Timing of service is always impeccable. It was a special evening for a reunion with an old friend, and afterward, she said she felt like a VIP. I had to let her know that she would feel the same on the next visit. It's that special. Great service does not a restaurant make...the food is equally stunning. To sum it up in two words...simple elegance. They were always there just when needed, shared stories in an unobtrusive way, and made our evening very comfortable. My wife had halibut with potatoes and asparagus along with a locally grown salad; I had a local free range beef filet with mashed potatoes and a beet goat cheese salad. Wonderful flavors and preparation. Maybe best steak ever for me, rich, beefy flavor, unusual for a fillet. Desserts were superb, strawberries and cream for my wife were ripe and sweet and perfectly complimented by the homemade whipped cream. My chocolate lava cake was beyond delicious...rich cake and even richer chocolate filling with fresh raspberries...

The menu is short, as expected in this intimate restaurant. The spot prawn bisque (spot prawns are in season as I write this), was superb.
The wine list has a very good selection of the best of local wines, many of which are excellent value. For those who want a wider geographic (and price) selection, there are global wines from an '83 Petrus on down.

I've been there a few times now and the service is consistently excellent and the food mouth watering. I believe we found THE best in Bishop's. Everything was exquisite. The food was beautifully presented, and expertly prepared. The wait staff were perfectly hospitable and engaging, without being overbearing. The ambience was warm and pleasantly peaceful but conversational. We had an amazing dining experience, and would most certainly recommend this beautiful bistro to anyone visiting Vancouver. Main was lamb 3 ways....a chop grilled to perfection, a portion of tender silky shoulder to melt in the mouth and a delicious lamb croquette,crispy on the outside and a creamy taste sensation within.
guest 2- beef tenderloin as the main, done to a turn and gloriously tender.
guest 3-duck pate...delicious (got to taste a piece) ...also had the lamb 3 ways.
guest 4-salad with the quail's egg...egg was perfectly poached and became the dressing for an assortment of veggies. Main seafood risotto....came with mussels and clams steamed to perfection,,,risotto perfectly cooked.

My partner and I was at Bishop's for dinner two nights ago and we had a wonderful experience. The food was very tasty & beautifully presented. We do have one comment on the Dungeness Crab Risotto - we can barely find any dungeness crab in the risotto. I can certainly tasted the crab flavor in the Risotto but if you named a dish with "Dungeness Crab Risotto" - people will expect to see a few bigger pieces of crab meat with it? ;-)
The service was very very attentive, professional, efficient and friendly. It happened that I was sneezing at the table - within a minute, our Maitre D' "Abel" came to the table with a small package of Kleenex on a plate. We were very impressed! The spot prawns were the star for her - they were fabulous. Her halibut was very good and very nicely finished, perfectly cooked and nicely presented. I had raw kusshi oysters which came with two lemons to squeeze onto them, a grapefruit ice reduction and hot butter - they were extremely good - I love oysters and these were great. The standout for me was the risotto which had clams and mussels in shells, spot prawns, crab - this was in a light sauce that was incredibly tasteful - some light, tasty reduction of some sort. It was a winner and each piece spot prawns, mussels, clams were cooked perfectly. Our party was very well taken care of by the polite and attentive staff and Mr Bishop himself. The food was excellent, the wine divine. Carefully chosen artworks hung on the walls. They could not have improved a thing.
