The food reflects a thoughtful and creative interpretation of Mexican cuisine before it was corrupted by its Americanization. Colibri's interpretations are very tasty and memorable. However, we had both kinds of the chilie relleno and both were outstanding! So savory, perfectly cooked, and delicious. No chips on the table here - but a packet of warm, freshly made corn tortillas that honestly, were the absolute best I've ever had and I'm a corn tortilla FREAK! As such, we were a bit disappointed that egg dishes were what we were choosing from, along with a few lunch like options. The food is wonderful, authentic and truly gourmet. Handmade tortillas and custom guacamoles are made in real time for each table. Traditional dishes always have a special touch, even the desserts -- fresh, warm filled churros are delightful even when one is sated.
And the drinks menu is terrific -- a very large selection of tequilas and freshly made cocktails.
The service is kindly and personal -- tequila recommendations are fetched from the bar to let you see the label. Custom requests for diet or taste are nicely agreed-to.
