Canyon Chop HouseNoise detracts from experienceThe food and the service were superb. The ambience is quite nice appearance-wise but unfortunately the noise from the kitchen area, which is open to the dining area, seriously detracts from the ambience. There was a constant, loud, vibration/mechanical sound coming from the kitchen. This sounded like ventilation equipment and indeed when outside the building this could be heard. This sound all but drowned out the music system and the combination of the mechanical sound and the drowned out music resulted in a very unpleasant cacophony which really diminished the dining experience. I wanted to take my parents somewhere special for their big anniversary and we normally go to chain restaurants like Outback, Red Lobster and Olive Garden. What a big step up! Our entrees ranged from $28-38 but were worth every penny. Everything was cooked to perfection and plated elegantly. From the first bite, we had all decided we needed to come back on our next special occasion. There were so many delicious sounding menu options it was hard to choose an entree! The wait staff were very attentive and made us feel special - the manager even came and wished them a happy anniversary. It does tend to be at the higher end, cost wise, but delicious and worth it.6/1/2013 12:00:00 AMNever DisappointedThis was the fourth or fifth time I've been, and like always, the food, service, and atmosphere were fantastic. While it may seem expensive to some, when your bill arrives and you look back at what you've gotten, you think the bill is short by at least $100 or so.
I have never had a bad experience or meal here, and is always on the list of "things to do" whenever I'm in Fort Collins.
I also noticed that although a somewhat "fancier" establishment, you won't feel overdressed in a suit (or dress), yet you don't feel under-dressed in a nice pair of jeans and shirt. The guy we saw in short jean shorts was pushing that a bit though...

It is quietly elegant - staff are all great- food presented beautifully, creative and realistic! It is on the quieter side, at least when we have been there. The quiet in this case is very nice - good for having real conversation. A smart sustainable approach is visible as well. Not over done - without a doubt the most sophisticated dinning experience in Fort Collins specifically because it is so subtle. I have lived inGreat gem. I have lived in Fort Collins for 20+ years and just went to this place and all I could think was why have I never gone before? The food was outstanding, I had the braised Lamb shank and it melted in my mouth and fell off the bone. My date had a steak and they even accommodated her wanting blue cheese crumbles on top. The service was great too, I like a lot of privacy when I eat so our server picked up on that vibe and gave us our space and still great service. Food was timely and hot, and I was only thrown off by the fact that this really nice restraunt printed their menu's on what seemed to be big paper bag like material that was folded up in your napkin. The food was great and the White Chocolate martinis are highly recommended! The atmosphere of the place was more up-scale then the typical restaurants & with service to match.
