ChoLon Market, the largest Chinese-influenced market in Saigon, helped serve as inspiration for Chef Lon Symensma’s Cholon Bistro. The LoDo restaurant showcases his passion for Asian ingredients and French cooking techniques in a striking, eco-friendly space. ChoLon serves lunch and dinner, as well as a small bites menu that is available throughout the day, in a welcoming environment for all ages. The menu features inspired interpretations of traditional Asian dishes. "Many of my dishes are twists on classical Asian cuisine," says Symensma. "I enjoy sharing my own personal perspective on the flavors of Asia." The menu offers several categories designed to allow guests to sample and share many different tastes and flavors during their meal. The bar and lounge serves handcrafted, artisanal cocktails developed to enhance Symensma's creations.   • "This is the city's new top restaurant and you won't regret your dining experience here. Drinks to a little long, however every single drink and menu item was top-notch. We had a group of 5, split all our appetizers and decided to be greedy for our main entree and have our own items. The family-style is completely up to you! French Onion Soup Potstickers and the Passion Fruit Tart are a must."

  • "We were late for the res. Host seated us in nice bar area seating with the assurances of full service menu. Not the case. Food was ok. I got the feeling of an old , tired, simple menu, prepared and plated by time clock punchin line cooks. I tasted no passion and left unimpressed not intrigued. Nothing to go back for. Busy , loud, bistro seating with kids. The bar is more intimate. There has to be better for a foodie in Denver. We are from out of town. Service was excellent!"

  • "Went for lunch and had the Ramen Noodle Bowl ($14) and came with a choice of soft drink, tea or sparkling water. I was really disappointed as I had been looking forward to a healthy, tasty bowl of noodles and seafood. there was probably one scallop and possibly two shrimp in the entire bowl - they were cut into pieces, so a little hard to say - but in about 4 bites, the seafood was gone. It also needed more flavor - dare I say a dash of salt would have been a plus - just a boring broth with noodles. My dining partner had the same thing and we both were in agreement about the disappointing, and rather pricey, meal."

  • "LOVED the pork belly buns and soup dumplings! I was so enthralled with the crispy "bread" that came to our table, compliments of the house. It was like the Indian flat bread but also like a giant, light chinese shrimp chip. I love seeing food prepared and arranged with care - all of the dishes were so nice! And our waiter Jordie (sp?) rocked out evening. I also used Open Table to make the reservations and the restaurant followed up with a phone call when we were running a few minutes late. Open Table was very easy and convenient to use as I had to change our reservations twice. Thank you, ChoLon!"

  • "It was amazing. The food was unreal, we tried 5 of 7 plates from the appetizer menu. It was fantastic, only two we didn't try was the reuben and salmon. MUST have the Kaya Toast. I was very against ordering it at first, waiter insisted and it ended up being my favorite thing on the menu! Our waiter did give me a bigger table at the request when he realized how much food we were ordering for two. I highly recommend this restaurant. The food was super amazing. I will take clients and family here for special occasions or even if I am just craving the Kaya Toast."

  • "My husband and I were excited to try the menu, and obtained a lunch reservation on a Thursday afternoon at 11:30am. We arrived and the manager John sat us at a two top. When asked if we could be seated at a bigger table as we were planning on trying several menu items to taste, the Manager stated NO, that they were expecting to seat many customers from a convention in town. At the time of our seating, there were over 15 tables empty. We enjoyed the food but were forced to split our meal up into "courses" for lack of room on our table. While we were eating, at least two other couples were placed at bigger tables, and several remained open. Is a reserved customer's request not as important to the staff as a walk-in? Would not recommend."

  • "Cholon never disappoints. The menu contains a few big hits, but much of it changes frequently. And the food is still the same genre of beautiful, tastes better than it looks delights. This trip it was the rib eye skewers, an old favorite, and still, the perfect bit of beef. The short rib spring rolls were splendid, too...a new dish for me. Top that with the Thai shrimp and scallop noodles, and it was a near perfect meal. Go..enjoy.....love this place."

