Marinated 24 hrs, tender, and flavorful. Arctic char is like a non fishy salmon. Fig marinade is fabulous. Both paired well with an Edmeades red Zinfandel. Any appetizer is a great choice. We wanted to return to try some of the items that intrigued us from our first meal, so we tried some of the native Peruvian dishes. They were all beautifully prepared and tasted fantastic, especially the Mixto Ceviche and the Crab Meat Morada. The Cornish Hen A La Brasa was a huge portion and very tasty. This time, we left room for the Tres Leches cake, which was both moist and delicious. Highly recommend Darwin's on 4th! Our waiter was not as attentive as the first time, when Kendra was our server, but he had several tables to keep up with. This time we started with the chopped salad. The salad was actually chopped and had a lot of interesting ingredients. It was very hard to taste the dressing so we wanted to flag down our waiter to get more dressing. It was difficult to catch him. When we finally did catch him and he brought the dressing it was very good. I had the Arctic Char which was delicious. My husband had the beef stir fry which was also delicious. We were new to Peruvian cuisine, but our server, Kendra, guided us thru the menu, she also selected 4 samples of beer for me to try from the microbrewery and they were all delicious!! We had salmon ceviche, the quinoa dish and the sushi-type rolls (potatoe). The flan was excellent!! We also enjoyed watching the chefs cook and assemble the dishes!! We snacked on plantain chips and yucca, had the Thai Shrimp Spring Roll starter and feasted on Braised Short Ribs (a native Peruvian dish) and Duck. We were too stuffed for dessert, but the Pot of Chocolate Mousse would have been our choice! They are known for their beer sampler...4 small glasses so you can sample some of their many house brewed beers. So we were surprised to be told that out of our group of seven, only 3 of us could have one because they are too much work to pour!
