Chimney Park Restaurant and Bar has a warm and inviting atmosphere combined with a straight forward approach to cuisine. The menu reflects seasonality and items produced within the region. Exceptional service and an award winning wine program will assure you an outstanding dining experience. Menus include an a la carte and 4 course chef's tasting. Chef and owner, Jason Shaeffer, embraces a refined but casual style in cuisine and dining. Shaeffer trained under renowned chefs Thomas Keller (Per Se) and Terrance Brennan (Artisanal) in New York City. He most recently opened 1500 Ocean at the Hotel del Coronado in San Diego gaining local and national accolades. Chef Shaeffer's vision is to create a destination dining spot in Northern Colorado. Chimney Park Restaurant and Bar is conveniently located between Fort Collins, Loveland and Greeley; Chimney Park is a short drive from I-25 to historic downtown Windsor.Continued

  • "We have never had less than a delicious meal at Chimney Park. We moved to Northern Colorado from Denver last year, and have found that Chimney Park rivals or surpasses most of the hyped Denver restaurants. We have taken friends from Denver who loved the little main street of Windsor and were wowed by the food at CP. Our college son the foodie, who we recently took to CP on his birthday, approved as well. Chimney Park is not inexpensive, but we have found that the food and ambiance are well worth the expenditure now and then."

  • "Don't have a special occasion to celebrate? Make one up and go to Chimney Park! We almost always opt for the Chef's Selection. Tell the waitress what you don't really like to eat (and/or what you really like). Over the course of the meal for a foursome, you will see 16 absolutely unique, beautiful and delicious dishes: appetizers; salad/soup; entree; dessert. Great martinis, good wine list, locallly sourced food expertly prepared and enough to fill you up. Pricey, but very worth it. We go 3 or 4 times a year."

  • "Our party of eight were given the private room at the front of the restaurant where we watched the sparkling snow fall under the street lights. The curtained room kept us and our conversation warm and comfortable. Roberto kept our glasses filled and he gave us quiet attention to be certain we were still happy. All other staff we encountered were friendly and welcoming. The food was special. Presentation was lovely. Taste was perfection. The kind of perfection that makes you want to eat slowly to savor the delicious flavors. For a quiet, enjoyable evening outing for friends, we could not have asked for more. Chimney Park is a gem of Windsor."

  • "We have been coming here since finding the place two years ago and have always loved it. Everything has been first rate. Last night we invited some friends to join us at the experience, but the service to VERY poor. We got there early, sat at the bar,but the bartender fail to acknowledge us and did ask if we wanted something to drink (which we did). The waiter was even worse. He didn't know how to serve wine and after the initial serving, never bothered to even look at the bottle. He barely came by to see how we were doing. The food was excellent (as usual). We finished the wine, but couldn't find anyone to get a second bottle. We really like this GEM in Northern Colorado, but they need to work on the costumer service side."

The sommelier was actually our waiter and made sure to recommend great wine to pair with the tasting menu that we opted for. All the dishes were delicious and brought out by the chef ensuring a very personal experience. Overall we loved this place- it's such a gem for northern colorado."

  • "My wife and I went here for our anniversary dinner. We ordered the Chef's Tasting menu and a wine pairing. I can honestly say that this was the BEST restaurant meal that I have ever had. Kate, our waitress, was very knowledgeable about the menu, the food items and, of course, the wine. She was pleasant and attentive but not intrusive. The food was perfectly prepared in all manners. The wine for each course was a perfect enhancement to the food. I will go back here several times during the year. While it is a bit expensive, you get everything and more that you pay for at Chimney Park!"

  • "Enjoyed an early Sunday evening dinner with my wife. Arrived at the bar in time for "happy Hour" specials where we had an appetizer (antipasti) and a glass of wine-very reasonable and the app was excellent. The dining area is small but quite comfortable. My wife ordered the lamb and it was perfect. I had the "1855" steak and that too was delicious and cooked perfectly. We shared the flour less chocolate cake for dessert-great end to a wonderful meal. Tip: We were informed that on Sunday evenings bottles of wine are discounted 25%. That is a great deal since they have an extensive wine list."

  • "Me and my wife tried this place when we were looking for a fancy place to eat. I would say for the price, hands down, the best fine dining in Northern Colorado. The food was excellent, the best meal I've eaten at a restaurant. The specials they offered were interesting and innovative. My wife had this Indian(as in from the middle east) infused soup. We had the bacon and eggs appetizer. I had the 1855 rib eye and she had the truffle stuffed chicken. Everything was fantastic. The ambience was perfect. It was busy, but not crowded in the fact that the tables aren't on top of each other. It's lighting was ideal, you didn't fee like you where in a cave, compared to some of the other fine dining restaurants. Service was great."

Many restaurants seem to stumble on New Years Eve because of the flood of diners, but the food and service were excellent, as always. We were offered a little nosh from the chef prior to dinner, which was fabulous- what a great way to start at a new restaurant. Both our salads were excellent- the Kale & Apple salad and the Roasted Beet & Citrus salads did not disappoint. My husband also tried the soup, which was a Butternut squash soup- just delicious! There was also warm sourdough bread- we appreciate warm bread! Our main courses were also excellent- I had the Mushroom crusted Scallops and my husband tried the Grilled Sea Bass with quinoa- I would have them again! For dessert we shared the flourless chocolate cake, very yummy. My only negative criticism is they don't have black napkins!"

  • "Chef Jason Shaffer and his Manager/Sommelier, James, are both amazing. They feature on the very best local ingredients. The chefs tasting menu is always off the chart amazing. For example. I HATE liver. Even as an infant I would spit it back at my mother. On a chefs tasting menu, I was served calf foie. I put trust in Chef Shaffer and was not disappointed. While it was not amazing, It was tasty. I have never been able to eat liver in my entire life! This is wonderful gem of a restaurant that has no business being in Northern Colorado. I am so glad that it is!"

  • "was the couple next to us who just had to text and look at their cell phones all evening. I mean, heck, it was Christmas evening, can't people just put their toys away once in a long while. The woman even had to plug her phone into an outlet (to Recharge) while we were eating. And these were folks who looked to in their 50's. Not Chimney Park's fault...just wanted to vent. Food was fine, service excellent. There were even two families there with children...and that was okay with us. Again, we ate early (5:30) and it was Christmas eve, so the families were expected. Our server was top-notch. We'll be back."

Our server treated the "birthday girl" like a queen and made substitutions for my less than adventurous father-in-law. The food was fabulous, everything fresh and cooked to perfection. A big part of our travel adventures is trying top restaurants all over the world. We recently moved to Windsor and were very surprised that we have such a fine restaurant in our backyard. We hope to have many more celebrations at Chimney Park."
