Chef de Cuisine Steve Blandino's menu satisfies with dishes like Colorado Rack of Lamb with Ratatouille Tart, as well as excellent cross selection of traditional cuts including a Charcoal Grilled Filet Mignon in Roasted Shallot Jus and a 28 day aged Bone in Rib Eye. The wine list, specializing in Napa Valley Cabernet and exciting new Pinot Noir producers from up and down the West Coast, also offers a wide range of old world wines from the Rhone Valley, Bordeaux, Burgundy, Spain, Germany and Italy, as well as vintages from off-the-beaten path, under the "Wines for the Adventuresome" sections.

  • "Had a group of 6 and started off with a drink in the bar. Tommy is a great bartender!!! Made 2 of us special bourbon drinks that were different and made the taste buds alive. All had the "cut of the week" the salad (italian greens) and the sides (rabitinni(?) and pesto mashed potatoes) were different and very good. Only one steak was tough and was taken off the bill. Very good dining experience in The Four Seasons."

  • "I can say the food was well prepared and very tasty. But small portions and PRICY. The Kobe filet was 280.00 for 8 ounces!. I am far from cheap and the steak was good but wow 280.00. The surf and turf for 70 was also very petite and more stuffing then lobster. Again food was well prepared and tasty but not worth the price. So many choices in Vegas this one was in my opinion not a winner."

  • "I thought this restaurant would have been much better than it was. We took a customer out for dinner and for conversation it is great. You can actually hear people talk at your table. It is quiet, I'll say that much for it. I had the Filet Mignon and it was just OK, but at $50 bucks, I expected something much better. Then if you wanted a salad, potato, vegetables, etc., all of that is extra. I believe the potato was an additional $8.00. Come on, why not just give the waiters a mask and gun!"

  • "Steak was not as good as the other Mandaly Bay Steal house, Strip Steak. The service was poor. Eventually got initial service after asking th hostess if a waiter was assigned to the table. The second botlle of wine, ordered before the entrees were served, barely showed up for dessert. Only a couple botlles of wine were less than $100. The wine list was too expensive."

  • "Our dinner was really disappointing. Poor service, poor presentation, food was noticeably lacking in quality and flavor. Despite clarifying "doneness" of medium rare versus rare before placing order, the steaks were dry, tough, and lacked flavor. Even though there were several servers none checked on our satisfaction, whether we needed anything, and when there were huge pieces of steak left on the plates there was no offer of a "doggy bag," or an inquiry about the reason there was so much remaining. Despite the cost, which I was prepared to pay, the meal was a real disappointment."

  • "My husband and I had dinner before a concert at Mandalay Bay. Our reservation was for 6:00pm, so it was very quiet through most of our meal. By the time we left (7:40pm) it was getting busier and louder. It seemed there were far more staff members than needed, likely in anticipation of how busy it would get later. We had very attentive wait staff and a helpful recommendation from the sommelier. Our food was very good. I would return, particularly for a special occasion."

  • "We have dined at Charlie Palmer on numerous occasions while visiting Las Vegas. It has always been a special treat but we were quite disappointed this time. We ordered the surf and turf. The stuffed lobster was quite delicious but the filet was very tough and not edible. When we told our waiter he did offer to bring another meat entree but by that time our companions had finished their meal. We would have expected an establishment of this caliber to at least take half of the entree off the bill. We will probably skip this restaurant on our next visit. For the price we expect the food to be excellent. The hotel & the town was packed but there were several empty tables on a Saturday night????"

  • "This was our second time sampling Charlie Palmer's "Cut of the week" special menu. The three course prixe fixe menu changes weekly and comes paired with good quality wine for $48, which is a steal! This week we had a Caprese salad with house-made buratta that was to-die-for! This was followed by a marinated hangar steak with Southwestern chiles, roasted carrots and smashed potatoes; all wonderful. The dessert was a lovely banana bread pudding with pecan ice cream. The wines, a white with the salad and an Australian red with the steak were quite nicely paired. We will be coming back often as the weekly menu changes. Highly recommended!"

  • "How can you beat eating at Charlie Palmer @ the Four Seasons for $48 pp?? Their Cut of the Week menu (changes every week and is posted on their website) is a 3 course dinner with unlimited wine. Fantastic food, great wine, and excellent service. One of the best meals I've had in a long time - quality is far superior to other steak houses."

  • "Decided to go to Charlie Palmer's during restaurant week since their menu was the most interesting, and it did not hurt that there was unlimited red and white wine either. They definitely did not disappoint. First course was a chilled pea soup with a lump of crab in the middle-delicious. The second course was burrata with some greens, strawberry-dipped tomatoes and a balsamic reduction-decadent. The main course was wagyu steak with spring vegetables and an aligot mash potato. The meat was a perfect medium rare and the sides were perfect as well. By the dessert course, we were stuffed, but even the dulche de leche cheesecake was hard to pass up. Service was great, the timing of the food was done to perfection. Definitely coming back here."

  • "We went for Las Vegas restaurant week and the prefix menu was superb. This was our first time dining at Charlie Palmers and we were blown away by how great the service and the meal was. Didn't love the cold pea soup but the wagyu strip was great as was the salad - can't recall the name. I did notice that the average age was 40+ at least and it was very quiet. If you're staying at Mandalay Bay and want to escape the crowds and loud environment, Charlie Palmers is an excellent option as it's right over at the Four Seasons, just down the hall."

The menu was a 4 courses, Chilled pea soup, salad, steak with veggies, potato puree and marrow fried rice, caramel cheesecake. All were wonderful. We ordered venison tartar and some creamed spinach extra. All were wonderful. Service was excellent, a slow even paced we were never rushed. Their regular menu looks great and we are going to go back and try more!"

It happened to be restaurant week in Vegas so we had their special four-course meal. We were told that the restaurant has this type of special on a regular basis. Amazing. We felt pampered and were wined and dined magnificently. I'm checking their website for other locations - a definite winner."

  • "Get away from the Las Vegas frenzy for a few hours and go to Charlie Palmer Steak at the Four Seasons Hotel. The ambiance is very nice with music and lighting, and the staff were very pleasant and did not appear rushed. We had 2 steaks and one Lemonfish entree. All three were excellent. The Filet Mignon was big enough that it could not be finished by my brother. The wine list was extensive and carried a lot of classic vintages. Overall an excellent night out, especially on a night when you need a respite from the noise and smoke of the casinos."

  • "It was planned to be a birthday celebration & became a dining disaster. As party of 6 we were seated at an added table in the dining room next to the kitchen doorway. It was a busy Saturday night and we could not be moved without a long wait. We were able to watch an army of staff serve meals and bus tables all around us and over our heads. That being said we were unattended, it was as if we fell into a black hole. The dining experience was a very painfull evening having to wait for service, wait for wine, ask for water to be refilled and a bread basket . It took an hour for our steaks to arrive ( which were very good as were the sides) we then had to ask for steak knves. It was not one thing it was EVERYTHNG. My Beef....Bad Service"

  • "I requested a nice table for my wifes birthday, and recieved a table next to the waiters station. The restaurant was about 1/4 filled. I was able to find a nice bottle of wine for fair price, but don't expect much variety under $100. Food was quite good. The venison tartare was excellent. The Porterhouse for two was not cooked evenly (which is difficult), but hey, this is Charley Palmers. The service was choppy. It seemed a bit unorganized. I guess its a reach to expect New York / New Orleans service in Las Vegas."