  • "Our party of four couldn't decide what to order, so we ordered everything... literally. We ordered all 7 (?) of the small plates, and loved all of the them. The dumplings are the menu item that we refer everyone to this restaurant for specifically. We ended up ordering a second round of two small plates before digging into dessert. The staff was friendly, the food was great, the energy was fun and we will be back again and again!"

We were surprised to have stopped in on a Monday night with the pre fix menu, pleasently surprised I should say. What a deal! Of course a Cholon review wouldn't be complete without mention if those incredible soup dumplings. The service from Emma was outstanding. Her knowledge of the menu was really incredible. We will be back, eating soup dumplings and sitting in Emma's section"

  • "Every dish we had was great, and I was with a group of 6. Not a single bad dish, lamb was too undercooked for me, it was more blue than rare, but otherwise everything was fantastic. Our waitress wasn't very attentive and it took a while for drinks to come, but the food arrived promptly. All in all a very good experience and I would definitely come back again, and would recommend it to anyone visiting Denver and near the 16th St. Mall."

  • "The staff was amazing, well-trained, polite, interested, informative, and able to deliver each dish immediately, Whoever was there – your server, another server, a bus person, a manager – brought it right out. Great teamwork. The food was uniformly good, though the selection is thin. One exception was the chili-crab rolls, which though pretty, hadn't much flavor. It tasted neither of crab nor chili, just bland. The noise level is very high. We could hear, but it was a distraction. Overall, a great place for a great dinner experience."

And for a high end place- would it be too much to ask for a vent system that keeps you from smelling like a wok??? We left feeling very disappointed with the whole experience"

  • "Between the six of us (there for a couple of birthdays), we tried most of the menu. Food delivery was good with one plate after another, sometimes a couple at a time, and no real lag. Only a couple/few dishes didn't meet the rather high standard we expected (overcooked/dry salmon, completely forgotten pork in one of our dishes, though they did bring a replacement unprompted), but most were good to great. Table service fell down a little between main course and dessert but was otherwise about right. However, for the second time we noted that host/bar staff were something between aloof and negligent, so that seems to need tightening up. Would go back, but can't quite give the rave review we'd hoped..."

By the end of it it did get a little expensive, around $85. I do think you could order a sandwich and get out of there for a very reasonable price though."

  • "The ambiance here was amazing, and the servers really knew their menu and were able to make great recommendations. I sat at the Chef's table in front of the cooks, which was a really neat experience. The food was amazing. For my starter, I had the Duck Spring Rolls, which were perfect, and the cilantro yogurt really added to it, but was light and did not overpower the dish. For my main course, I had the seared salmon, which was also very well done. One side was more crispy than the other, and it gave it a nice texture that made very bite a little different. The asian greens paired perfectly with it, and their homemade take on the soy sauce was delicious. Great work!"

  • "Most "Asian Fusion" places are too non-traditional for my tastes. ChoLon manages to be new and traditional at the same time. Most of the dishes were exceptional, the chili crab rolls being the one exception that we tried."

  • "We were able to hear each other despite my brother-in-law's slight hearing loss - that was a relief. Food was excellent, loved the duck fried rice. Server was outstanding and recommended just the right number of dishes to share. Before tip, we spent less than $50 each which included 2x$35 bottles of wine. It was our 1st time there and we'll go back more often since it's an affordable special occasional place. Saw one young boy with his parents and he looked bored."

  • "We really enjoyed our experience there. The restaurant is great, and the food is fantastic. The only complaint we had was the delivery of some of the food and drinks. We got our appetizers in a normal time frame, but there was a long gap b/w when they were delivered and the entrees were delivered. It was a busy night, but the people next to us were seated after we were and got their food before us. That said, I certainly would go back. It is a great place."

  • "Given reputation, wanted to love it more than I did. Some wonderful taste surprises (French onion soup in a dumpling! Chicken with the tenderness of tofu!) but a couple dishes sounded better than they tasted (beef skewers, can't remember the other but it was an under spiced dish that was supposed to be spicy). And a bit too noisy. And appetizers took forever even though we were early and the place was not yet full. So overall very good but not 5 star."

When we arrived there were only 2 tables available but when a window table opened up we were moved very quickly & graciously by the hostess. Our server was very nice & personable.
