CUT at The Palazzo Las VegasWonderful ExperienceWe arrived early for a 7:30 reservation and were seated immediately. 8 oz filet was the best I've ever had. We chose from the less expensive part of the menu. The service was excellent. The creamed spinach was interesting with the egg folded in, but I would have preferred it without the egg. I would order it again, though, because it was very good. My husband doesn't like anything too exotic, so he went with the potato purée for a side. It was delicious. His ribeye was very good. Overall, we loved the experience and would definitely recommend Cut to friends. I hope to go again and try one of the more expensive steaks, but honestly, I can't imagine how it could be better.6/14/2013 12:00:00 AMA "CUT" above the rest...Wolfgang Puck's CUT Restaurant in the Palazzo is top of the line..all the way. The service is top-notch from the start. The food is beyond compare...steaks so fine that you dont need a knife to cut them. Side dishes excellent. We had the Waygu filet which was delicious and melted in our mouths! We could cut the steak with just a fork! We also tried the NY strip! Super juicy and seasoned just perfect. I added the caramelized onions and they were absolutely delicious! The mac and cheese that is made with four different cheeses was just to die for! It was so creamy and all the different types of cheeses made it taste so good! The other side we got was the creamed spinach, I would probably not order it if you expect it to be nice and creamy. It seemed a bit watery and not quite that thickness I was expecting!

The bone-in ribeye was cooked medium rare as ordered and well seasoned with a bit of salt and pepper and bearnaise sauce. The sides were also spectacular, our table liked the mac and cheese and sweet corn sides most. I brought my own bottle of wine and they were nice enough to decant it as soon as we were seated so that the 25 year old bottle could breathe.

Steaks were good (both prime and wagyu), lamb chops and pork was done to perfection, wagyu sashimi gets an A++! Sides very pricey for the amount per dish. No baked potato (need to add that to the menu for the guys!!)
Atmosphere was perfect.

Although I ordered my steak saignant, and the temperature was very much on the money, the steak arrived with a lovely brown, crusty finish. I chose the "tasting," which consisted of three different steaks -- nice for comparison. The restaurant was large, with high ceilings, yet each table still had an intimate feel. Portions were not ridiculously large nor too small. Apparently Wolfgang Puck is better at staffing his restaurants. The Ramsey place at Paris was a turnoff. They took a good time to explain the wine list and assist in selection of wine. Servers were very attentive, accommodating & restpectful. They knew I did not eat onions, and took great care of making sure my selection does not include it. The food was great. Starting from the salad and appetizers and ending with steaks and sides. Steaks were cooked exactly as we asked. This is the steak house not only in name, but in steak preparation technics and quality of meat as well. There were 3 of us and we ordered filet mignons made from different beef. We could actually taste the difference!

The food itself is exquisite, as well it should be for the price.
