BLT Steak is an interpretation of the American Steakhouse with traditional fare and a bistro ambiance.
A few words about our steaks...All of our beef is USDA Prime or 100% naturally raised certified Black Angus. The finest available. We naturally age our beef for maximum tenderness and flavor before broiling at 1700 degrees and finish with herb butter.
BLT Steak also reinstated the award-winning weekend staple, Sterling Brunch. Regarded as the premier brunch in Las Vegas, the Bally’s institution of forty years, Sterling Brunch has made its triumphant return with the same excellence in service and fare but in a more modern and stylish presentation synonymous with BLT Steak. Guests will once again be able to indulge in the finest fare of caviar, lobster tails, fresh-shucked oysters, Alaskan king crab legs, and never-ending glasses of Perrier Jouët Champagne, mimosas and bloody marys.

    Having visited BLT in many eastern locations we wanted a great steak experience. The service was top notch and greatly appreciated. The steaks had excessive CHAR which was concerning as the staff was quite slow. We ordered the bacon, under cooked and loaded with garlic to an excessive amount. Overall could have been better.

    This is a terrific steakhouse. The vegetable salad was fresh and tasty and the short ribs were fall off the bone delicious. Service is professional, knowledgeable and friendly. I've dined here twice and will return. Loved it.

    Our food server was awesome but the food took over an hour. We filled up on the fantastic cheese popovers for which is the reason we returned. We asked for our food to go since we were full, tired and ready to go... Probably will return and give them a second chance. There were plenty of tables available and we had to wait 20 minutes for our table. Seemed they were understaffed and way behind on everything.

    In a town where steak houses are a dime a dozen, it's hard to stand out. But BLT definitely does! Our entire experience was an extravaganza for the taste buds. From the first bites of the duck liver pâté (yes, it really was amazing), the incredible pop-overs, to the oh so tastey brussel sprouts with bacon and honey (why doesn't everyone cook vegetables like this) and the tender steaks cooked absolutely perfectly, to the brownies at the end....all completely wonderful. This easily surpasses Gordon Ramsey Steak, which seem impossible until now. The service was also impeccable with Hugo and Jay taking care of our every need (even before we knew we needed anything). Without a doubt, we will go back to BLT!

    The lady in front desk is very nice. But, awful waiter service. No bread, no refill drinks, steak not cooked well. We should got 20% off because we were staying Ballys Hotel. The waiter always refused our requests or speaking excuses for all problems. The waiter did not say anything about discount or Total rewards prices. And, he charged us 18% for tip.

    If you want someone else to set the pace of your dining experience, then by all means dine here. Hugely disappointed - told the chef sets pace & their staff is trained to follow this practice - not the diners pace. Staff started setting courses when we not yet ready & clearing plates we were not finished eating. Felt rushed to flip the table. Highly offensive, as we dine out often & willing to pay up for great food & great service - not so here. Moderately priced - still not worth the money. ESquared Hospitality should consider dropping Hospitality from its name as is nothing close to hospitable. Shame - too many great options in Vegas to accept this type of service. Steaks were good - but many other options in town - pick another.

    I have dined at the BLT location in Charlotte, NC and found the ambience and food to be very good. I cannot say the same for the Las Vegas location. The decor is a little sterile and the food is slightly better than average. The one redeeming factor was the personality and humor of the waiter. He made the evening tolerable.

    We were prepared to pay top dollar to dine here and we did. We did not however, think it was the fine dining experience that we paid for. Foie Gras tasted off. Lobster bisque lacked depth of flavor. Filet mignon was barely warm, even on the outside where the charring was done. It was also dry inside and slightly tough (ordered medium). Sides of creamed spinach and truffled mashed potatoes were good. Martinis were good. We had wanted to have wine with our dinner but the wine prices are OUTRAGEOUS! They were completely over-the-top in regard to wine, catering only to the uber expensive. Atmosphere was extremely loud leaving no possibility of conversation. Serving stations located on dining room floor! We will not return.

    Food and service was great! They have us appetizer samples and the bread puffs were amazing. It was almost too much food! Everything is alacart..one in our group got sword fish, would not recommend this, steaks great! Glass of wine , very pricey!

    Our experience was very nice. Excellent food, excellent service, HOWEVER, I will always miss the Bally's Steakhouse, which had all those features, but was old school and softer around the edges. That being said there was no fault to be found with this restaurant.

    I came to this restaurant hoping for a great steak dinner. I paid for it dearly but was left with a mediocre meal. First, their popovers, which they say they are "famous" for, were a little burnt but otherwise good. Nothing special though. The steak was cooked at medium instead of medium rare and I don't care for the way they still char the outside of the steak. What's interesting is that they put a "medium rare" flag into the steak, and they cut it for you in advance... so it's quite obvious they took the order correctly and cooked it wrong. The chef's amuse bouche selections were nice, a better part of the meal. I would not recommend or return. I had far better steaks at Gordon Ramsay's in the Paris hotel next door.

    Pretty pricey but the food had amazing flavor!! The Filet, spinach salad & asparagus!! Popover bread, grand chocolate drink. Didn't have room for dessert but would have tried peanut butter chocolate mousse. Our sever Diane, was very nice, explained everything & didn't make us feel stupid for asking questions.

    Having had such excellent experiences at the Sterling Brunch twice since it reopened at BLT, we looked forward to our first dinner here. The quality of the steak and lamb was very disappointing. The lamb was very fatty and the popovers were burnt. The wine list was extensive, very over priced and hard to read in the low light and reflective plastic. The desserts were unappealing and mediocre tasting. We much prefer Old Homestead at Caesars Palace. We would return for an early brunch here, but not for dinner.

