Very very balanced with subtle and unique flavours in the right quantity to make an incredible dining experience. The dishes are inventive, delicious exotic taste and visually beautiful. The noise options in the mandatory only go as high as energetic, an adjective that has a positive ring. For me the noise level was a bit much.

It had a hint of spice and was the perfect starter. We also had the oyster sake shots with lemongrass, shallots and marinated salmon roe. The taste of the roe at the end of the shot was spectacular. The tuna and watermelon ceviche was amazing, as was the spicy peruvian style ceviche. My favourite part was definitely the lobster tacos, with were garnished with charred onion tomato salsa, chipotle, and avodcado in a taro taco shell. A chilled bottle of sake complimented the meal perfectly. The menu was clearly designed by Susur. The overall experience was very impressive. The meal started with some premium Sake. The waiter explained the ins and outs of Sake and help us make a moderately priced selection, which was absolutely delicious. The highlight of the meal was the peruvian ceviche. The flavours were fresh and complex with a sharp bite and wonderful spiciness. The seafood and fish were equally fresh and prepared perfectly. A truly memorable dish. The quality of food and attention to detail was top notch as advertised. We were even pleasantly surprised with a short conversation with Susur Lee who was gracious enough to send over a little birthday treat.
