A word from Barrel & Ashes
Barrel and Ashes is a collaboration between restaurateur Bill Chait, Chef Timothy Hollingsworth, Chef Rory Hermann and mixologist Julian Cox riffing on the classical pairing of bourbon and barbecue. Barrel and Ashes features picnic style seating on the front patio, and communal and traditional seating inside.

Guests can enjoy chef driven traditional American BBQ at Barrel & Ashes seven days a week. The menu focuses on family style service with daily specials from both executive chefs Timothy Hollingsworth and Rory Hermann, and Chef de Cuisine, Michael Kahikina. The restaurant’s bar program is designed and directed by Julian Cox and includes a tap driven program with specialty cocktails, cold brew, teas and an eclectic list of local beers, all on tap. The restaurant occupies the former Spark Woodfire Grill space and has been stripped back to its original 1940’s structure and creatively designed to bring family style southern hospitality to Studio City.

    Great spot for a casual dinner with friends. Very impressed by their smoked meat--especially the pulled pork. Beer list has some legit craft brews. I'll be back soon!

    Fun environment with great bbq and cocktails. Bbq rivals that of the great such as franklins and john mueller's. A must go. If you get the chance, sit at the chefs counter to watch all the excitement go down ant meet some amazing chefs plus really nice guys.

    We are in our 50's, and heard they had great BBQ. When we arrived, we found it a very, very small place, that was packed! The bar was very small, too, and difficult to stand and wait for a table. The food was good, but we won't go back. We really wanted the mussels, but they had run out of the mussels by the time we got to sit, and the couple next to us couldn't order any brisket, as they had run out of that, too. We sat at a table with 6 other strangers, sitting very, very close. They were all nice folks, but my husband is a big guy, and could hardly lift his elbows. We thought the bar cocktails were amazing, though, too. Perhaps we went on a wrong night?

    The ambience reminded me of a really loud pizza place -- high top communal tables, metal stools, loud music and louder guests. We had to lip-read. The food was good, but everything was a la carte. They only serve "artisinal" alcohol so my husband's little pour of scotch was $15. It was not amazing. Wine is only served in half-carafes, so I had a beer. Staff was ample and solicitous but we still had to ask for everything twice. We had chicken, pulled pork, greens, hush puppies, and banana pudding. It was all good; the pulled pork and banana pudding were great. When we received our bill, an 18% service change was automatically added. We're usually good tippers, but I think this was inappropriate. Our meal (see above) came to over $87. Too much for what we got. It made me wonder why we don't cook at home more.

    Simply put, this was the best BBQ I have ever had. Pork short rib and the vegetable sides were all done flawlessly and full of flavor. I will be dining again very soon!

    Was a bit underwhelmed by the food. The ribs, although tender, had a decent sauce that very much needed it. However, 3 ribs does not make a full rack for over $20. Ended up spending more than I wanted for such a little amount of food. And the music was way too loud!

    Very loud. Music was at a high level causing people to raise their voices which made it very hard to have a conversation. Food was good but not out of this world. Service was good but 18% gratuity was already included except our waiter went out of his way to tell us he only keeps 6% and the rest goes to the kitchen. We felt guilty tipping 18% after hearing that but it was odd. Communal dishes ... Brisket was fair, sausages and chicken were good. Ribs also enjoyable.

    Everything we ordered was very tasty and served piping hot except for the brisket which was cold for some reason. Sitting at the chef's ledge was a great experience and service from Gilbert supported by Emma was spot on. Meats were very juicy and really needed no additional bbq sauces. I recommend the hoecakes, greens and shells and cheese.

    I had an excellent experience during dinner. The food and service were both terrific. The drinks were really yummy too and paired well with the food. I cannot wait to go back again and try more of the menu.

    We enjoyed spare ribs tender,juicy and tasty as can be, brisket,hush puppies and miner's potatoes. Folks,it does not get better. Excellent selection of beers. Andrew,our waiter was knowledgeable helpful and charming. Service is fast.

    The food was absolutely incredible! It is so nice to have such great dining experiences in the valley. I will definitely go back. The brisket was the standout for me but I'm excited to try the rest of the menu. If you're looking for authentic southern style food then this is the right place to go.

    This was the best bbq that I have had in the 25 years since I left the South. The brisket was so flavorful and tender, simply amazing. The pulled pork was hands-down the best I have ever had (sorry Grandma). If you like a good moscow mule drink you have to try their horse's neck. Tim the head chef was very kind and personable. He took the time to talk with me and many of the other patrons. All of the staff went out of their way to make sure that every customer was taken care of regardless of who’s table it was. Please consider putting on a cooking class with Tim and hopefully you will soon offer a cookbook... I have to know how you make the hoe cake - it was sooooo good. Reuben from Placerville.

    The place just opened so it might well improve but overall the experience was a (not) hot mess - a surly chef holding up food to his nose and sniffing it before sending it out and sternly admonishing the wait staff in front of the house. The pulled pork was tasty but the brisket was overcooked and dry, and both meats came in the same dish with the same sauce, which was a nice vinegary "mop" sauce, but that's not "Texas-style," which is what the energetic but spaced out waitress promised I would be eating. 1/4 pound pork, 1/4 pound brisket, salad and a beer was just under $50 bucks, including the mandatory 18% service charge - ?

    Barrel and Ashes is like being invited to chef Hollingsworth's family picnic. It's simple food done with the highest respect and care. Can't spot thinking about that hoe cake!
