  • "I happened to stumble across this restaurant for my boyfriends 21st birthday. I wanted to go somewhere in Fort Collins that neither of us had ever been before so I decided on the Chop House. From their website, the notion of dining inside of a former bank was enough to spark my curiosity and look into it further: I am very glad that I did. Immediately upon arriving at the restaurant, I was surprised to see that it was very well laid out and even though they were very busy, I never felt that it was too crowded or understaffed from the moment we got there to the moment we left. The food was great, service was prompt and polite, and the ambiance was perfect. There is such as thing as too much lighting to not enough and this place had it right"

  • "I was nervous about ordering the duck as I have found it to be mostly skin in other restaurants. However, I was pleasantly surprised at the "beefiness" of the cut of duck. What I received looked like a steak, but had a flavor distinct to well-prepared duck, and also had a crispy, well-seasoned skin. My favorite part of the meal was the tamale on the side. It was amazing, and I would order tamales as a starter if they were offered on the menu. The jicama side salad was citrusy, and paired nicely with the duck. Unlike some fancy restaurants, the portions were generous. I even contemplated boxing up some of my meal, as did my husband who ordered ribs. What I loved about the menu was that I could order items I wouldn't make at home."

  • "My wife and I had not been to Canyon Chop House since 2005 so we thought we would give them another chance. The service was spotty and the food overpriced. I opted for the T-bone and the NY strip side of it was very tough and required a steak knife to get through it. The tenderloin side was not much better. My wife had the filet and it was no better. For $100+ meal for two people with one beer each and no desert, I expect better."

  • "The Chop House is 30-50 dollars per entree. You will drop 150 on a dinner for 2. We found the food to be good (though they cooked the filets too long-we wanted medium rare, got medium). We had the filet Oscar style and the other filet with the reduction...the Oscar was very good as was the reduction. Issues: slow service - waited for several minutes to get water, then it just seems they did not pay attention to us. When we needed them to come over, no one came by. When we were in the middle of conversation they interrupted us 3 times. Not the attention I expect at a restaurant at this price level. Some people were there in t-shirts and tennis shoes. It made the restaurant feel like a Red Lobster instead of a high end steak house."

The one down side of the evening is that the dining room was too hot. It was 90+ degrees out side but the temperature in the dining room should have been able to handle this temperature elevation.   • "We visited the Canyon St Chop House for our wedding anniversary, and dine here a few times a year. The food was great and we enjoy how they switch up their menu seasonally. Their menu is a lot more interesting and varied than other fine dining choices downtown (such as Jay's or Sonny Lubick's). Our server was knowledgeable about wine pairings for what we ordered. It was a very pleasant evening and the service was timed just right - not too fast, not too slow. If you have a larger group - ask about reserving the vault room. It's the remaining vault from a bank that used to occupy the building."

My husband had been served deep-fried spinach in New Zealand and had been trying to recreate it for many years. The chef was willing to try to make it and it was amazing! We appreciated the chef going the extra mile to make a customer happy. Our wait person, Berkeley, provided great service. Overall, an outstanding dining experience."

  • "Service was mediocre, had to flag the waitress down repeatedly to ask for more wine. She brought the wrong dessert and never checked to see how it was until it was time to pay. The food was bland and disappointing. I used to say, "I've never had a bad meal at the Canyon Chop House", but can no longer say that. I cannot see going back there again. Also, one of the restaurant workers was running around in faded jeans and a tshirt and some sort of headwrap in her hair looking like someone I would expect to be busing tables at the Rio or someplace much more casual. I found it off-putting, and I'm a pretty casual person myself but I expect more at a nice restaurant."

  • "Neither my wife nor I eat much meat so she opted for the pasta/mushroom dish and I went for the crab cakes. Both were very good; the crabcakes were the best I've ever had. The service was primo. Bentley was very attentive, cordial and made a good recommendation on the Funkwerks ale. The other waiter, Eli, there was a friend of our younger son so it was good to see him and he helped w/ suggestions. I recommend this restaurant and especially for steak lovers."

  • "We were so excited to go to Canyon Chop House during our recent visit to Fort Collins, Colo. I was less than pleased when we were seated next to a dirty window with a large empty pot filled only with dirt right outside the window. I looked up and the post for the pendant light above our table was very dusty and dirty. It obviously had not been cleaned in some time. The food was good but I would not go back. If there is no cleanliness in what the customer sees from the table one has to wonder about the kitchen."
