A word from BLT Steak - Bally's
BLT Steak is an interpretation of the American Steakhouse with traditional fare and a bistro ambiance.
A few words about our steaks...All of our beef is USDA Prime or 100% naturally raised certified Black Angus. The finest available. We naturally age our beef for maximum tenderness and flavor before broiling at 1700 degrees and finish with herb butter.
BLT Steak also reinstated the award-winning weekend staple, Sterling Brunch. Regarded as the premier brunch in Las Vegas, the Bally’s institution of forty years, Sterling Brunch has made its triumphant return with the same excellence in service and fare but in a more modern and stylish presentation synonymous with BLT Steak. Guests will once again be able to indulge in the finest fare of caviar, lobster tails, fresh-shucked oysters, Alaskan king crab legs, and never-ending glasses of Perrier Jouët Champagne, mimosas and bloody marys.

  • "First night the Porterhouse for 2 priced at $98 was not even a nice size for one. The manager should go to the Steak House in Circus Circus and order the porterhouse for one and he would than know what a good porterhouse should look like for one. Always try a place twice because they may have had a bad day. Second night ordered the special which was Scallops. For a dinner entrée they served 3 get that number 3 scallops for dinner. Any decent restaurant serves min. of 5 scallops on a plate for dinner. Along with the entrée the special was zucchini. It was served fried with a side of melted cheese for dipping. As we all know that is nothing more than a bar app. I do not see this place lasting more than a year."

  • "Ate here for dinner during a conference. The gruyere popovers they give you as the bread are fabulous. I had the filet mignon and it was perfectly cooked. We also had gratin potatoes and the Brussels sprouts. All was terrific. We went back later for dessert. They were on the small side but very good and a more appropriate portion considering how much we'd eaten earlier."

  • "After we were seated, we waited 10 minutes noticed us. When we ordered our steaks my wife ordered it medium. Our server told her she wanted it medium-well. I ordered mine medium-rare. Our server said it would take 20 to 30 minuets for our steaks to come. When they did come, her steak was very well done and mine was medium-well. we sent them back and complained to the manager. We were told it would take another 10 to 15 minutes before our new steaks would be ready. We told them to forget it and left without eating."

  • "Save yourself some money and enjoy a great steak. Have eaten at many steak houses in Vegas. Ate at BLT twice this trip. Food was well prepaired and tasted excellent. Service was a little lacking after the main course was served but other than that, it was great."

  • "Superb brunch that will not disappoint "Sterling" fans like myself. The champagne remains Perrier Jouet and not a keenly priced Californian sparkling which is so often offered (illegally) as champagne. The service was excellent and our server was not shy of popping corks and keeping the PJ topped up! The food is beautiful but not as extensive a choice as previously........the only thing I really missed was a choice of vegetables to have with the roast meats. The ambience is a bit bland, for a newly opened (steak) restaurant, but without being too harsh, it is Ballys and not Bellagio or CP or Wynn."

  • "I ate at the newly RE-opened Sterling Brunch. Most of the food was well prepared and tasty, EXCEPT the lobster tails--they were rubbery and tasteless. The old Sterling Brunch had a bigger desert selection; one item missing from THIS brunch was ice cream. Caviar was included only if your waitperson told you about it (mine did NOT). I knew the BLT restaurant (where the SB is located) had re-opened; it took much more searching to find out the SB had also re-opened. At the minimum, they should also "advertise" the SB. [When I made my reservation for SAT. 6/7, at OPEN TABLE, I wasn't sure that I was reserving the SB.] [PS: Fortunately, they still include (unlimited) Perrier Jouet Champagne.]"

  • "The food was amazing. The crab cakes, we had them twice! The beet salad was outstanding, the steak amazing, even the chicken was great. We ate there three times in the week we were in Las Vegas. Once you taste their food, why settle for anything less. And the desserts were the best, the key lime and the chocolate cake were worth going back even more times. We even got to watch the NBA playoffs over the bar on wonderful TV's. The service was outstanding, there wasn't one part of the experience that wasn't perfect."

  • "There are several nice touches...a charcuterie plate, duck liver pate, hot popovers with a special butter and sea salt, and small sweets at the end of the meal. My filet was perfect but that's all that was on the plate (for $51). The appetizers, sides, salads were expensive (as in any good steak restaurant on the strip) but the topper was the wine by the glass (some, non extraordinary, were $20 a glass, most were about $15). We were $300 a couple, so be prepared."

  • "It was a little after 2:15pm and I decided to see what steak houses were actually open that early. To be honest, I really had my heart set on steak. We happened to catch the tail-end of their brunch buffet, so obviously, no steak. A couple of items were a little dry, but again, that was because we were very late for brunch. If we arrived when people normally have brunch, the quality would have been more than stupendous. I didn't get to try out everything, but they had one of my favorites...lobster tails! They were actually pretty decent in size for a buffet. The service was excellent and the people were really friendly. Next time I go though, I am going to build up my appetite and get there much earlier for brunch :)"

  • "The restaurant is a lot worse than it used to be including the restaurant setting, food, and service. It takes too long for waiters to come to our table to remove used dishes. We've seen other people had to take theirs to the waiters/waitresses and cleaned their own table by themselves. With the price BLT Steak charges customers, it shouldn't be that way. We expect the same kind of service that it used to be or better before renovation. This is our last visit to BLT Steak for sure."

  • "We were seated immediately. Our waiter Juan Carlos and servers attended to our every need. The complimentary popovers and Vermont butter was delicious. The 10oz filet mignon was seasoned and cooked a perfect medium. The 2lb lobster was also cooked perfect. I highly recommend."

  • "A thoroughly modern steakhouse, BLT has replaced the old Bally's Steakhouse at Bally's casino. Although we greatly missed the wedge salad we did enjoy our dinners of filet and roast chicken. The hash-brown style potatoes had also been taken off the menu, much to our dismay. Apparently the time has come to change over from the old school décor to the sleeker new look of the new millennium. The service couldn't have been better. It seemed all the staff was on duty this second night after the grand re-opening. We never lacked for attention and everyone was so kind and accommodating."
