Chimney Park Restaurant and Bar has a warm and inviting atmosphere combined with a straight forward approach to cuisine. The menu reflects seasonality and items produced within the region. Exceptional service and an award winning wine program will assure you an outstanding dining experience. Menus include an a la carte and 4 course chef's tasting. Chef and owner, Jason Shaeffer, embraces a refined but casual style in cuisine and dining. Shaeffer trained under renowned chefs Thomas Keller (Per Se) and Terrance Brennan (Artisanal) in New York City. He most recently opened 1500 Ocean at the Hotel del Coronado in San Diego gaining local and national accolades. Chef Shaeffer's vision is to create a destination dining spot in Northern Colorado. Chimney Park Restaurant and Bar is conveniently located between Fort Collins, Loveland and Greeley; Chimney Park is a short drive from I-25 to historic downtown Windsor.Continued

The second was shared with family, which was a completely different experience but fabulous. In fact, for the latter celebration, we added four more people at the last minute, which was kindly accommodated. The hostess, our lovely server, James and everyone looked after us and the food, as always, was outstanding. Thank you for a brilliant evening!"

  • "We have been wanting to try the chef's tasting menu for awhile and it did not disappoint. It begins with sharing your likes, dislikes and allergies with the wait staff. Then sit back and be prepared to be amazed. We were given 5 courses, each paired with the perfect wine. Every course is like Christmas, though be sure to wear your Thanksgiving pants because you will devour every last bite. It's a pricey affair ($200 ish for two) but a must-experience even if you only have it just once."

  • "This was our first time to Chimney Park. Was a bit worried with the brashness of the hostess when we arrived. Then we opted to sit outside, as it was a nice evening. After sitting for a few, it became apparent there was absolutely no ambiance outside - with the exception of listening to the cooks in the kitchen working. Made a mention to our waitress and she turned the music. Then the food started to arrive. It was heaven! The food made us forget all of the questions we had when we walked in. If you like good food, this is the place. We did the Chef's four course meal. Ate and greatly enjoyed many things we would never have ordered. Absolutely outstanding food."

The crab cake was SO out of this world that I actually regretted that we had decided to share that and tuna appetizer between 4 of us! The new roasted salad had such a beautiful presentation, and it was delicious with the scent of fragrant truffle oil tickling my nose. The scallops were superb as usual, not overcooked. Lemon trifle completed my perfect dinner and by then, I was glad I split the appetizer :-) My husband had bison and it was really tender. I just love Chef Jason's creations there! If you want to take someone special to dinner, Chimney Park is the place to go. It is a lovely restaurant!"

It was slow from start in that it took nearly 10 minutes to order drinks after being seated and it seemed that every step was equally drawn out. Don't mind a slow pace at a nice place, but this was a lack of attention. Like I say, everything else was great, so perhaps just an off evening perhaps short staffed."

The Chef's choice is great fun as you don't know what you are going to be served, and nobody at the table gets the same meal. You tell the server about any allergies you have as well as your food preferences and the chef does all the rest. The restaurant is fairly expensive and well worth every penny. Definitely recommend this place for special occasions."

We moved to Northern Colorado from Denver last year, and have found that Chimney Park rivals or surpasses most of the hyped Denver restaurants. We have taken friends from Denver who loved the little main street of Windsor and were wowed by the food at CP. Our college son the foodie, who we recently took to CP on his birthday, approved as well. Chimney Park is not inexpensive, but we have found that the food and ambiance are well worth the expenditure now and then."

  • "Don't have a special occasion to celebrate? Make one up and go to Chimney Park! We almost always opt for the Chef's Selection. Tell the waitress what you don't really like to eat (and/or what you really like). Over the course of the meal for a foursome, you will see 16 absolutely unique, beautiful and delicious dishes: appetizers; salad/soup; entree; dessert. Great martinis, good wine list, locallly sourced food expertly prepared and enough to fill you up. Pricey, but very worth it. We go 3 or 4 times a year."
