A word from ChoLon Bistro
ChoLon Market, the largest Chinese-influenced market in Saigon, helped serve as inspiration for Chef Lon Symensma’s Cholon Bistro. The LoDo restaurant showcases his passion for Asian ingredients and French cooking techniques in a striking, eco-friendly space. ChoLon serves lunch and dinner, as well as a small bites menu that is available throughout the day, in a welcoming environment for all ages. The menu features inspired interpretations of traditional Asian dishes. "Many of my dishes are twists on classical Asian cuisine," says Symensma. "I enjoy sharing my own personal perspective on the flavors of Asia." The menu offers several categories designed to allow guests to sample and share many different tastes and flavors during their meal. The bar and lounge serves handcrafted, artisanal cocktails developed to enhance Symensma's creations. The venue is also ideal for business meetings and presentations, featuring a large projection screen in the lounge area.Continued

Diner Reviews
  • "Me and my boyfriend had an amazing time, great food and very comfortable dining experience I only mark the service as poor because it was terse. Although efficient I prefer more friendly service."

  • "The food here is outstanding, definitely fit for foodies. The soup dumplings are unique and delicious. The one dish that kept me from giving 5 stars was the Lobster crepe. It appeared to be deep fried since it was so well done. The lobster was tasteless and the edges were almost burned. It also was overpriced. We will return but next time we will omit this dish."

  • "Food was fresh and delicious, very nice flavors. But come on....no rice or starch with your expensive large plate? Rice is a la carte - ridiculous! Quite expensive and way too loud. It was hard to carry on a conversation, so do not take old people here. I had heard good reviews and always wanted to try it, and it was very tasty. But I will not be returning."

  • "I'll never understand the ChoLon hype train. It's good, sure. Not great. Overpriced. Not a legit top 20 Denver restaurant."

  • "Outsanding food, loved all 5 dishes we tried. Attentive, friendly service. will definitely be back"

  • "We went expecting much and our expectations were exceeded. Simply put great food in execution and presentation. One of the top 5 in denver"

  • "Eclectic menu. Service was terrific and server did a great job explaining the menu."

  • "Had another wonderful meal with outstanding food at ChoLon. The soup dumplings and beef skewers were outstanding, but the real show stopper was the grilled chicken with mango. Tremendous combination of sweet and fiery with incredible texture. It's hard to make normally bland boneless chicken taste this great. The only low point was the stringy and tough lamb, which was cooked rare but was not high enough quality to pull it off. Unfortunately the service was somewhat inattentive and negatively impacted the meal. Otherwise great as always."

  • "Simply amazing! The tender belly buns are incredible. Fantastic service and great location."

  • "Love the creative food at ChoLon Bistro. We ordered the small plates so we got more variety. The prime rib skewers were extremely tender and we really liked the pork belly buns. I would recommend this restaurant!"

  • "The food was perfect: get the Brussel sprouts, the fancy bread (cannot remember its name), and the salmon (OMG). Service was impeccable. Very impressed and will be back soon."

  • "So many restaurants use the terms "Modern Bistro" or "Fusion Cuisine." It's all kind of tiresome and usually untrue. BUT! ChoLon is truly modern and truly fusion with dishes that combine Asian and very strong European touches. Some wonderful combos that truly deliver. Very modern space with a great crowd. Terrific wait staff but runners lacked all personality. With food this complicated, diners need a description. They couldn't be bothered. A weak sore point. Still, I'd go back in a heatbeat."

  • "Outstanding food time after time. One of the very best chefs in Denver. Large and small plates meant to be shared, which is great because you want to try everything. I haven't had a dish there I wouldn't recommend. A wonderful place to wow out of town guests, and always delicious of a special occasion."

  • "This is one of the most unusual restaurants in Denver. Each small Asian accented plate wad better than the last. I find myself missing the ribeye skewers badly. They are almost worth snother trip to Denver."

  • "Came here with the hubby on a visit out to Denver- even at 7pm on a Sunday night it was comfortably full. The food is pricier than many Denver options we had tried, but well worth it. The appetizers were the shining star of the meal- BBQ pork belly buns, French onion soup dumplings, and kaya toast with egg cloud (so many interesting Flavors!). We also had the grilled pork loin and Malaysian noodles with seafood to share. Very tasty, but not as high on the wow factor as the apps. The noodles do have a noteworthy amount of seafood mixed in, and we could only get through half of the serving of pork loin- gourmet lunch leftovers! Overall, a delightful experience and great for a special occasion."

  • "ChoLon is well positioned in LoDo and has sleek, beautiful design. The service strikes the right balance between attentive but not overbearing. The menu has good variety and some novel takes on traditional Asian dishes: the Thai iced tea is nothing like the traditional (coconut milk, lime juice, sweetened condensed milk), for example. Probably the most inventive item are the soup dumplings, which are tender and burst forward in the mouth with a shower of French onion soup goodness. Other notables are the lobster crepe and the grilled chicken. Don't expect classic Asian dishes. Or a small bill. It is overpriced for what is delivered, but you'll have a delicious meal with flavorful new combinations."

  • "This was our third time at Cholon and we continue to love the variety of food, portions, presentation, wine list and service. They prepared a special dessert for our 39th wedding anniversary.."

