A word from Aureole - Las Vegas
Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999.

The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower—the largest in the world—houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.

  • "We had the 4-course seasonal tasting menu paired with wine selections. In total got to try 8 dishes and 4 pretty generous "tastings" of wine. Expensive, but overall good value, considering dishes included a lot of fish. lobster, and beef. Excellent service. Heavenly breads. Fun to compare each dish side by side. Wine list is dizzyingly extensive, so this option took all the guess work out of it for us. and we got to try dishes we might not normally order."

  • "We had heard some good things about this restaurant and wanted to try it. It has a three story wine tower that my wife and I couldn't take advantage of as we never acquired a taste for wine..I know, I know...what kind of 'foodie' doesn't drink wine? well, believe it or not, you can have a wonderful dining experience without wine. Every course was delicious, the service was impeccable and the presentation of the food was as good as the taste. We sat by a window and watched the swans cruise by in their pond. As Californians who cannot get foie gras in our home state anymore, it was a real taste treat to have it again. It was easily the best meal we had in our stay in Las Vegas. If you try it, I'm sure you won't be disappointed."

  • "I so wanted to enjoy Aureole. To be honest, I've never experienced service like this at ANY fine dining restaurant. Our waiter continuously scolded other wait staff through our entire meal. Unfortunately our table was to the far right of the dining room, next to the area where the wait staff discuss orders/wine. I wish that was all that we heard, but we heard banter through our entire meal. They seemed very unhappy. Our server placed one dessert menu down, didn't say anything, and then started chastising another server that walked by while we waited. Wine was placed on our table and we poured it ourselves. Not a big deal, but they never even checked our glass to see if it was low. Food - mostly delicious. Service - terribly unprofessional."

  • "We have had two previous enjoyable dinner experiences, so we decided to dine there again. For the entree, my husband and I choose to split a bone in filet. The waiter asked how we wanted that done and our request was that it should be grilled medium rare. When our entrees were presented, my husband and I both discovered that our steak was medium well, not medium rare. I am sure had we complained about this, our waiter would have had the kitchen staff prepare another bone in filet medium rare as we had ordered it. The difficulty was, had we done this it would have inconvenienced our four other diner companions. Be aware when ordering steak at Aureole to be sure the waiter communicates the correct degree of doneness to the kitchen."

  • "We went to Aureole for a business dinner on a Tuesday night, the restaurant wasn't full or too busy so we were even more upset by the service. Our reservation was for 8:30 p.m. and we weren't seated until nearly 9:00. We had water upon sitting but didn't have the opportunity to order until almost 9:30 when our bread finally arrived. Considering we only ordered one bottle of wine and no appetizers, we were starving by the time we finally ate around 10:00 p.m. Even after getting our food, it seemed everything took so long in between. We also requested a round table which there were several open and were given a long table do it was difficult to talk with everyone. So sad the service was so poor because the good was quite good."

  • "I had been looking forward to our reservation at Aureole for several weeks. Upon arrival the hostess was very nice and immediately got us seated at our table, but this is where the good experience ended. Our waiters were atrocious. Some of the worst service I have ever received at a restaurant of this stature. Our servers seemed to rotate endlessly throughout the night; however, our main water was rude and intrusive at times. I can honestly say I haven't received service this bad at chain restaurants. The food was alright, the first courses weren't memorable; however, the lamb entree was quite remarkable. Desert again felt flat and at this point we felt very rushed by the servers. I would not return again or recommend this restaurant."

  • "If you love truffles , only like them or aren't sure yet, you have to try the Black Truffle Risotto at Aureole. It is simply one of the best dishes I have ever had. The presentation is also first class as well. The head chef personally comes to your table to shave the truffles onto your dish while the staff presents the box of truffles to you . They completely cover the dish with a generous portion of truffles . This dish with a glass of champagne is pure perfection . The rest of the meal was wonderful but who can remember anything else. If I could have afforded it I would have had the same dish for dessert too!"