    Couldn't wait for the Sterling Brunch to reopen. The food was as remembered-great and the champagne was still flowing. The atmosphere is now upbeat and pleasing. However on the day I attended brunch they seemed to be lacking staff to clear plates and fill glasses. However, the quality of the food made up for the service.

    I have been to BLT in new york & Las Vegas & both are consistently excellent. Service & food are outstanding. The steak melts in your mouth & love the sides. It says a lot for a restaurant if both their establishments in different states are consistent.

    Tried this place in May and thought the food was BAD service SLOW but the Watermellon Basil Martini excellent. Gave it 5 months to get their staff and kitchen in order and tried again. Now in October the Baby Spinach salad is good. 10 oz Filet Mignon over cooked. The Herb-Parmesan Crusted Veal Chop had so much fat it didn't resemble veal.Creamed Spinach is like bitter spinach floating in milk.Potato Gratin is soupy.Tuna Tartare apt floating in soy sauce so salty you couldn't eat it.Braised Short Ribs very good and Watermellon Basil Martini still excellent. Avoid this place. Prices are high food and service is poor. STRIP HOUSE in Planet Hollywood,Gordon Ramseys STEAK in Paris have the BEST steaks on this side of the street prices are lower.

    We booked the earliest time (5:30 p.m.) at BLT because we had tickets for the 7:00 p.m. Bally's show "Jubilee." We had a wonderful meal. The menu and wine offerings were impressive. The waitstaff was attentive but not obtrusive. Our filet mignons were cooked to perfection, and served by the chef himself. Our only disappointment was, that although came early and were directed to wait at the bar, we were not seated until about 5:50 p.m. Our food served and cleared by 6:30 p.m., but the bill didn't arrive for another fifteen minutes, leaving us rushed. The meal was put on our room bill instead of charged. As the woman who checked us into Bally's had failed to ask for a credit card, this eventually fomented an embarrassing situation for us.

    We were a party of 5 mixed ages. We decided to have great last meal in Vegas and we choose the BLT Steak restaurant as it was close to our hotel and the seniors that I brought with me could walk there easily. Our server knew we were on a time restraint and they were spot on to get us out on time. The food was delicious and beautifully presented. Our serve David and his team were nothing less than great. We had several older people with us and they don't eat that much and the restaurant was very accommodating with letting us split servings They even did that for us. Nothing less than one amazing evening and dinner. WoW !!! is they best way I could describe our experience. This is a must place to eat while In Vegas. Amazing !!!

    The place used to be ballys steakhouse and I liked it much better then. Now it is another chain restaurant. The sides we ordered were so so. Potato gratin was under cooked and crunchy. Replaced that with potato puree which was soupy. Stuffed mushrooms were dry. The steak and short ribs were good. Just not the same as the fabulous place it used to be.

    My Manager recommend this place and decided to try it with my husband. We made a reservation for 7:30 and we got there around 7:45 and was seated right away. Server came over and asked if we had any questions about the menu. My husband got the NY bone-in steak and I got the Wagyu Flank Steak. BLT Steak was known for their popovers so we gave it a try. The popovers are good only when they are fresh out the oven, so once they put that on your table goggle it up. Me and my husband thought the NY Steak was a bit too salty but I think that's how most Steak taste like at other high-end restaurants. My Wagyu was good. I would definitely recommend this place to family and friends.

    I was expecting MUCH better.....The Caesar salad dressing was just plain bad.....The steak, for my liking, was way over seasoned (couldn't taste the meat and the fries were doughy..... Certainly not what one would hope for at $130.00 for ONE person.

    he best to sum it up is a restaurant that is trying hard to get it right and be upscale but misses the mark on several different levels. We were greeted and sat fairly quickly by the hostess. We were approached fairly quickly by the wait asst. Presentation was fairly decent and the quality of the steak was excellent. Here is where they missed the mark: 1. I had to continually ask for water refills. 2. All of the food was all luke warm and the water was luke warm (no ice). The food comes on cast iron skillets that we could pick up without hot pads. The pat of butter on my steak never melted (med. stk) 3. Table wasn't cleaned. Steaks came w/ plastic little cows stuck in them that said "medium" to tell server the temp of steak.

    I sat at the bar and ordered a Wagyu Strip steak with a side of asparagus. While waiting for my order, the bartender brought me several plates of appetizers, comments of the chef. The duck liver pâté was one of the best things I've ever eaten. The steak was perfectly cooked, and when I was finished I was told I had one more surprise on the way. They brought out a small plate with two bite sized brownies, and two cake pops on sticks. The perfect amount for a dessert (vs. the larger menu items).

    We had such high hopes from researching and reading reviews. The food was incredibly disappointing. The bone in NY strip steaks were so tough, it felt like a low end steak house. Even the diners next to us overheard our conversation and chimed in on their disappointment with their filet. No one came over to even ask about the steaks. Sigh. Too expensive for such low quality. Will never return.

    Was Surprised by the new steak house at Bally's Las Vegas. Excellent choice of beef. We had 28 Day aged Porterhouse for two. Outstanding. Bread was an enormous puff bread. We got the recipe and plan on trying to make some. Appetizers, main courses and desserts were plentiful and tasty. lPan to return next Vegas trip. Equal to the food was the efficient and attentive service.

    We had been to prior steakhouse at Ballys. Decor was outdated but good was excellent. This new BLT is a nice update as far as decor and room design. The good was as good as in the past. Would recommend the filet for main course, stuffed mushroom side and the tuna tartare starter. Portions are on the large side. The complimentary Popover and pate are a treat.
