His exhuberant cuisine is based on simplicity. taking top quality seafood, and with few ingredients and a minimum of technique, turning it into stellar, rustic presentations as delicious as those you might experience on the coastline of Italy. Fresh fish and shellfish – including live langostinos flown in daily from Mediterranean waters, are the star attraction here, sharing the bill of fare with housemade pastas. The chef’s signature Dona di Mare (Gifts of the Sea) tasting menu is a superb way to savor the ultimate coastal dining experience. The two-story space, replete with sweeping staircase and floor-to-ceiling windows overlooking a shimmering laguna, is big on drama. Reservations are accepted on-line for indoor dining only.   • "We did the top chef tasting menu and I must say I was hesitant at first being at 180pp but it was delicious and filling. The portions one may consider small and they are served family style but with the number of courses you really couldn't eat much more. We choose to sit inside vs the outdoor patio since you are limited to only two dining times which did not meet our schedule. Would recommend the whole fish fileted table side as well as the ravioli. The frozen custard dessert with cinnamon soaked figs was out of this world. The pasta dishes weren't anything to brag home about however the concept of using fried eggplant sticks on top of pasta is amazing and I can't believe I have never had that before. Definitely a special occasion place. "

  • "I love everything about my experience in Bartolotta restaurant. The food is fantastic and the staff is very friendly and helpful. The staff would take their time explaining each dish and provide their feedback regarding how to eat and enjoy the dish. Besides, we sat at the window view at the second floor which provided a great view to the beautiful yard. We ordered Top Chef menu and food is superb! We really loved the experience there and will definitely go back again. "

  • "Arrived and was given a table upstairs near the bar. Felt like I had to beg for a nicer table. We were delegated to a table yes, though by the window was next to a serving area. The main dining room is downstairs, we weren't seated there. When we asked about the poolside tables the hostess assumed we couldn't afford it. Whether or not this is true never made assumptions. Not the way we thought we'd spend our 40th wedding anniversary."

  • "I was worried by other Open Table reviews, but I had nothing to fear This is traditional italian coastal cuisine, if you're not a seafood lover this is not the place for you. Everything is line caught, and less than 48hrs out of the water. The way to do this place right is one of the 3 tasting menus, they're not cheap $150-$200 per person, but nothing at the Wynn is. The appetizer course included fresh scallops and the most tender octopus I've ever had. The pasta course had a seafood risotto I could eat every day. But the star of the show was the whole Orata carved tableside. There were at least a dozen desserts. Seated outside the ambience was intimate and very non-Vegas. One of the best meals I've ever had in las Vegas."

  • "This is what Vegas strip dining should be. Stunning seafood, fresh and expertly prepared, and Chef Paul Bartolotta was in the house overseeing the kitchen . . . impressive these days in Vegas where so many chefs just slap their name on a place and run away. The quality of the seafood was magnificent - a seafood pasta cooked in a "bag" was sensational, particularly the langoustines, as was the whole snapper, beautifully filleted table-side. For dessert, do not miss the house-made gelatos - fantastic, and as good or better than most you'll find in Italy (6 for $14). In short, best meal I've ever had on the strip, and I've dined at some of the other big named places, and the service was every bit as great as the food."

  • "Although they are clearly a seafood restaurant, the gnocchi was excellent. And the gelato, sorbetto, and ices were outstanding. The fish is a little odd. If you want a fish, they cook the whole fish, which is likely to be far too much for one person, so you need to order it with someone else who also wants it. The charge is by the weight of the particular fish you ordered. It's all flown in from the Mediterranean every few days, so it has a huge carbon footprint, but, hey, that's Vegas, right? Extraordinary service."

  • "Upon arriving I was seated quickly however the tables were so close together and so long I felt like I was on a date with the gentleman to the left and right of me as opposed to my wife. Then the waiter greeted us and honestly he was amazing, he did what he could to prepare us for the experience and prepare us for our meal, then the seafood gentleman came out, he was very nice but almost impossible to understand and very quiet as my wife had no clue of a word he said. we ordered our food one course at a time each one more depressing then the previous, the food was nearly in edible, this may be our taste buds and even though it was one of the cheaper meals we had that weekend I really felt ripped off of how bad the food was in my opinion."

  • "The array of fish and crustaceans flown in daily from the Mediterranean is impressive, but only a couple things really stood out as memorably tasty. The langoustines were exquisite, with such sweet white flesh, and scorfano (scorpion fish) had excellent flavor too. Other seafood in the grand tasting menu was ok, but not spectacular. The pasta itself is not very well made at all – at times too hard or soft or too dry. Feel free to skip pasta courses. There's a nice selection of nine different granite/sorbetti/gelati in the "dessert symphony" if you elect to do the tasting menu. I was expecting a little more though and wouldn't come back next time I'm in Las Vegas. They have the best Mediterranean seafood in town, but that's not saying much."

This restaurant is hands down one of the best seafood restaurants I've been to in my life. Clams were amazing, as was the Turbot special. Dessert did not disappoint either! Service was prompt and efficient."

