Modifications are taken in stride while always adhering to the highest standards of French cuisine, without any pretention at all. Whether you are the Speaker of the House or a tourist in jeans, the Bis' staff will treat you with the same respect and friendship as they do everyone else.
My father and brother rarely stray from the steak frites or rich and authentic French Onion soup. The Steak tartare needs no introduction - ask for extra dijon and some cornichons (unbelievable). When we walked in (it's in the Hotel George) my heart sank. It looks like a hotel restaurant -- dull, a bit dated and over-lit. But oh, the food. I would say that the chef deviates from the classical so deftly that you almost don't notice -- you just know you're tasting a really exceptionally rendered version of the original. I had the quenelles, which I love but have been disappointed by on occasion. These were heavenly, with a light and delicate texture and a deep, rich sauce. The salade Lyonnaise was assertive and delicious. The perfectly crisp sweetbreads were served with a kind of tomato compote that made me levitate. The restaurant is always lively and this year, we were escorted to an upstairs table that made us feel we were in a private dining room. The food is always remarkable -- there were rave reviews about the steak frites, the beet salad, and the scallops. I found that the seabass curry was not a curry at all but two delicate pieces of sea bass with a drizzle of curry sauce.
The desserts were delicious and memorable.
