A word from Aureole - Las Vegas
Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999.

The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower—the largest in the world—houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.

    You know the wine list will be long as you descend the staircase which is wrapped around a column which contains nothing but hundreds of bottled of wine (2,300 different wines to be exact!). My husband and I wanted a nice meal during our stay in Vegas and found it here. We are both wine lovers and so the selection along with great food and service made this an ideal dinner destination for us. The wine angels who scale the wall of wine was added fun to watch!

    We ate there our last night in Las Vegas and it was a fitting conclusion to our trip. The ambiance is lovely particularly in the Swan Room where west next to the glass separating us from a small waterfall pool featuring a couple of swan swimming around. We had an excellent appetizers and 2 of the best steaks we've enjoyed recently and finished with a decadent dessert, as well as a fine wine.

    Extensive wine list but the service was not very good and the food was adequate. The presentation of the food was excellent but it wasn't very memorable nor was it even the best meal I ate that day. The waiter pretended not to be familiar with local wine specials when we asked and only produced the local wine menu when pressed.

    Went on recommendation of friend. Was pampered by staff and enjoyed a wonderful view table. I was surprised at the large food portions. The food was carefully prepared and quite tasty. The pumpkin soup was one of the best soups i have ever had.

    This restaurant was pretty awesome! Crazy awesome wine list (a tad overwhelming) the food was all outstanding, expensive, but we went knowing this and it was pretty well worth it! The service cannot be beat, the really take care of you!! Very classy and delicious and great.

    We had read and heard great things about this restaurant. The wine list and the wine tower are the only upscale parts of this restaurant. Food was good but not great. Nothing I would want to really eat again. Our children who are ages 18, 21, 23 who have eaten in some fine restaurants all over the world were also complaining. The service was probably the most disappointing. Not lack of attention, just not getting orders correct and forgetting things like a spoon with the soup or ordering an ice tea that never came until we asked again. Ordered a coffee with baileys and they brought regular coffee with cream. No attention to detail. The food was the same way. Nothing terrible just not great. Nothing to make you say wow.

    We've eaten at many places in Las Vegas and enjoyed it. We were ordering a Prix Fix Menu to get to the show on time. They were SLOW serving. Barely got to the show before it started. Food was just ok.

    A friend and I planned to needy for a special meal at Aureole and it was just that. For appetizers I had the Spanish style grilled octopus salad and my friend had the French onion soup. The octopus was perfectly cooked and seasoned perfectly. My friend works in the good industry and he said that the French onion soup was memorable. For dinner I had the grilled duck and he had a perfectly cooked wagyu beef. The beef had a beautiful sear and yet was still medium rare. We finished the evening with the pina colada creme brulee. I can't wait to go back!

    Our entire dining experience was outstanding. The food was all prepared very well, the service was good and the wine selection was great! For entrees, the branzino was really outstanding. Also ordered the ahi tuna and scallops in a sweet chili sauce with kimchi, which was also excellent if you like spice!

    A superior dining experience for which you will pay. Amazing wine list on an iPad, just think what you want and it will be there. Quiet. Great service. We especially enjoyed the white truffle risotto with the truffle shaved by the chef at our table. Everything was perfectly cooked.

    I order the special Baramunda (sp?) fish. It was cold. My customers order the seared tuna. I know seared tuna is not hot but this was cold too. The service was good but I would not take customers here again. Didn't bother to return food as we didn't want to be there all night. The wine tower is nothing special. Kind of gimicky.

    If you are at the Mandalay Bay and have $200/person to spend on a special meal, you should definitely eat here. We had the foie gras and the white truffle risotto as appetizers. It was a generous portion of foie gras, and the risotto was among the best we have ever eaten anywhere. For main course, we had the duck breast and the South American Delmonico steak done with Chimichurri. Both were excellent. Dessert was good but not amazing (lava chocolate cake and strawberries with ice cream).

    We had 6 at dinner. The restaurant is modern, wine wall ...cool. Food is yummy... That all being said the service was: pushing , not relaxing. I can get great food at lots of restaurants.....So when I return to LAs Vegas, I will try other restaurants and I will not return to Aureole. The service: served by a stampede of wait people all on top of each other. Disorganized. No pleasantries. It made us feel uncomfortable. The wait team we had, should be benched.

    Planned months in advance for this dinner, had the 4 course tasting menu, and it sounded amazing. Each of the 4 courses had 2 totally different items, so it was like trying 8 dishes. I only liked 1 out of the 8, which is highly unusual for me. Smoked salmon and pomegranates paired unsuccessfully with lentils, poached salmon was fishy, corn veloute was served ice cold (and not described as such), crab cappuccino ravioli- I could only eat 1 bite. Dessert course was warm grapes and cube of goat cheese cake (overpowering goat!). Best part was the concord grape "sorbet", tasted like Welch's. Ate at Fleur nextdoor night before, wished I had gone back there instead. Wine angels only ascended twice during entire dinner. Not exciting...

    Great service. Terrific service & wine recommendation from the sommelier. The food was delicious, too. Only two small flaws stood out. One, the butter for the bread was cold and hard. This is fine dining 101, and shows a lack of attention to detail that keeps Aureole from being a top-notch restaurant. Two, the music & noise level weren't fit for a place of this caliber.

