"I've eaten Sandoval's restaurants in Denver, Tamayo and Sandia, which I both enjoy, but Cima knocks it out of the ballpark! We had a group of 6. They are currently offering a 3-course special for $38. The portions are NOT Vail sized portions... They are very, very generous. The Tuna Tiradito was succulent (must order). The Smoked swordfish dip was great to share. The entrees we tried were the skate, which was so subtle... The bite catches up with your tongue just as you thought you escaped! The salmon was a plethora of favors, complex, rich.... And desserts? Do not pass up the churros!!!! Melt in your mouth divine, with cajeta, chocolate and an ice cream laced with.chili.

The service was 5 star...

BTW, don't tell anyone!"

"Best in class among a competitive field of giants in the foodie-landscape of Vail! We were thoroughly astonished by the creative cuisine and imaginative presentation of Sandoval and his chefs. Highlights include the heart of palm salad, oxtail and quail-egg flatbread, peanut-crusted ahi tuna with pork belly(melts in your mouth!), seafood mariscada in coconut/lemongrass broth, and churros with dulce de leche/chocolate dips. The chef's surprise of pineapple topped with shaved fois gras and sauterne pairing put this dinner over the top."

"Cima is fine, except for too-slow service. We waited a long time for cocktails, wine bread, etc. Once the actual courses started arriving, things picked up, but general table service lagged on a not-very-busy night. Servers needs to be more attentive. The food was good, though, and the menu is creative. Cocktails were great, the room is quite handsome and overall ambience is nice. Just don't be in a hurry!"

"My wife and I recently had a friend in town (2/25) who was interested in trying a new place. We are huge fans of the Richard Sandoval places in Denver and will even plan special trips to Zengo, Tamayo and La Sandia. We had eaten at Cima right after they changed over from Avondale for the Eagle County Ambulance District Holiday Event and we really liked to decor change. We arrived a few moments late and our friend had already ordered apps which were great. We eventually got around to looking at the menu and quite frankly had trouble finding an entree which sounded really good except for the steak and lobster. We ordered the Ahi Tuna, Seafood medley and short ribs. The Ahi was bad, the other 2 were mediocre."
