Proudly operated by The International Culinary School at The Art Institute of Vancouver, Culinaria restaurant is located in the heart of downtown Vancouver, on the corner of Granville and Dunsmuir Streets.

Culinaria's evolving menu features an enticing selection of dishes, from Pacific North West favourites to international fusions, inspired and created by our chefs-in-training.

Culinaria allows our students to master all aspects of restaurant and culinary arts under the leadership of industry professionals, whilst showcasing the talents and creativity of the culinary program's senior students.

    The CI is moving or actually now has moved. They have closed up shop and moved out of Downtown. Too bad for Downtown but the Institute will have larger Digs.

    Culinaria is the restaurant of the Cooking school of the Vancouver School of the Arts. As such, it is a teaching restaurant such teaching focussed primarily on the service aspect of the dining experience. During the meal, we could hear the instruction going on at another table and occasionally at our table. This was not intrusive but it should not be a surprise to the clientele. The food was truly excellent although the portions were a bit smaller than I might have liked. Preparation and presentation were both just excellent for all courses except my desert which was a strawberry custard that had little flavour. The prices are low; the value superb; I can comfortably recommend Culinaria as a fine dining alternative with a bit of a twist.

    The food was very good; desserts were outstanding! Service is very friendly, prompt, but not obtrusive. A nice, quiet restaurant (although on the most recent visit there was a table of four guys who were talking and laughing very loudly). A great place for lunch or for dinner.

    As a culinary school restaurant, it's good. However, there's room for improvement. Food quality was good but a bit slow. We waited more than half an hour for the entree. Servers were nice and friendly but you could tell that they're "new".

    First of all I have to say that their service was amazing. We arrived quite late as we do have a baby but our host was smiling and just installed us to our place. He had already placed a baby seat and did everything he could to accommodate us. He even brought us some hot water to warm up the baby milk bottle. The food was exquisite especially the dessert and the main course. I didn't like the soup that much as I had already tested a better tomato soup there. As mentioned earlier, the service was amazing. We told them it was my birthday and one of the student chef went out to try and find a candle. I was surprised. I will recommend this restaurant to anyone looking to eat good food and experience an amazing service.

    Special Features : None of above. Very disappointing. as a lunch, set menu was too expencive.(@28.00) Napkin was cheap paper.If you charge this much for meal, we expect some nice linen. Food: #1 salada : cesers salad with ham -romain lettuce was cold and crips but dressing had no taste. main : Stake ,waiter said it is flank stake but I don't think so. taste excellent. desert : chocolate moose was too sweet, even we shared but still can't finish. #2 soup : carrot soup was delicious but it was luke warm. main : Tuna (broiled?) it was good. I enjoyed it. coffee : not a good coffee.

    We had a reservation for two at 1:30 p.m., but fortunately we were allowed to be seated at 12:30 thanks to the staff. The waitress, who also cooks on certain days, was excellent. It was nice to have the students bring their creations out to the tables. The menu was very extensive and left lots of choices. The portions were generous and the food was delicious as well as pleasing to look at. Our only complaints were minor. The mussel appetizer had one that was undercooked. The main dish had green beans that were a little too oily and the fennel was a bit overcooked. We will be certain to return.

    Had a wonderful lunch at Culinaria. Things got off to a great start with a very tasty bite presented by the student chef which consisted of a grilled scallop on a delicious puree. My guest and I shared a flatbread pizza which had a great crust topped with really fresh ingredients. We followed up with some great salads and mussels which were both very fresh and excellently prepared.

    The prices are reasonable for what you get. My flatiron steak was perfectly rare and the sauce was awesome. The fries it was served with were really delicious. My companion had the mushroom ravioli. Said it was tasty, but too many shallots in the sauce. Since it is a school, they are very receptive to feedback.

    If something is forgotten or missed it is appropriate to address the omission and move on. To talk about it with other staff and assume that the customer is oblivious is rude...this happened twice(offer of bread in the beginning, coffee or tea at the end). All the hard work that the chefs do in the back is lost through this kind of behavior. Thank you, but I will never return....the only reason I write this is because the may be a small chance that the waitresses/matradee actually want to learn.

    So much fun! We came in and had there was a student shucking fresh oysters, so we had to try them with a glass of sparkling, that set the tone for a very good lunch, salmon tartar was just right nice balance with spice and fresh tasting with the lime and cilantro, then I had the lamb shank so tender and tasty, we highly recommend lunch at Culinaria

    Five star, The menu is very interesting and well developed, the students who brought our food out we're very professional, the pear and blue cheese salad was the best I've ever had!! The lamb shank was nice and tender and the mash potato was really creamy and delicious, we have already made reservations to come back because we did have to wait 20 min for a table but it was worth it

    We had the octopus cevicehe which was so creative and tasted so fresh I've never had octopus before and I loved it, for mains we had the students creation of grilled flank steak with gnocchi and corn salsa, the steaks were cooked perfectly and the gnocchi was fantastic, I think the gnocchi could stand up on its own as a vegetarian option it was so good.

