  • "The Chop House is 30-50 dollars per entree. You will drop 150 on a dinner for 2. We found the food to be good (though they cooked the filets too long-we wanted medium rare, got medium). We had the filet Oscar style and the other filet with the reduction...the Oscar was very good as was the reduction. Issues: slow service - waited for several minutes to get water, then it just seems they did not pay attention to us. When we needed them to come over, no one came by. When we were in the middle of conversation they interrupted us 3 times. Not the attention I expect at a restaurant at this price level. Some people were there in t-shirts and tennis shoes. It made the restaurant feel like a Red Lobster instead of a high end steak house."

  • "The food was great....Our server Sherry was well versed in qualities of wines on wine list and was one of the best servers we have had in the Fort Collins Area. The one down side of the evening is that the dining room was too hot. It was 90+ degrees out side but the temperature in the dining room should have been able to handle this temperature elevation. We will be back soon."

  • "We visited the Canyon St Chop House for our wedding anniversary, and dine here a few times a year. The food was great and we enjoy how they switch up their menu seasonally. Their menu is a lot more interesting and varied than other fine dining choices downtown (such as Jay's or Sonny Lubick's). Our server was knowledgeable about wine pairings for what we ordered. It was a very pleasant evening and the service was timed just right - not too fast, not too slow. If you have a larger group - ask about reserving the vault room. It's the remaining vault from a bank that used to occupy the building."

  • "We visited the Chop House again celebrating father's day. The beef appetizer was amazing and flavorful. My husband had been served deep-fried spinach in New Zealand and had been trying to recreate it for many years. The chef was willing to try to make it and it was amazing! We appreciated the chef going the extra mile to make a customer happy. Our wait person, Berkeley, provided great service. Overall, an outstanding dining experience."

  • "Service was mediocre, had to flag the waitress down repeatedly to ask for more wine. She brought the wrong dessert and never checked to see how it was until it was time to pay. The food was bland and disappointing. I used to say, "I've never had a bad meal at the Canyon Chop House", but can no longer say that. I cannot see going back there again. Also, one of the restaurant workers was running around in faded jeans and a tshirt and some sort of headwrap in her hair looking like someone I would expect to be busing tables at the Rio or someplace much more casual. I found it off-putting, and I'm a pretty casual person myself but I expect more at a nice restaurant."

Bentley was very attentive, cordial and made a good recommendation on the Funkwerks ale. The other waiter, Eli, there was a friend of our younger son so it was good to see him and he helped w/ suggestions. I recommend this restaurant and especially for steak lovers."

  • "We were so excited to go to Canyon Chop House during our recent visit to Fort Collins, Colo. I was less than pleased when we were seated next to a dirty window with a large empty pot filled only with dirt right outside the window. I looked up and the post for the pendant light above our table was very dusty and dirty. It obviously had not been cleaned in some time. The food was good but I would not go back. If there is no cleanliness in what the customer sees from the table one has to wonder about the kitchen."

I wanted the evening to be special and surprising, but still private and personal. The manager, Lisa, was incredibly helpful and eager to help in any way. Our waiter, Dan, was perfect - very attentive but not intrusive. I couldn't have asked for a better experience. Lisa even sent over a couple glasses of champagne!"

The wine list was hit or miss, "sorry we don't have that one" and another and another...Meat was frightfully under cooked pork and bison. The server then took credit card but failed to return the card. I'm still attempting to contact owner. For 200$ plus and get this treatment, I won't return."

  • "Arriving in town for Cirque De Soleii, and one slot left on open table. Jumped to it at 715. When arriving after the show, real nice location but right in college town. No worries, school was out. However, it was prom and there was a group of 6 and a few other open slots. No app, but did order some well drinks - after waiting 10 minutes for our water and 5 more for our drinks. The waitress was overwhelmed, but the place is not too big and should be streamlined in logistics. She comes to the table and says, "the kitchen is backed up." I look in disbelief and said please bring another drink. 45 minutes in we got our salad, then our steak 1 hour after that. Horrible service for a 140 ticket. Will never return to this place. "
