salads, and fresh salmon, I think. Dinner on the deck this time of year is a special treat and the noise level is comfortable. Try this place!

    Innovative and ever-changing, the chef is consistently great and the Asian inspired menu always has a creative twist. Perfect after the Sun Valley Summer Symphony. Summer rolls, spare ribs, steamed buns stuffed with pulled pork or mushrooms, good wine selection. The service is very friendly and fun. The terrace is open in summer!

    There are places in the world that are consistently good from one visit to the next and Dashi is it. This is a chef owned restaurant and if you're a foodie that counts for a lot. Tyler's keeps his specialties on the menu so you can always get his baby-back ribs, a great sushi roll (we love the lobster) and his buns (decisions decision- pork or mushroom both fabulous). Wine list is well thought out. Wait staff is not only attentive but if the kitchen is a little slow (because it's a gorgeous night and the place is packed) they aren't afraid to make eye contact and let you know they haven't forgotten you. Ask for Mikey as your server....he's the best.

    The Fried chicken is first marinated in some interesting Asaonraration, rather than breaded or battered like KFC, so it has a fascinating, unusual flavor. Can't wait to have that again. My wife invariably orders the summer rolls and fish. No matter what the fish of the day, it is always spectacular and fresh. The terrace is great in July-August, very quiet and peaceful, and the service attentive, not overbearing. Great spot.

    This is one of my favorite places in town however the last visit was very disappointing. Better to dine here in the winter for in the summer they do have great outside seating however the kitchen can not handle the extra capacity. The fried chicken for $23 was more like an appetizer - a leg and 1/4 a breast - and was horrible. Don't order it! The ribs are usually meaty however the last night they were boney - barely any meat. I'll look forward to going again when they aren't trying to do so many dinners in a night - maybe then you'll get ribs with meat

    Dashi looked wonderful every time we drove by. We reserved a table for 7:30 which was pointless because we weren't seated until 7:50. Nice. Nowhere to wait. Very noisy, not to mention having to listen to the staff complain about the customers. Once we were seated, the server didn't deign to take our orders until 8:10. Ordered small plates and large plates. Not good value for the money, because we left hungry. This is a great concept, the food is good, the portions were very small and we weren't really sure we got all our food. The server was extremely unpleasant, and the staff were a textbook example of what not to do in a restaurant. We had better food and service with adequate portions at several other restaurants in town.

    Best fish dish i've tasted in a decade, browned on the outside, succulent and moist inside, served in a flavorful Dashi sauce with edamame beans. Order the sushi specials too, or the steamed buns with pork or mushrooms. The terrace is open now.

    Going to Dashi is always a treat. The food is consistently good, the atmosphere is relaxed and the service is both friendly and excellent. The small plates are designed for sharing . . . making it possible for a table of four to take a tour of a high percentage of the menu without coming away over-full. In the summer, the outside deck is charming . . . bring sunglasses, because despite the umbrellas, the setting sun peeks through to some tables.