We were only checked on three times, first to get our orders, to deliver food, and lastly to get our ticket. We were beyond upset with that The food was overall ok nothing exceptional. They do give you a nice dessert sampling with the check. I would not recommend this restaurant at all. Much better places to go with better wait staff. Do yourself a favor and avoid this place."

  • "We were disappointed with the food. We went for the New Year's eve set menu. The first course was the only course that was thoroughly enjoyed by all the diners at the table. The rest of the courses went downhill from there. The beef that we got, which was suppose to be tenderloin, was not tender at all. The flavor combination of the fish with sweet potato puree was very peculiar. I did not enjoy it, I found the puree to be too sweet and did not fit well with the fish. The dessert was mediocre, very ordinary, something that you would find at any chain restaurant. I would give this place a try again, just to try their regular menu. Unfortunately the set menu left a lot to be desired."

  • "The table we had is not the best as we sat at the bottom of the wine tower and my wife is back to it. Other than that, our oeverall experience are great. we order too much as the four course tasting turn out to be a lot of food to us, because each course cooked in two ways so you actually get 8 portions from 4 courses. We ordered a seafood platter to start and it turned out too much food."

  • "Their infamous glass-walled wine cellar towering 6 floors of wine racks carrying up to 10,000 bottles of wine is amazing. "Angels" fly to pick your wine. The food and service were both excellent. It is expensive, but not exorbitantly expensive. Everything served had high quality ingredients, cooked to perfection and they have a very good selection of wine by the glass, if you wish. To our surprise, the price of wine by the glass was equivalent or better than what's charged by other restaurants / hotels of lesser quality in Las Vegas. They also offer wines paired to your food, with their selection of prix-fix menus or you can spend a small fortune in a bottle of wine, if you wish. We highly recommend this place for a romantic dinner."

  • "We arrived 10 min early to our reservation time and we were asked to wait at the bar. 15 min after our reservation time, we inquired and shortly afterwards, someone arrived to bring us to our table in the Swan Court, which is what we had requested. The food and service from that point on was wonderful though our server had a very thick accent that was hard to understand. I had made the reservation online and mentioned that it was my daughters' 21st birthday and several staff wished her a happy 21st. They also brought a beautiful cupcake with a candle to her during dessert. This was a very special touch that was unexpected and greatly appreciated."

  • "For the price, the food wasn't as good as I had hoped. Our waiter was good and the wine steward selected a really nice Italian wine for us. My steak was good but my girlfriend's Risotto special was under-cooked which was quite surprising for such a place. I wish we said something at the time (we should have since it would have given them the chance to make it right) but we were having a nice time and feeling a bit passive that night so we didn't want to interrupt our dinner. Overall we liked the dinner but it ultimately wasn't worth the price we paid."

  • "Mediocre restaurant which I consider pricey for what it has to offer. I took my friend there for his birthday, the host asked who has the birthday and I told her that it is my friend. We got seated and the waiter never even said Happy Birthday, nor did he bring anything for that. When we told the waiter that we will only want water for drinks (we had a few cocktails before) he acknowledged it with a sour face. Guess what? We got our main courses and water was still not served at that point. I ordered my steak medium well and it was a little bit chewy. I am sure others had better experiences than we did but this restaurant is mediocre at its best. Would not call it a bad experience but it was certainly far from good! I would never return."

  • "Aureole came highly recommended to us and many things lived up to the recommendation. From the moment we walked up to the restaurant, the staff was so friendly. We received excellent service. I believe our server's name was Gus (maybe?). Our friend was not feeling well during dinner, and Gus was very attentive. Our bottle of Prosecco was fantastic, and the ambience was very nice. It was a very classic Vegas experience. The food was decent and enjoyable. We had the Branzino and Tuna/Scallop entrees with some appetizers (octopus, pumpkin soup, salad). It was enjoyable, but not "out of the park" impressive. I would like to try more on the menu before recommending this restaurant to a friend."
