CortonThat Little ExtraWe had a lovely experience at Corton to celebrate my husband's birthday. Our reservation was moved because of a closed event on the day that we had wanted to dine. When we walked in the door, we were sincerely greeted with an apology for having had to change our reservation date. Upon sitting, we were immediately given a glass of champagne as an apology. It is this little extra acknowledgment of the situation on top of interesting and inspired food, and relaxed, yet professional, service that will bring us back again. The no-music environment was at first awkward, but once we were used to it, it was a refreshing experience. No dish was a knockout. I wondered if they're esthetic was too subtle for us, but the overall picture suggested more. Staff moved about like clockwork, yet felt amateurish, like second-string or understudies. Our waiter struggled to answer questions about the food and drinks. It was difficult to understand those who presented courses. The sommelier was stingy on the pour of a $25 glass of wine, even as he admitted to a previous error. We kept wondering where the grown ups were. Where was the floor manager or restauranteur to give them focus and direction? You will get filled up. Difficult to select a wine (or wines) to accompany the food, but we stuck with cocktails and were quite happy. The skate dish on the Spring tasting menu is gorgeous; it's "inspired by Cy Twombly" and delicious, too. When we got there, there was only one more party beside ours. It was quiet and even after the restaurant was filled up, it was not noisy or anything at all.
I loved every single one of the courses.
Every small details, small herbs, flowers, they were not just fresh, tasty but also so pretty.
All those small bites on a plate were plenty of flavor.
Lots of complimentary - starters, chocolates, macarons....
Thai tea ice cream and sorbet were crazy good. We had the 14 course tasting menu, and thought it was just stupendous. Really interesting and unique flavor combinations--not a run-of-the mill meal at all. It was a bit difficult to understand the frequent descriptions of each course between the accent of the staff and some background noise.

However, after some discussion, consensus was achieved (I said to just go ahead and do the best they could!) and they went forward to do some subtle differences for my dinner partner that did not use dairy or gluten and more traditional choices for me. The meal was like Easter, finding little hidden gems of flavor that were subtly layered or burst over the palate like fireworks! A for effort in accommodating our needs and an A+ for the presentation, quality and variety of the meal. I asked the wine steward for wine pairings and he was a bit too deferential. Could not go past the creativity though and we both admired foods presentation - even if not all stimulated our tastes could see what the chef was striving for and admire this. Wine selection is fabulous and Sommelier gave wonderful advice for us on a wine for our palettes leaning towards an earthy French Pinot (would be great to have a dedicated wine accompaniment offering as they can offer suggestions but be better if available). Ambiance is fashionable in whites & sparseness - focus is definitely food & fantastic service. Anywhere. The "lighter" winter menu was sheer genius, building on itself course by course. The menu descriptions were not really very useful - I'm not fond of game or liver, and the game pie was not something I particularly would have ever ordered, for example. But it was memorable, and I now crave it. The dessert courses (2) were fabulous, light and refreshing.
