If you're not much of carnivore, the salad bar doesn't disappoint at all. You honestly can't lose with Chima's.6/6/2013 12:00:00 AMEat well but be preparedYou have the option to eat only the salad bar (which includes carpaccio, cheeses, ham, meat-filled fejioda, rice) and the grilled fish. Or you can gorge on all of that AND the grilled meats: pork, beef, chicken, and sausage. If you opt for the latter, i recommend a vegetarian and fiber-rich diet in the days before and after the event at Chima. Even if you have only the smallest piece of half the meats, you will hurt the next day. In a way, you won't care. The meat is PERFECTLY grilled and well-seasoned. It can be noisy when they are busy, so it is not a place for an intimate dinner, but i'm sure you can call and ask for the quietest times/tables if you have something like that in mind. Amazing array of perfectly cook to order meats. Plus some great side dishes and an buffet bar of salads, cheeses, and soups, etc. You can even put in a request for certain meats if the gauchos haven't stopped by your table. The down side was that we had requested the fish to be sent over. We waited for 45+ minutes in order for it to arrive, only for it to be cold. During the 45+ minute wait, the servers would check in on us multiple times, but no fish. It had gotten to be that all our plates were empty, waiting for the fish to arrive. We found ourselves comparing it to Fogo De Chao in DC. Both places have great food. I did enjoy the ambience of Chima just a tad bit better than Fogo because it's seems to be a little more spacious. The service at Chima though was excellent! Our server Vini was on point from the moment we were seated at his table. The servers who bring out the meats were more friendly and talkative, loved it! We went for my husband's birthday and at the end they came out and song to him and presented him with a birthday cake compliments of Chima. He was embarrassed, but I loved it. The location is nice and they offer complimentary valet parking, loved, loved, loved that! Our experience this time was a total 180. My daughter & I came for the house specialty, the top sirloin, and the rack of lamb. They were done the way we love it, medium rare. Our meat carver, Atef, was a perfectionist. He came back twice just to make sure he got it right for us. His attention to detail was impeccable. Mary Jane, our waitress was also very attentive. Kudos to the staff for making my birthday a real treat. A much better experience! Would recommend this place during the week. Made a reservation for 5:30pm, got 1000 points, & went a bit earlier for the happy hour at the bar which was lovely.
We were the first ones seated in the dining area. It was very cool having the meat just circle around us for the first 20min before there were other tables seated. Felt very important & spiffy!

Wait staff was attentive without hovering. Meat selections were excellent, well cooked and flavorful. I can honestly say that this is now one of my favorite restaurants! The quality of the cuts of meat they offer are superb. The salad bar is always stocked. The drinks are delicious. The ambiance is excellent.

Food is great and service surpassed expectation. The meat never stopped coming. The waiter got us the meat we wanted when we thought we had to wait. We asked for water, expecting tap water, and was surprised that we were charged $6.50 a bottle (about 1L). Don't remember seeing that on the menu. Otherwise, had a great time. The meat tends to be on the salty side. The vegetable rice was flavorless and the black beans were not too great either. The vegetable soup was actually vegetable puree.