    We continue to be impressed with the consistency in atmosphere and meal when we dine here. We have been coming here for over 10 years when in town and always leave happy!     This was, by far, the best dining experience we have had in Las Vegas. We will be sure to return here again and again. Our waiter, Orlando, was very helpful and attentive. We dined off of the Michael Jackson ONE pre-fixe menu, which was divine. And the kicker was that they remembered our anniversary and presented us with an anniversary cupcake in addition to our dessert with a message written on the chocolate imbedded in the frosting! The Enlightenment signature cocktail is now my new favorite, and I need to figure out how to recreate it at home. Thank you for a memorable evening and a phenomenal dining experience.

    Start to finish... This was a great dining experience. Get dressed up, you are going to feel like a Star! Sit back and let the staff cater to your every wish. Step outside and enjoy your macchiato with swans. Everything is worth trying.... Lastly, Say Hi or Bye to Tony as you ascend back upstairs to the real world.

    First visit to this place and took the parallel tasting menu. It was stunning. Cannot find fault with anything and now added to our list of favourite restaurants in Vegas. I would definitely recommend this place though make sure you book as it looked busy when we went though this never affected the service which was exemplary. We will definitely be back.

    This is a really excellent place for a couple. Food- Unmatched, Wine- top shelf, Service- above and beyond. Its not inexpensive, but it is worth every penny. I hate to say their prices are fully supported by what they offer. Wonderful evening, perfect meal.

    A friend and I chose Aureole for at wasting menu experience during our girls' weekend in Las Vegas. We both enjoyed the Parallel Tasting Menu, which highlighted a different theme, prepared two ways at each of four courses. The presentation was beautiful, and flavors were excellent. For what we received, I actually thought the tasting menu presented a good value. Would definitely recommend!

    From the moment our party entered and walked the bridge to see the wine angel in the air we knew this was a special place. Eric was our server and his knowledge and professionalism made our experience memorable. The food choices were incredible from foie gras to pork to salmon to wagyu beef. The wine pairings were phenomenal and personalized assistance from staff was exceptional. The chocolate desserts were beyond outstanding and the birthday surprise with handwritten chocolate script wishing Kim Happy Birthday with candle and cupcake was sincerely special!!Also, the white swans in the waterfall outside are real!

    I and my large party (10 people) felt like we stepped back in time with the overall service, presentation, and food... The gimmick of the young women negotiating a beautiful glass wine "cellar" on ropes and harness is cool but the rest of the place doesn't meet the standard (and definitely not the price tag). Several of us had a basic romaine lettuce salad that had absolutely no taste. Main courses ranged from OK to overcooked depending on who in my party was asked. Server was a bit snotty, making several off-hand comments about some mixed-up plates that were certainly not appreciated. Would definitely NOT repeat.

    We thought this place would be great for dinner and that it would be fun to see the wine angels "gracefully ascend" the 4 story wine tower while dining. First of all, the wine angel only went up to retrieve a bottle of wine once while we were dining, and it was anything but graceful. All six of agreed it looked like she was lethargically hoisted up to grab a bottle and came right back down. It truly was nothing special to see. The food was ok. The service was ok and the bottle of wine we ordered was nothing special. Overall, I we would not go back to Aureole. In our opinion, it wasn't worth the price an there are too many other amazing restaurants in Las Vegas.

    The wine cellar is huge in a transparent tower, with a "wine angel" climbing to take your bottle. This is spectacular. The food is really amazing, perfectly cooked and portioned. For sure this one is a must go in Las Vegas. I look forward to come back again.

    We did the chef's tasting with wine pairings and were rewarded with an eclectic and totally pleasing food experience. The service was top notch as we were made to feel like we were dining with friends. The room however is quite large, mostly to accommodate the wine tower, which makes it hard to create a warm intimate atmosphere. But the did a good job with it. The Wine Angel is a side show and should not be what you come here for

    Where else can you watch angels in action while you dine? I am referring to the "wine angels" who use cables to reach wine bottles in a glass enclosed silo. The food was tremendous! From the ricotta cheese and mushrooms (appetizer) to the bone-in filet mignon, the food was cooked to perfection and the flavors were fantastic. My wife enjoyed the rib-eye steak very much as well. When we come back to Las Vegas, we will make certain to come back to Aureole.

    This was my 2nd time dining at Aureole in Vegas. I've dined at the NYC restaurant numerous times. Our dinner this week was outstanding. We each had one of the nightly specials and it couldn't of been better. The service was very attentive and the Sommelier, Kyran O'Dwyer made great recommendations on the wines. He went beyond the call of duty to discuss the individual wines and just the overall wine grading system. It was truly a memorable evening.

    I went with 5 friends on a bachelorette party. Everyone else got the blue cheese crusted steak. They all loved it! I got the ahi seared tuna and scallops duo. I wasn't overly impressed. Ditto on the sides. We chose the garlic pomme puree, creamy spinach, and parmesan fries. All were just so-so. The cocktail menu was small although they did have a full bar menu. I don't regret going but wouldn't go back.

    We had an incredible time at Aureole, the food was fantastic, and the service provided to us by Eddie was far above and beyond what was required.     My husband and I had really enjoyed our dinner there 5 years ago, and we were looking forward to dinning there again. This time it was a little disappointing. The food was ok and the server was not able to divide our group bill of 12 ppl. It was taking so long we had to put a large bill through on one persons credit card just so we could leave a half hour after we were done eating.

    Steaks were absolutely delicious. The wine sommelier picked out a wine for us based on our taste preferences and it was an excellent choice. It was a slow night (Wednesday) so we only got to see the girl go up the wine tower one time. Highly recommend.
