A word from Aureole - Las Vegas
Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999.

The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower—the largest in the world—houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.

  • "Went to Aureole just before a show and ordered the seasonal tasting menu (4 courses). Every course was fantastic and the main course (rack of lamb) was out of this world! My waiter, Jalil, knows the menu inside and out and explains everything with a wonderful level of detail. In addition to the phenomenal food, you can watch the wine angels as they are lifted and lowered by wire to retrieve bottles from a transparent tower three stories tall. I would highly recommend this wonderful restaurant!"

  • " Had high expectations having visited other restaurants in the group. Had the pork chop, nothing outstanding, no wow factor in the dish, shouldn't call it a pig ear salad if there was only two slivers of dehydrated pig air. Nothing special about the chicken entree. Octopus salad needed some form of additional citrus to make it pop. Lava cake was quite frankly blasé blasé. Chocolate was presented nicely but the dark chocolate sauce overpowered the delicate churros. Peanut butter pops were ok, popcorn component again didn't pop. Great texture on the churros, they were tasty. Although money wasn't a factor, for what we paid we left unsatisfied. First time we left a restaurant and no one wanted to discuss the food. The hostesses were great"

  • "My husband and I had never heard of Aureole. We were acknowledged and assisted immediately. We sat at a very intimate table for two next to a very large window with a view. Service was good and we would refer anybody looking for intimate and diverse dining experience."

  • "Food was cold, service was sloppy at best. The server assistant was the saving grace of the evening. He was very attentive. Our server on the other hand was terrible. We ordered 5 starters to share among a group of 6, one of which being a French Onion Soup. We had let our server know we were going to share everything and they only brought one soup spoon for 6 people. When we asked for more spoons a handful of spoons were tossed in the center of the table. We all payed $120+/person and I would expect a little better service than that. On top of that, 3 of the 4 "hot" apps we ordered were cold to the touch and our server was no where in sight to ask to have our items reheated. Entree's were ok, again sloppy service. I will not be back"

  • "Lotta show, not a lot of menu substance, great wine list, high price. The trapeze artist retrieving your wine from the wine tower is, indeed, a sight. But the food is only ok and the menu is surprisingly uninteresting. My risotto dish was undercooked and flavorless. The "private room" is not walled off, and so we were all treated to a very loud microphone. For the price, no thanks. Wouldn't return, even on third-party-payor status. Too many other better choices."

  • "Read about this nice spot in Wine Spectator Mag. Had to sample and savor next time in Sin City. A sinful experience with a WV Oregon Pinot Noir & Perfectly cooked NY melt N' mouth strip steak with a nice medley of Artisan baby vegetables on top of a bed of asparagus. Simple perfection."

  • "Food was incredible and the waiters were attentive and pleasant. The Hamachi appetizer melted in my mouth and the melon added juicy sweetness. The duck breast was the best we had ever eaten, so tender and the orange topping was a perfect accompaniment. BUT the sommelier was extremely unfriendly - she never smiled even when we tried to joke around with her. She didn't really listen to us, but instead listed all red wine varietals that they had, which was not helpful at all. I was wishing we had not asked to see the sommelier. Her attitude was surprising to us and ruined an otherwise lovely evening."

  • "I made reservations in Jan for June 9th at 5:30 for the Michael Jackson (The One) show and dinner. I asked to have flowers (I ordered) waiting on our table then bring her gifts once desert was served. I arrived, The gifts were on the table. I explained that was not what I wanted. The young lady at the desk took charge! She got a lady to sneak the gifts off of the table. Our waiter Eric took amazing care of us both, he explained every detail to my mother also commented on the menu. We did not wait long for any appetizers, the main course, and desert also a birthday cup cake! I am born and raised in Las Vegas, a hard critic on service only due to knowing this town is all about service. Truly a birthday my mother will always remember! Jasmine"

  • "We were there NYE dinner and 2 friends didn't want the prefixe meal like my 1 friend & I. Server brought mgr over to table, after all girls ordered, and said NO prefixe or all had to order it. Bottom line we had to order all carte entrees bcuz of 2 gals didn't want prefixe. It was good. I was disappointed since they weren't very accommodating. I'm going there with some other ppl & try the prefix menu, since we R going to see the ONE show."

  • "Aureole Las Vegas was a wonderful venue! I was there on a Monday with a group of about 40 or so and the food, service and ambience was excellent. They easily handled our many guests and kept the evening fun, lively, and well served. The private room area was discrete, but not completely isolated - so you didn't feel like you were not part of the restaurant. Later in the week after a show, I returned with my wife on a Friday night dinner and it didn't disappoint - not that I expected it to. I have been here several times and Aureole - LV is great. The onion soup, by the way, will draw me back every time."

  • "A very good experience, found via recommendations. Good food, good service, well appointed dining room. Excellent variety with eclectic menu representing many styles. Good options on prix fixe or a la carte. Fair pricing for the experience however, beware the Chef's Specials. The "unannounced" price was significantly our of line with standard menu items. The ones ordered were indeed good, comparable to other items; just seemed a bit high. Good presentation and delivery, attentive and non-intrusive service with good input as requested. The desserts were the highlight, the triple chocolate item was exceptional. A special raspberry sorbet was equally outstanding. A nice touch with live music; appropriate for the environment."

I had the parallel lobster tasting and the flavor of lobster was hard to find in many (most) of the dishes. Flavors were one dimensional (e.g., corn chowder was delicious presentation of corn flavors, not lobster). Poached lobster was tough. Dessert was ok (delicious caramel braid). "

Balance of the other entree's were "warm" at best. The manager and host created attention to our table and did NOT handle our situation discretely. The entree price at Aureole does not sync with the food quality and customer service -unfortunately we chose Aureole for our event. "

  • "We had Happy Hour drinks first then the $58 Cirque Du Soleil Michael Jackson show 3 course special menu after the show. The food was very well prepared, service fast and friendly enough without being over the top. The atmosphere is a bit 'industrial' though and quite noisy - the place was full. Good value for money and the wine list had prices for all pockets. An enjoyable dinner"
