A word from Aureole - Las Vegas
Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999.

The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower—the largest in the world—houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.

    2nd time here and enjoyed even more than the 1st. This is fine affordable dining at its best. The menu has so many options without being over the top. The 4 course parralel tasting is spectacular, combine that with the wine package and its a winner. The wine list iss something else and the waiter knew his wine and matched the wines for the ala carte perfectly. Cannot fault it, yes the wine angels maybe considered a gimmick but u gotta store the wines somewhere! 5 stars.

    We chose Aureole as our final night in Vegas dinner to start the evening. This was by far the overall best restaurant experience that my girlfriend and I have ever enjoyed. I would absolutely recommend this restaurant to anyone vacationing in Las Vegas.

    I have dined at Aureole around 10 times and it remains consistently amazing every time! The wine list is superb, and it is cool to see their "wine angels" go up the impressive wine tower to pick out the bottle. My favorite menu item is the blue cheese crusted filet with sauteed kale and red wine jus. Perfection on a plate, and paired with either their roasted garlic pomme puree or the Peruvian smashed purple potatoes makes for an unforgettable dining experience. I also had their chef's special appetizer, which was a pumpkin soup with a homemade prosciutto tortellini and topped with fresh grated truffles. The chef comes out and grates them herself! The only think I was disappointed in was that they did not have their pina colada creme brulee

    It's currently truffle season and the white truffle risotto is amazing. Two days later I'm still craving more of the creamy goodness that was served. The froie gras was also perfectly prepared and the presentation on all dishes fantastic. The service was amazing with attention to detail and great suggestions on good and wine pairings.

    We had a nice dinner before walking over to see the Cirque show at Mandalay Bay. Perhaps because it was Monday; perhaps because it was early and the restaurant was just filling up -- we felt the service was not as attentive this visit as it has been in the past. But that is small criticism for a meal that was otherwise quite enjoyable.

    Our dinner at Aureole was quite elegant. The service was superb. My husband began with the Artisanal Cheese Plate and I with the Ricotta Cheese Agnolotti with Wild Mushrooms. We enjoyed them immensely. Then, my husband had the Grilled Mediterranean Branzino and I the Roasted King Ora Salmon. Again, the food was great. We finished with the Semi-freddo (husband) and the Chocolate Trio. Both were sumptious! A bottle of wine accompanied our meal. We sat beside the window watching the large swan on the pool with the waterfall behind. The only downfall was a group of 6 who were yelling at and to one another the entire time. One couple moved across the room to get away. We were far but they were still disruptive...the only downfall.

    Loved everything about this place. We were on a time schedule because of a theater show change. They were so accomodating. The food was fabulous and the atmosphere was great. Our waiters were fabulous. Will definitely go back. RT

    Wonderful meal at Aureole. Service was attentive, not intrusive. Best part of meal was having Chef Palmer come to our table to shave white truffles on our risotto. Divine! The filet mignon was done perfectly and served with sautéed kale. Chocolate Trio dessert was delicious. Couldn't have had a better meal.

    So nice to find an elegant restaurant in all the Vegas craziness. From our arrival to departure, service was phenomenal. Food was outstanding...braised short ribs melted in my mouth, my husband had the scallops, friend had the cheese plate and risotto. Desert was pumpkin crime brûlée - it was awesome and I am not a pumpkin fan. Wine list is spectacular, which you would expect. The design of the restaurant should be considered as part of your experience and it was remarkable. Highly recommend, but be prepared to spend some $$$

    You know the wine list will be long as you descend the staircase which is wrapped around a column which contains nothing but hundreds of bottled of wine (2,300 different wines to be exact!). My husband and I wanted a nice meal during our stay in Vegas and found it here. We are both wine lovers and so the selection along with great food and service made this an ideal dinner destination for us. The wine angels who scale the wall of wine was added fun to watch!

    We ate there our last night in Las Vegas and it was a fitting conclusion to our trip. The ambiance is lovely particularly in the Swan Room where west next to the glass separating us from a small waterfall pool featuring a couple of swan swimming around. We had an excellent appetizers and 2 of the best steaks we've enjoyed recently and finished with a decadent dessert, as well as a fine wine.

    Extensive wine list but the service was not very good and the food was adequate. The presentation of the food was excellent but it wasn't very memorable nor was it even the best meal I ate that day. The waiter pretended not to be familiar with local wine specials when we asked and only produced the local wine menu when pressed.

    Went on recommendation of friend. Was pampered by staff and enjoyed a wonderful view table. I was surprised at the large food portions. The food was carefully prepared and quite tasty. The pumpkin soup was one of the best soups i have ever had.

    We had read and heard great things about this restaurant. The wine list and the wine tower are the only upscale parts of this restaurant. Food was good but not great. Nothing I would want to really eat again. Our children who are ages 18, 21, 23 who have eaten in some fine restaurants all over the world were also complaining. The service was probably the most disappointing. Not lack of attention, just not getting orders correct and forgetting things like a spoon with the soup or ordering an ice tea that never came until we asked again. Ordered a coffee with baileys and they brought regular coffee with cream. No attention to detail. The food was the same way. Nothing terrible just not great. Nothing to make you say wow.

