In the Cyprus open kitchen, we take our inspiration from peasant foods and traditional cuisines from around the world. We hand harvest our vegetables and shop the ethnic markets to deliver authentic and traditional International flavors.

We feature a unique regional menu, written and executed each day in the Cyprus kitchen, always by hand, and always using time honored, traditional cooking methods.

  • "My husband and I dined here for the first time. I made reservations 2 weeks in advanced for 8pm. We arrived about 7:50 and checked in. We were told it would be a few minutes which was fine so we went to the bar. Well 15 minutes later the hostess approach us to ask if we were on the wait list. I informed her again no we had 8pm reservations. Well in listening to those waiting around us it appears reservations are not really reservations it is first come first seated. We were eventually seated at around 8:30. Had great outdoor seat. Are waiter was a good. Food was interesting. I think they were a little overwhelmed with the interest in the place, so they were a bit unorganized."

  • "We have always loved Cyprus, and the new location has become very attractive to all! The outdoor patio is dog friendly and are the best seats in the house in nice weather. A table inside was attractive, but Nick likes to play his Jimmy Hendrix music so loud, that you cannot have a conversation with others at your table! Please Nick, tone the music to a level where we can enjoy both our friends and your music! Dinner was fantastic as always, best fish (served four different ways) in Highlands!"

  • "Cyprus was one of our top two dinners in Highlands, NC! Their regular menu offers cuisine from all over the world and then you have their special offerings which change on a weekly basis. We visited during Taste of Amsterdam . Two out of three of us chose the lamb chops and striped bass dishes, which were outstanding. The other person tried the steak off of the regular menu. All so us were thoroughly pleased with our plates. I also noticed that they have a well run wait staff. Everyone was pleasant and Olya, our waitress, greeted us with a smile that beamed "I am happy to wait on you". She's a gem:-) We will certainly visit Cyprus on our next trip to the Highlands!!!"

  • "Upon arrival with a reservation we still had about a 20 minute wait for a table. I t was a warn night and while the front windows were open it was a bit warm to my taste. The service by Jesse was wonderful. It could not have been better. The food was excellent as expected. We are long time customers of Cyprus prior location. This was the first trip to Main Street location. It will get better when construction is finished."

  • "We have gone to Cyprus every time we come and stay at our home since 1997. It was one of our favorites. We booked a reservation and came at 7:15. They put us at a small two seater table in between a table of four and two on the other side. It was uncomfortable and noisy. We asked to be seated outside. When we ordered their special after the waitress highly recommended this dish she came back to tell us they ran out of the special. I ordered lamb which was to come out medium rare and was rare also very bland. The whole experience was a disappointment. We have no intentions to go back as we have other good restaurants in Highlands."

  • "Cypress has a revolving menu and we hadn't been before because the theme at that time wasn't that interesting to us. This time we went and loved the new location and the food. Cypress is in downtown Highlands in an upstairs space, with street level access at the rear. Part of the space is outdoors and the interior space has large open doors and windows giving it an open air feel. We all enjoyed our food and wine and would definitely come back."

  • "Highly eclectic menu with mostly hits and a few misses. Our table was not ready until long after our reservation time, and when we were finally seated it was at perhaps the smallest, most cramped and lowest table in the restaurant. Service was alright, except for the busboy who was grabbing across the table and spilling water on us. Kind of noisy. Most food items were good, although my pork dish was flavorless and the special $13 dessert I had was like someting conceived and executed by a ten year old: a hard, overcooked pastry with an un-set "custard" the consistency of heavy cream and a few berries tossed on top - it was disgusting. We wont be rushing back."

  • "We ate at Cyprus while visiting Highlands for a few days. The menu looked fantastic, and we really liked the idea of their theme menu. We also loved the energy and decoration of the place! Service was good and responsive for Tatiana. Then there was the food...the bread was tasteless as was the olive oil. we started with a noodle soup from the theme menu and found it interesting, but not really good. The ingredients just did not go together and compliment each other as they should. My wife had grouper from the special menu as her entree, and I had the mussels and chorizo for our entrees. They were good, but not up to the prices charged! Our bill at Madison's the night before was equivalent, but the quality of the food was not even close!"

  • "Our experience at Cyprus was wonderful.The menu is eclectic featuring dishes from all over the globe. The appetizer salad was beautifully presented for two with the most delicate lemon dressing , a few fresh edible flowers and a slice of blue cheese on the side. The chicken dish was delicious, a tender breast accompanied by flavorful jasmine rice wrapped in ti leaves. On the side a piece of slate held little rectangular containers of condiments. The music was a tad loud. Otherwise, Cyprus reminds me of the Frog and the Owl restaurant that was one of the best restaurants around about 35 years ago ( featured in Gourmet Magazine). The imagination, the attention to detail, the freshness, the taste of everything can't be beat at the Cyprus!"

  • "Our server was very rushed at the table, but they were busy. The food was great and we enjoyed our dinner. The place is way too bright though. Hundreds of light bulbs hanging all over turned up and the flourescent lights in the kitchen light up the whole side of restaurant. It is hard to believe they have not had that complaint before. Overall, not a bad place and the weather was quite nice for the open air atmosphere."

I had a chance to talk to Nick, the owner, and he is quite happy with the new location. This restaurant will soon be Highlands hot spot of the season. Congratulations Nick!"

But regret to report the new location has problems with noise level, bouncing floor, open windows with shades blowing, and tables so close it was like a community conversation to both sides. And we missed the flamboyance of the food preparation area with the bar area. We will go back as the food preparation and presentation are worth any other issues."
