The service is slightly off - food going to the wrong tables, brioche being brought too early for foie gras, wine service after the course was almost completed. We also ordered the special mushroom dish in lieu of the 1st course - but were still charged an extra $10.

The options are 3 - 5 or 10 course tasting menus. We chose the 5 courses. The selections were outstanding. Between the three of us, we had baramundi, steak and chicken entrees. None of them disappointed. The service very attentive. The ambience was understated and warm that allowed for easy conversation. With the 5 courses plus chef's complimentary items, we could not believe that our dining took 2 1/2 hours. The time seemed to pass effortlessly. It seems they've tightened up their menu a bit, which is fine. They offer more little tastes and lagniappes than they previously did. They are still on top of their game; the food was uniformly excellent to very good, although the asparagus and beef dishes stood out for us. It has to be for a special occasion but the staff there is really taking care of you, perfect timing all the time, for the wine, the food, service and gentle words time to time. It is classy but really cool at the same time. They're adapting their service to you and your feelings. Food is great, taste of it unbelievable and combinations which make difference between restaurant and that kind of restaurant. Great for brunch with other adults. Tasty, well-prepared food (I rarely eat home fries because they are too oily but Bluestem's are to die for!). Timely, effective, non-obstrusive service. And, the single most expensive meal that I have ever had. To me, it is sad that such a wonderful restaurant has such a ridiculous price tag.
We chose the five course meal with wine pairings. The dishes were fabulous although I would have said that the wagu hanger steak was under-seasoned -- need salt. The wine pairings were fabulous and well chosen.
Service was impeccable. The chefs came out and met with a few tables but not ours. I assume that those were regulars. From the outside, you would never guess that such a restaurant was housed within.