    Future chefs to be did a really good job! We were a table of four and the food was amazing and came out very fast, we could see the team work that went into our dishes great to watch, the service needs a little more attention to detail, however overall the food made the experience totally wort while!

    Friday Lunch, We came in for lunch and it was truly special, I am a retired chef and I would say this restaurant was amazing considering its run by students, the salmon with the apple and sweet potato pancake was so beautiful presented and tasted so refined, we had the pork belly and ravioli which was great belly was nice and tender and we had the grilled salmon again so well made, we didn't have time for dessert so we will have to try that another time!.

    Fantastic! We were not sure what to expect when we came into Culinaria as its a cooking school restaurant, We started with the scallops and cauliflower purée I can say this was by far the best scallop dish I have ever had, my husband had the fall minestrone which was so warming, for mains we had the duck confit which was really tasty and the grilled salmon which again did not disappoint the zucchini ragout was so fresh tasting and not mushy. We will be back soon and it was fun watching the chefs of the future at work

    Best cooking school restaurant in Vancouver, We came in on a Monday lunch on our lunch break and ordered the beet salad and the minestrone soup they were presented so sharply with great flavor, for mains we had the special which was steamed clams and mussels with fennel, celery and white wine served with pome frites it was truly amazing like eating in a bistro in Paris!! Then we shared a white chocolate creme brûlée so creamy we will be back!

    Will be back! It was our first time eating in Culinaria and we were really happy, the warm fig salad was really appetizing and well made I loved how the cheese was melting and the celery leaves in the salad were a nice touch, for mains we had a steak which was cooked medium rare spot on and a grilled salmon, what impressed us the most was the vegetable sides to the main dishes with the steak the roasted peppers were really nice and vibrant and with the salmon the braised fennel and artichokes showed skill they were nice and tender.

    Outstanding, Came in for Friday lunch we had the minestrone soup and salmon tartar presentation was so elegant, the minestrone was nicely seasoned and had a nice texture, for mains we had the miso cod special with sake clams it was again presented amazingly using local seafood was a real treat we also had the braised lamb which shows the technical skill of the students, for dessert we went for the soufflé it was the best we have ever had we will be back again soon! We were surprised to find out it was a training restaurant because it was so professional!

    We arrived and where the first guests in the restaurant, so we got to choose the table and got the full attention of the waitress. Menue is small but everything is fresh. Downside was that from the small menu 2 items were not available, leaving us with about 5 starters and 5 main courses to choose from. The food itself was very good and the portions at a good size for an evening meal, so not to much, but also not microscopic. Prices are decent, as the restaurant belongs to a cooking school, so expect to get good quality for reasonable amount of money.

    Given our understanding of the direction of this facility, we would rate it as fair to good. Service was very good, however there were few patrons at the time. As an educational and instructional house, and the fact that the kitchen staff were primarily students just starting out, we found our lunch to be most satisfactory, with good presentation and decent portions. Unfortunately, their menu is somewhat limited. However, we would try them again on future visit to the mainland.

    The french fries were cold and soggy. The corned beef sandwich was sliced too thick, and the bread was greasy on the outside and the pieces of bread were very small. I have been to this establishment before and experienced much better food. The service however was perfect as the hostess/server was very personable and very accommodating. The restaurant was not busy so there is really no excuse for the poor quality of food coming out of the kitchen. As I had a guest with me for lunch, I was not going to send my meal back.

    Soup and salmon were excellent. Not a great vegetarian option that night - they tried. Ceasar salad was just romaine lettuce and a very plain dressing - not a lot of effort put into that. Service was excellent and the overall experience was good. Great if you are on a budget!

    we visit culinary schools in every city we visit worldwide. food quality at culinaire was excellent. ambience was that of a fine restaurant. service was very slow and tentative, but then this is a teaching experience, isn't it. lunched here and sadly about 1/3 of the menu selections were not available. pricing was comparable to area lunch menus.

    Bear in mind that your meal is being prepared & served by culinary professionals in training so expect some rough edges [e.g., we had a nice young woman as a waitress but she was a bit clueless regarding service]. One big positive is a quiet dining room with a sophisticated atmosphere [though they should replace the paper napkins with linen] - my husbnd and I could actually have a quiet conversation and hear each other [the area is doninated by restaurants offering little more than blaring music]. Prices are reasonable & quality of the ingredients is good. The menu however is not very descriptive so one needs to ask questions [e.g., is the "lamb sirloin" grilled?, roasted? braised?] and then be firm about your preparation preferences

    First off, the food was mixed. We each had the Nicoise tuna salad. It was way too salty, and I like my salt. The main dish was much better (tuna for one; salmon, the other). The salmon was perfectly cooked. The tuna was just a bit dry at the edges, but otherwise lovely. The dessert was OK. The wine list was small, but well-priced, relatively. Our main issue was with the service. I'm afraid the server there does the aspiring chefs no favours. She doesn't know how to serve or relate to people. It was actually just weird. She wasn't rude, just "off." The room is a bit quiet. Could use some enlivening, but that's a minor point. We wouldn't go back, because for just a few dollars more we can (and did and will again) go to Blue Water Ca