    A friend and I planned to needy for a special meal at Aureole and it was just that. For appetizers I had the Spanish style grilled octopus salad and my friend had the French onion soup. The octopus was perfectly cooked and seasoned perfectly. My friend works in the good industry and he said that the French onion soup was memorable. For dinner I had the grilled duck and he had a perfectly cooked wagyu beef. The beef had a beautiful sear and yet was still medium rare. We finished the evening with the pina colada creme brulee. I can't wait to go back!

    Our entire dining experience was outstanding. The food was all prepared very well, the service was good and the wine selection was great! For entrees, the branzino was really outstanding. Also ordered the ahi tuna and scallops in a sweet chili sauce with kimchi, which was also excellent if you like spice!

    A superior dining experience for which you will pay. Amazing wine list on an iPad, just think what you want and it will be there. Quiet. Great service. We especially enjoyed the white truffle risotto with the truffle shaved by the chef at our table. Everything was perfectly cooked.

    I order the special Baramunda (sp?) fish. It was cold. My customers order the seared tuna. I know seared tuna is not hot but this was cold too. The service was good but I would not take customers here again. Didn't bother to return food as we didn't want to be there all night. The wine tower is nothing special. Kind of gimicky.

    If you are at the Mandalay Bay and have $200/person to spend on a special meal, you should definitely eat here. We had the foie gras and the white truffle risotto as appetizers. It was a generous portion of foie gras, and the risotto was among the best we have ever eaten anywhere. For main course, we had the duck breast and the South American Delmonico steak done with Chimichurri. Both were excellent. Dessert was good but not amazing (lava chocolate cake and strawberries with ice cream).

    We had 6 at dinner. The restaurant is modern, wine wall ...cool. Food is yummy... That all being said the service was: pushing , not relaxing. I can get great food at lots of restaurants.....So when I return to LAs Vegas, I will try other restaurants and I will not return to Aureole. The service: served by a stampede of wait people all on top of each other. Disorganized. No pleasantries. It made us feel uncomfortable. The wait team we had, should be benched.

    Planned months in advance for this dinner, had the 4 course tasting menu, and it sounded amazing. Each of the 4 courses had 2 totally different items, so it was like trying 8 dishes. I only liked 1 out of the 8, which is highly unusual for me. Smoked salmon and pomegranates paired unsuccessfully with lentils, poached salmon was fishy, corn veloute was served ice cold (and not described as such), crab cappuccino ravioli- I could only eat 1 bite. Dessert course was warm grapes and cube of goat cheese cake (overpowering goat!). Best part was the concord grape "sorbet", tasted like Welch's. Ate at Fleur nextdoor night before, wished I had gone back there instead. Wine angels only ascended twice during entire dinner. Not exciting...

    Great service. Terrific service & wine recommendation from the sommelier. The food was delicious, too. Only two small flaws stood out. One, the butter for the bread was cold and hard. This is fine dining 101, and shows a lack of attention to detail that keeps Aureole from being a top-notch restaurant. Two, the music & noise level weren't fit for a place of this caliber.

    We continue to be impressed with the consistency in atmosphere and meal when we dine here. We have been coming here for over 10 years when in town and always leave happy! We had the Chef's tasting menu with wine pairings this last trip...AMAZING! Excellent service and creative food combinations made for a wonderful evening.

    We really enjoyed the experience here! The food and service was excellent! When we mentioned we wanted to go see the wine angel tower, someone escorted us over and actually took us inside to check it out and had the wine angel demonstrate what she does. They then offered to take a picture of us. Couldn't have had a better evening!!

    This was, by far, the best dining experience we have had in Las Vegas. We will be sure to return here again and again. Our waiter, Orlando, was very helpful and attentive. We dined off of the Michael Jackson ONE pre-fixe menu, which was divine. And the kicker was that they remembered our anniversary and presented us with an anniversary cupcake in addition to our dessert with a message written on the chocolate imbedded in the frosting! The Enlightenment signature cocktail is now my new favorite, and I need to figure out how to recreate it at home. Thank you for a memorable evening and a phenomenal dining experience.

    Start to finish... This was a great dining experience. Get dressed up, you are going to feel like a Star! Sit back and let the staff cater to your every wish. Step outside and enjoy your macchiato with swans. Everything is worth trying.... Lastly, Say Hi or Bye to Tony as you ascend back upstairs to the real world.

    First visit to this place and took the parallel tasting menu. It was stunning. Cannot find fault with anything and now added to our list of favourite restaurants in Vegas. I would definitely recommend this place though make sure you book as it looked busy when we went though this never affected the service which was exemplary. We will definitely be back.

    This is a really excellent place for a couple. Food- Unmatched, Wine- top shelf, Service- above and beyond. Its not inexpensive, but it is worth every penny. I hate to say their prices are fully supported by what they offer. Wonderful evening, perfect meal.

    A friend and I chose Aureole for at wasting menu experience during our girls' weekend in Las Vegas. We both enjoyed the Parallel Tasting Menu, which highlighted a different theme, prepared two ways at each of four courses. The presentation was beautiful, and flavors were excellent. For what we received, I actually thought the tasting menu presented a good value. Would definitely recommend!

    I can't think of enough good things to say about my experience at Aureole. The space is beautiful, if not a touch cold/industrial. The service was among the best I have had. The food and wine was spectacular from beginning to end.
