Love sushi & oysters so the sashimi tuna with oysters (served on the half-shell with tuna topping the oyster) was a lovely treat. Looked great, tasted better. Salad special with local heirloom tomatoes, cucumbers and dill was a really fresh combination of flavors. Divers scallops (seared) & pork belly the most effective combination of surf/turf I've ever had the pleasure of tasting. Low country fish stew was also delicious with proteins cooked just right and a lovely combination of broth flavors. Drinks were well made, and the wine list has great by the glass and bottle options. We didn't even get asked if we wanted another glass of wine which presumably is how most restaurants make money. The food was good. Not great but good. Although the lobster bisque could have used a bit more cream for my taste, everything else that we ordered was tasty and well-presented. The veal special was interesting. Meat from several parts of the calf were pressed into a loaf and then given a light coating of panko crumbs. I enjoyed it a lot. My wife's wreckfish was delicious as well. A modern room is complemented by interesting spins on dishes coming from the kitchen. The night we were there, the chef spun oysters on the half shell topped with thin slices of sushi grade tuna and pineapple wasabi for appetizers: Yum!. We followed with the entree special for the night; pulled veal re-joined and grill pressed served over broccoli and other veggies and chile spiced sauce. Delicious. Recommended for delicious dining, special occasion. Cypress was recommended by several locals, and it lived up to the recommendation. We started off with a bottle of Merlot and a cheese plate in the bar area while we waited for our 7:45 reservation. The snack and wine was fantastic. For dinner, we had the wasabi tuna, diver scallops and pork belly, and the NC chicken. We split a gnocchi and mushroom side. All meals were great. Food-wise Cypress is a good deal better than much-hyped Husk and among the best dining experiences in Charleston. The restaurant does a good job in having Open Table slots even when busy and it is a worthy fine dining experience. But the last two times we have had a server whose shtick is a bit more over the top than I enjoy. It's not that he is unprofessional, he is far too talky and if your need or worst still, your drink request, is caught behind his rap at the next table, you'll wait too far long and hear the same stuff. Do not miss the seared tuna as it is a signature dish with a sauce that you'll never taste the likes of again. The salad (bibb lettuce with bacon jam) was only ok, a bit too much going on. The dessert strawberry / raspberry charlotte is lovely, frozen and smooth. Our servers were friendly and very informed. I ordered the Filet of Beef and it was really good but to me the cheese sauce they put on it adds distraction to the taste of the meat. Next time ill just ask them to leave the sauce off because it is a melt in your mouth filet. Also, we had the pimiento cheese appetizer. I didn't know pimiento cheese could be THAT GOOD!! I'm not capable of cooking a really moist and juicy pork chop, so I look for that in restaurants. The Cypress version wasn't quite there. Still, I'd recommend the restaurant. The chef had given a description of the special he was planning. Soft shell crab and veal was the special. It was incredible with roasted heirloom carrots and asparagus. The veal was shredded froma shank and pressed into a square a seared with a mustard coating. Very delicious. The place is beautiful and romantic. Modern but tied into the charm of Charleston.
