    It was, indeed, a pleasure to celebrate our 48th wedding anniversary at the Canyon Chop House. We were waxing nostalgic with our return to Fort Collins after graduating from CSU in 1969/1971. How great to discover that surging population growth has not diminished the friendliness and personal attention that was always a hallmark in this city. Our server definitely went the extra mile to locate a bottle of sparkling pear juice for our dinner. I had requested something nonalcoholic and she provided it, serving with the same flair as a bottle of expensive champagne. Our meal was delicious and the evening was perfect!

    Canyon Chop House provided a comfortable, yet elegant atmosphere for a nice evening with friends. The steaks and fish were excellent, served with fresh salads, soup and distinctive vegetables. This is a nice setting for dates and business meetings.

    When you walk into a nice restaurant and are seated, you expect quick service, not here. After 5 minutes of waiting, I finally asked for water. When our waitress did finally show up, there was no apology. I guess overall it wasn't a terrible experience, but I won't be going back. I feel like this restaurant has so much potential, but it just fell flat. Even down to the bathrooms with broken towel dispensers and disgusting gross carpet. When you go to a nice place to eat you want an overall pleasant experience, this wasn't it. The food was ok at best, service was ok, overall just....ok. If I am going to pay 20+ dollars for a plate of food, I want excellence, this was far from that.

    For Fort Collins, this is an expensive restaurant and there are better places for steaks and for your money. Service is my main complaint, our food came out an hour after we ordered (there were two of us) and we had to flag pur server down sever times. The food is not bad but for how expensive it is I found myself wishing I had gone to Sunny Lubicks Steakhouse, my usual place.

    My wife and I had a wonderful meal with great service. The food was excellent. We were celebrating our 50th wedding anniversary and were seated in a booth which helped create a very pleasant experience. We have dined at the Canyon Chop House before for special occasions and will definitely be there again.

    I happened to stumble across this restaurant for my boyfriends 21st birthday. I wanted to go somewhere in Fort Collins that neither of us had ever been before so I decided on the Chop House. From their website, the notion of dining inside of a former bank was enough to spark my curiosity and look into it further: I am very glad that I did. Immediately upon arriving at the restaurant, I was surprised to see that it was very well laid out and even though they were very busy, I never felt that it was too crowded or understaffed from the moment we got there to the moment we left. The food was great, service was prompt and polite, and the ambiance was perfect. There is such as thing as too much lighting to not enough and this place had it right

    We just recently tried the Chop House, hearing very good things about it. Just went back for our second time and it was just as wonderful as our first experience!     Our waitress was wonderful! She was quick to bring us refills and made sure we had enough time between courses. The steak was perfectly tender without a bunch of fat and the potatoes were delicious. My husband loved his veal and quail dish which he also raved about. I would definitely go back because everything was wonderful from the service to the meal!

    I was nervous about ordering the duck as I have found it to be mostly skin in other restaurants. However, I was pleasantly surprised at the "beefiness" of the cut of duck. What I received looked like a steak, but had a flavor distinct to well-prepared duck, and also had a crispy, well-seasoned skin. My favorite part of the meal was the tamale on the side. It was amazing, and I would order tamales as a starter if they were offered on the menu. The jicama side salad was citrusy, and paired nicely with the duck. Unlike some fancy restaurants, the portions were generous. I even contemplated boxing up some of my meal, as did my husband who ordered ribs. What I loved about the menu was that I could order items I wouldn't make at home.

    My wife and I had not been to Canyon Chop House since 2005 so we thought we would give them another chance. The service was spotty and the food overpriced. I opted for the T-bone and the NY strip side of it was very tough and required a steak knife to get through it. The tenderloin side was not much better. My wife had the filet and it was no better. For $100+ meal for two people with one beer each and no desert, I expect better.

    I enjoyed the Canyon Chop House – all wait staff were friendly and professional. I had the pan seared trout and baby spinach – which was absolutely delicious, as well as a glass of exquisite table wine. The prices were quite high, but I think this is to be expected for fine dining today.

    The Chop House is 30-50 dollars per entree. You will drop 150 on a dinner for 2. We found the food to be good (though they cooked the filets too long-we wanted medium rare, got medium). We had the filet Oscar style and the other filet with the reduction...the Oscar was very good as was the reduction. Issues: slow service - waited for several minutes to get water, then it just seems they did not pay attention to us. When we needed them to come over, no one came by. When we were in the middle of conversation they interrupted us 3 times. Not the attention I expect at a restaurant at this price level. Some people were there in t-shirts and tennis shoes. It made the restaurant feel like a Red Lobster instead of a high end steak house.

    The food was great....Our server Sherry was well versed in qualities of wines on wine list and was one of the best servers we have had in the Fort Collins Area. The one down side of the evening is that the dining room was too hot. It was 90+ degrees out side but the temperature in the dining room should have been able to handle this temperature elevation. We will be back soon.

    We love coming to canyon chop house when we want to celebrate Its elegant yet comfortable. Must be prepared to spend some money. I choose the fish special. Unfortunately it was overlooked. Should have stuck to my usual steak. Otherwise food was great and service excellent as usual.

    We visited the Canyon St Chop House for our wedding anniversary, and dine here a few times a year. The food was great and we enjoy how they switch up their menu seasonally. Their menu is a lot more interesting and varied than other fine dining choices downtown (such as Jay's or Sonny Lubick's). Our server was knowledgeable about wine pairings for what we ordered. It was a very pleasant evening and the service was timed just right - not too fast, not too slow. If you have a larger group - ask about reserving the vault room. It's the remaining vault from a bank that used to occupy the building.

    We visited the Chop House again celebrating father's day. The beef appetizer was amazing and flavorful. My husband had been served deep-fried spinach in New Zealand and had been trying to recreate it for many years. The chef was willing to try to make it and it was amazing! We appreciated the chef going the extra mile to make a customer happy. Our wait person, Berkeley, provided great service. Overall, an outstanding dining experience.

    We tend to save the Chop House for special occasions but likely will start dining here more often. They've really got all the boxes checked when it comes to a fine dining experience. We particularly think of the Chop House when in the mood for an excellent steak - we have never been disappointed or had to send a steak back to the kitchen. All in all, a very pleasant experience with very friendly and attentive wait staff.
