Chef-Owner Aaron Philipson is known for his bold flavors, pristine sauces, and thoughtful combinations of delectable ingredients. Comprised of three intimate dining rooms, the restaurant is perfect for casual get togethers, business lunches and dinners and other private events.   • "We had a concert in Princeton and needed a nearby restaurant for dinner. This was a bit farther out of town (Hopewell) than I would have liked, but well worth the GPS exercise! The building is nothing to look at, the dining room comfortable but plain. However, the meal and service were terrific! We were late because of a wrong turn or two, but our server could not have been more gracious in getting us out on time. The soup and salad apps were wonderful---what a nice blending of flavors. For dinner 2 of us had the cod dish--the fish was fine not great, but the accompaniments were excellent. My friend raved about the scallops and the veal steak/sweetbread dish was the one I wish I had chosen--fabulous aromas coming from that plate!"

  • "We took friends who were celebrating their 50th anniversary to the Blue Bottle for the first time. I had been there a few times before & had always had a nice experience. This time it was not pleasant. Our reservation was for 6:45. After us, a table of six came in next to Our table. Their noise level was earsplitting. We weren't served our entrées until after 8 o'clock. The later table next to us was served their appetizers & their main courses before we were. The explanation? We hadn't ordered appetizers & that threw off the timing of the kitchen! So apparently if you don't order appetizers, you wait longer than those people who do. Nonsense!! We were embarrassed for our friends & will not be back. The food when it did come was excellent."

We each had a different starter, the blue bottle salad, which was a delight, and the potato soup, which had a wonderful blend of flavors. Main dish was the scallops, which were cooked perfectly, and blended wonderfully with the beef and veggies. My partner had the steak, which was cooked exactly to order, and did not disappoint, in fact, he said it was one of the best he has ever had (did I mention he has eaten ALOT of steak?!) The profiteroles were heavenly, and they even allowed me to sub a different ice cream in one, which I must say was a great choice. I will be dreaming of them for a while!! We will not be waiting a few years to return!"

  • "The grilled octopus starter was great, but when the golden beet and goat cheese appetizer arrived it seemed we might have inadvertently started with dessert! A layered presentation of millimeter thin, square cut layers of golden beet and goat cheese, cornered by blots of purple beet sauce was nothing short of amazing. The entree of scallops, perfectly cooked, with oxtail sauce was a rich and butter triumph. We also, against our better judgement, ordered the chicken. If only all my misjudgments tasted this good. The chicken was cooked to perfection and we were talking about it two days later. This food is on par with anything in NYC. With the added benefit of being a BYO establishment, this is certainly the best bargain in the New Jersey. "

  • "Blue Bottle is in a converted house in Hopewell, NJ. It's a nice setting, although sometimes it feels almost too intimate, as it literally feels like you're eating in someone's living room. The prices are very high for food that's not as distinguished as it should be. The wait staff is friendly and attentive; it's a bring your own spirits place. It's nice to eat off the beaten path and if the prices were $6-10 less expensive per meal, it'd be worth it."

  • "My husband and I started dining at the Blue Bottle Cafe since shortly after it opened and we have never had a meal that was short of excellent! While their menu changes seasonally, it's quality remains consistent. The decor is in line with the restaurant's small town/rural setting and service is knowledgeable and professional, but never stuffy. Since the Blue Bottle Cafe is BYOB, we usually drink much better wines than what we would order in a regular restaurant. The Blue Bottle Cafe is a true gem in the area!"

  • "Service was slow and disappointing. We brought a bottle of wine and asked our server to open it for us. She did, and then set the bottle on the table- for us to then serve ourselves the wine. She was slow to return to our table throughout our entire stay. The menu was disappointing. I am not a picky eater, but with celery root, octopus, duck and tamale as the only appetizer choices, I passed. The entrees are mostly wild or game-like now (wild boar, deconstructed ribeye, rabbit and duck) so I settled on the most simple choice, chicken. I hope the restaurant returns to its roots in both service and menu choices. The experience was disappointing."

  • "For years this restaurant was too crowded and too noisy. And the parking was impossible. Well, things have settled down a bit and it is no longer the hottest restaurant in the area. We made a same-day reservation, actually got a spot in their lot, and relaxed into a good dinner. The octopus appetizer was delicious and the rabbit and beef entrees were tasty. Service was sort of spotty, appetizer took a bit of a while to get to us, there was not a consistent server for us. But all in all, it was a fine dinner, much quieter than it was a few years back, and when the spring menu is introduced, we will return."
