A word from Aureole - Las Vegas
Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999.

The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower—the largest in the world—houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.

  • "Where else can you watch angels in action while you dine? I am referring to the "wine angels" who use cables to reach wine bottles in a glass enclosed silo. The food was tremendous! From the ricotta cheese and mushrooms (appetizer) to the bone-in filet mignon, the food was cooked to perfection and the flavors were fantastic. My wife enjoyed the rib-eye steak very much as well. When we come back to Las Vegas, we will make certain to come back to Aureole."

  • "This was my 2nd time dining at Aureole in Vegas. I've dined at the NYC restaurant numerous times. Our dinner this week was outstanding. We each had one of the nightly specials and it couldn't of been better. The service was very attentive and the Sommelier, Kyran O'Dwyer made great recommendations on the wines. He went beyond the call of duty to discuss the individual wines and just the overall wine grading system. It was truly a memorable evening."

  • "I went with 5 friends on a bachelorette party. Everyone else got the blue cheese crusted steak. They all loved it! I got the ahi seared tuna and scallops duo. I wasn't overly impressed. Ditto on the sides. We chose the garlic pomme puree, creamy spinach, and parmesan fries. All were just so-so. The cocktail menu was small although they did have a full bar menu. I don't regret going but wouldn't go back."

The food was ok and the server was not able to divide our group bill of 12 ppl. It was taking so long we had to put a large bill through on one persons credit card just so we could leave a half hour after we were done eating."

  • "We asked the restaurant for a romantic table to celebrate our anniversary. We were seated in a very quiet area, with a view of the water feature out back. Our server, Eric, was amazing! We started the evening with a free sample of appetizers. We both chose the parallel tasting menu and oh what a choice! The lobster pairing was by far my favorite, lobster ravioli on one side, 'surf and turf' on the other. The surf was a Wagyu filet topped with a lobster tail and cooked to perfection. Every one of the four courses was beautiful and scrumptious. The chef even made us a special dessert, a platter of eight different sweets with "Happy Anniversary" written in chocolate. With so many places to choose from, it's nice to know locals are appreciated!"

  • "I was extremely disappointed last Thursday to discover that the $39 Unusual Suspects Wine was limited to Nevada residents. Yes, it turns out there was an asterisk at the bottom of the webpage that mentioned this, but it was the reason we chose this restaurant and the rude response from the waiter that this was "only for locals" significantly detracted from what otherwise would have been a fantastic evening with wonderful food."

  • "The night we were here, the place was filled with a loud crowd of mostly men with a Convention. The noise was over the top. Service was poor, as our waiter was attending elsewhere. Had to find him to get our check even. Food was good but not incredibly memorable for the price."

  • "My wife and I were nervous about eating at a restaurant this nice, but everyone on staff, from the maitre d to the man doing bread and water service to our server (Alfredo) made us feel very comfortable and welcome. Alfredo walked us through the menu well, answering our questions as they came up and being very patient with us. We ended up going with the tasting menu, which was the right choice; there were several items on there I wouldn't normally order, and while I didn't care for every dish, I enjoyed trying them out. There was only one hitch through the entire meal: our main course came out cold. When I talked to Alfredo about it, though, he immediately apologized and had them fire another for us, which came out quickly and hot."

  • "I guess I expected more from the ambience. One, they had a live jazz trio playing which I normally wouldn't complain about but the drums were way too loud in the cavernous space, if they (and the piano and bass) were muted it would've been fine but the occasional boom and crash of the cymbals were distracting. Also there was a huge window that exposed some sort of service area so I saw uniformed guys coming off work and riding on carts going by. The space is also open to a crowded walkway where the occasional kids and loud frat guys could be heard. Other than that the french onion soup was a must order and the duck was very good."

Wrong order brought and then the server told the person they ordered what was brought. This patron does not like what was brought and would never order it. The staff needed to accept they messed up, not blame the customer. NEVER again"

I never said a word to anyone once we got there - but dessert was brought to the table for my date at the end of dinner. He was so surprised and we truly enjoyed the entire evening!"

  • "We went for anniversary dinner. We early and initially seated in middle of restaurant whilst more romantic views were available. I asked to be moved to a window table overlooking a waterfall which they did graciously. Food was super, I picked a set 4 course dinner of lamb (1 chop, yes one) but good. My wife had salmon which was very good. Wine list is overwhelming."

  • "We waited 20 minutes for our table receiving not the slightest sense of an apology. Indeed,my inquiry after waiting 15 minutes was greeted with an impatient sigh. When we were finally seated (at a table evidently between stations)it then took just under another 20 minutes for a waiter to appear and only after we flagged one down.The attitude from the moment we entered was that we were privileged to be there and that they had little obligation to make us feel welcome or offer normal service courtesies. The meal was quite good so this review is a classic case of folks in a service business shooting themselves in the foot."

Steaks ordered rare and being delivered medium, wine with so much sediment it needed to be decanted (but they didn't), a wine server with a very cold and snippy attitude and service standard.   • " Had high expectations having visited other restaurants in the group. Had the pork chop, nothing outstanding, no wow factor in the dish, shouldn't call it a pig ear salad if there was only two slivers of dehydrated pig air. Nothing special about the chicken entree. Octopus salad needed some form of additional citrus to make it pop. Lava cake was quite frankly blasé blasé. Chocolate was presented nicely but the dark chocolate sauce overpowered the delicate churros. Peanut butter pops were ok, popcorn component again didn't pop. Great texture on the churros, they were tasty. Although money wasn't a factor, for what we paid we left unsatisfied. First time we left a restaurant and no one wanted to discuss the food. The hostesses were great"

  • "Went to Aureole just before a show and ordered the seasonal tasting menu (4 courses). Every course was fantastic and the main course (rack of lamb) was out of this world! My waiter, Jalil, knows the menu inside and out and explains everything with a wonderful level of detail. In addition to the phenomenal food, you can watch the wine angels as they are lifted and lowered by wire to retrieve bottles from a transparent tower three stories tall. I would highly recommend this wonderful restaurant!"

  • "Lotta show, not a lot of menu substance, great wine list, high price. The trapeze artist retrieving your wine from the wine tower is, indeed, a sight. But the food is only ok and the menu is surprisingly uninteresting. My risotto dish was undercooked and flavorless. The "private room" is not walled off, and so we were all treated to a very loud microphone. For the price, no thanks. Wouldn't return, even on third-party-payor status. Too many other better choices."