  • "The food was okay. Although pretty expensive. Would rate this $$$, rather than the $$ that open table gives. The setting was nice. The drinks for interesting and tasty. Pretty decent experience overall, but probably won't be a regular visitor"

  • "We had one idea for the restaurant: This would have been the perfect place to offer guests hot wet towels at the end of the meal. Our hands were messy and we had to go to the restrooms to clean up."

  • "I was in Denver on business and took a group to ChoLon for lunch...what a charming spot. I wish I had one at home. Food was unigue, fresh and delicious. The service was perfectly tuned to need for information and need for privacy. I loved every part of the experience."

  • "Every dish we tried was soooo good! Price was very reasonable when we split the bill!"

  • "The hostess' are cute but they are in the weeds. We arrived on time for our reservation. The hostess' told us our table was not ready even though there were 6 empty tables. Food was great. Service was rushed."

  • "I loved every bite of everything we ate at cholon, but I hated the actual place. They were playing club music during dinner!! It's the type of place where service is fast and they pay no attention to you. I hope they do a lot of tip sharing because our actual server barely did anything. Wish I could get their food to go."

  • "The onion soup-filled steamed dumplings are amazing & habit-forming!! The crepe starter with lobster rolled in lettuce leaves is sublime & the calamari salad is healthy but so delicious as the calamari is prepared perfectly. The two of us were happily stuffed after sharing a seafood noodle bowl. We highly recommend Cholon. It's not inexpensive but worth it for a great dining experience."

  • "We Had several plates to share and they all were remarcable! Small plates, but just perfect if you want to try a bit of everything. Service was informative and efficient!"

  • "My girlfriend and I came here after a recommendation from a friend. I have to say the food exceeded our expectations. It really was fantastic. The Korean ribs with tamarind sauce and the French onion dumplings stand out. The service was also top notch. They also have some wonderful and mixed cocktails as well. Very highly recommended."

  • "Enjoyed the creative Asian fusion dishes--calamari salad and brussels sprouts were incredibly tasty, with fresh flavors and interesting combinations. Ribs were also good, if somewhat salty. Cocktails also delicious. Service was incredibly efficient--quick to refresh water, clear dishes, yet not intrusive."

  • "First of all, by 7:30 they had run out of the main entree we desired - waiter promised to come back so we could order a substitute- in the mean time we were served our second choice as we were still eating our small plates - manager ( Dani) came to the table and coldly repeated what seemed like a pattered script asking us what we wanted - in the end, it took 1:45 for 2 small plates to be served - from that point the service was abrupt and inconsiderate! In sum, this was the poorest service we have experienced in Denver!"

  • "No one in our party of 6 had ever been but we had heard lots of good things from others. We were not disappointed. Our waiter was excellent in helping us decide on how many of the small plates we needed, as sharing is recommended. He was spot on - there were no leftovers and no one left the table hungry. For the six of us, with a few mixed drinks and 3 bottles of wine, the bill was about $450 plus tip. In my opinion, for excellent food, wine and service, it was well worth it!"

  • "The apps were great (potstickers, beef skewers, coconut toast and sticky buns), as well as service. The passion fruit dessert was amazing. However mains course were lack luster. The ribs were tough and the bacon fried rice lacked texture and flavor."

  • "Unusual combinations that had excellent flavors and beautiful presentations. Service was excellent, also."

  • "We had an excellent dinner at ChoLon. The food was inventive yet accessible and totally delicious. It was hard to decide what to order because the menu provided a great variety however because the menu was designed for sharing, we were able to try different dishes. The atmosphere was lively and elegant yet not stuffy, and the service was excellent. We would not hesitate to return."

  • "This is our third year to visit Denver and dine at Cholon. We keep thinking it can't get any better and yet each year, each trip, it far exceeds our expectations! The staff was great. The food was beyond belief! The Calamari Salad was awesome and the scallops melted in our mouths! The 5 layer cherry ice cream/cake was a perfect cap for the evening! We anxiously await our next trip!"

  • "Kitchen timing and delivery of food is horrible! Waitstaff inattentive"

  • "I found the menu offerings at ChoLon to look fabulous and the reality of the flavors was overall inventive and tasty. The service was not so impressive and the space LOUD. Our server recommended 3 or 4 small plates per person to start. That seemed like a LOT of food to us and we opted for 1 each which was plenty. 2 larger plates and a side were indeed more than we could eat. The ribs were excellent but the grilled chicken was charred on the outside and somewhat underdone inside giving it a rubbery quality. Small plates were all good and side dish of Fried Rice Orzo Carbonara was yummy. Very interesting mash up of flavors but spotty service lessened the experience"

  • "I had been dying to try this place for months and finally made a reservation for date night. The food was fantastic! I could eat the soup dumplings for every meal- they are a must try!!"

  • "I tried the brussel sprouts with ground pork and mint, pork belly buns and soup dumplings. All were delicious. I wish I had room to eat it all. The soup dumplings were tender and perfectly delicate. The pork belly buns had outstanding flavor and the brussel sprouts were delicious. Great beer selection to boot. Service was quick and friendly. Would come back in a heartbeat. "