  • "The food, atmosphere and service were incredibly memorable. I dare say this has been my best dining experience of 2014. We ordered a fresh whole snapper that was encrusted in 2 lbs of salt and seasonings and de-boned table side. It was spectacularly fresh and flavorful and the perfect portion split among the four of us. our server, Antonio and his team were very attentive and fun but sensitive to not interrupt our lively business dinner. The Wynn hotel is beautiful and the decor in Bartolotta is bright and lively. I highly recommend the entire experience."

  • "While we can't argue that the fish is good and preparations tasty, they certainly aren't top tier. But the haughty hubris of the wait staff and menu itself are way over the top. Go here if you want to spend half the neal listening to the wait staff instead of your dining companions - its like each whole fish is flown over first class from its secret fishing hole off Italy - and you need to hear about the flight! We went to Mesa Grill the next night - better food at a fair price point with great service that you barely notice."

  • "after reading the reviews, I was expecting a lot and not disappointed. The service was attentive and friendly without feeling like there was someone hanging at your side. Our waiter, Luca, explained everything with wit and knowledge and a willingness to work with you to make the meal exactly what you wanted. Simply a wonderful meal and a wonderful experience. The fish was excellent as expected and the sorbet and granita tasting dessert was quite a yummy finish--my fiancée asked me to share it with her but she turned out to need very little help from me. The chocolate truffles and cookies at the end were a big hit with her. I actually meant to find out where they source their chocolate truffles but forgot...next time, I guess."

  • "Very elegant experience but not for those on a budget. Very well heeled crowd! Food was very good but portioned like a French, not Italian, restaurant. The self proclaimed "best langostino on the planet" was slightly undercooked and difficult to remove from the shell. At $35 for an oversized shrimp, it should have been sublime. The highlight was the Rum Baba dessert. The should have been proclaimed "the best on the planet"!"

Too much vinegar used, who puts olive oil in a chocolate mousse dessert???? Ice cream - Baskin Robbins has better tasting choices. Fish from the bottom of the Adriatic-suntract EVERY seasoning they put on it and the fish would have been good."

  • "Having lived in Milwaukee for 52 years and having eaten at all of Paul and Joe's restaurants, we knew this Bartolotta restaurant would not disappoint us. That having been said, this was a tad over the top for me but might be right up someone else's alley. I get the whole fresh from the sea concept but I really don't like looking my dinner in the eyes! I am glad we tried it but will save my pennies to fly back to Milwaukee and have dinner at Lake Park Bistro. BEST RESTAURANT EVER!"

  • "Pretending to be a traditional italian restaurant, Bartolotta is far from there. The menu is just a variation of a typical italian one and let us down. In addtion to that, 2 people of our party asked for one kind of fish and there was just one to be served. When it came, it was a very small one. A really top restaurant would never serve it. It would be better say that there was none. The wine list is good. At least there were good italian labels."

  • "My husband and I were seated at a very nice table outside. Just as we were about to order, 3 men were seated next to us and immediately began smoking. We asked to be moved and the waiter completely understood. We were still given a table outside, but I liked our first table better. I don't understand why the men weren't moved! At our new table we had a fabulous dinner, but during our meal a diner from inside came outside to smoke right by our table!! I couldn't believe it. I so appreciate no smoking inside a restaurant, but this should be carried on to the outside where there are diners as well! Let me say again though, our meal was fabulous and our servers were very attentive."

  • "We dined at Bartolotta on the recommendation of a friend, during a recent trip to Wynn Las Vegas, This restaurant was exceptional and probably one of the best meals we ever ate. The waiter was extremely knowledgeable and we were taken care of by all the staff. Our first table was in a location that was not the best and one of the employees took it upon herself to move us, before we requested it. We had a gorgeous view of the restaurant and lake. My husband is not a big seafood eater, but he was extremely impressed with ambiance and the absolutely amazing dinner, which was outstanding. Paul Bartolotta was done any absolutely fabulous job. Definitely on the to-do next time we stay at Wynn or Encore."

  • "This restaurant is incredibly over rated. Had the tasting menu and my wife ordered off the main menu. Almost everything we had was disappointing if not plain bad. Have eaten all over Italy and high end Italian and seafood restaurants all over the usa. Felt like we wasted our money and could not believe the letdown with the food. Average at best-I am not kidding. Of all the high end Vegas restaurants I have tried this was a joke."

  • "We arrived at 7:15 as we planned to see LeReve at 9:30. We were seated promptly and provided water, then it was as if someone placed a vanishing vail over us. In contrast to the Lakeside in which service persons were at our table every 3-5 minutes, we had to flag a waiter or service person down for assistance more than once. After sitting for over 30 minutes, the waiter finally took our order. The salad my GF ordered was terrible - she sent it back. Finally, over 1 hour and 10 minutes, our dinner's were served. The food quality was ok; for the price not so great. I won't return to this establishment - even for a free meal."
