The two menus served nightly highlight the best ingredients of the season, enhanced by skillful technique and an eye toward varied textures and flavors.     In from the East Coast, and completely overwhelemd by the service and chef's tasting menu. My compliments to the chef, staff and sommelier. The wine, food and especially his signature steak. Rolled in rock salt, seared 1000 degrees, washed with Saki, seared 100 degrees, dipped in Soy, and seared 1000 degrees...........seriously the best piece of beef we have ever had. Thank you again for a wonderful dinner and a seriouly outstanding meal.

    From the moment we entered the restaurant we were treated like royalty. The service impeccable, the ambiance warm, but the food was to die for. With each bite the favors exploded in our mouths. We closed our eyes to savior the experience. So, this is what it is like to live like the rich and famous!

    We were so very impressed by the service, the wine pairings and the food. My wife and I ordered the tastings and we both found each item to be beautifully presented, unique, vibrant and full of flavor. It seemed each course was better than the previous. Highlights were the lamb and beef, but all food was extraordinary. The experience was most enjoyable and memorable.

    This extremely talented young chef produces food that is unusual, inspirational and delicious food. We chose his tasting menu but that is a misnomer as the menu consists simply of a list of approximately12 key Ingredients all of which appear in one of 9 superb courses. Tha setting is beautiful with outstanding service. Each dish was accompanied by a carefully selected wine and only the Saki was a disappointment, but that was a matter of personal taste. However all this quality comes at a price and be prepared to part with $750 if you choose the tasting menu with accompanying wines. For us it was a special occasion and extraordinary experience justified the price. Deserving of Michelin Star.

    Lovely classy quiet setting in charming town of Carmel. We came for our 25th wedding anniversary. Not only did the staff acknowledge this but they had a special menu printed with anniversary wishes and took us back to meet the chef after the dinner. We had 13 courses of wonderful creative food. Every course was an adventure. Very delicious and wonderful for a special occasion.

    It was good but not spectacular. Some dishes did not come together. Especially a garden salad with something baked inside that was very sweet.I forget what it was called but it was like cake pieces. Not expected when you are eating savory courses and have wine. That thread continued through some of the dishes,you wanted to totally like them but couldn't.

    Wonderful meal! I especially loved the sea urchin on sea milk with the ocean flower, the duck liver pate, and the special hokkaido beef with the matrix of toppings... The service was very nice. The only thing missing was, as I was driving myself, I couldn't get the wine pairing...

    A couple of good dishes and a few dissaponting ones, some of the flavors were too complicated to really enjoy... Suggest to simplify the menu.- On another not we were not told that UPGRADING the beef was extra ant got a bill for $739 ???????

    We stayed in Carmel for two nights as part of our honeymoon trip, and chose Aubergine for a celebratory dinner. The staff were attentive and gracious, the dining room is small but still airy and bright. Of course, the food is what you come for, and all we can say is that it was exquisite. The Tasting Menu is nine courses, each one a surprise. The attention to detail, flavor pairings and presentation were superb! Our dinner was complemented by the Sommelier wine pairings, a must! After dinner, we had the pleasure of meeting the Executive Chef, Justin Cogley so that we could thank him for a wonderful evening that we will never forget.

    We did a five course tasting menu at Aubergine with the matching wine pairing. Although all of the food dishes were beautiful to look at, some were not very satisfying. I felt the dishes were trying too hard to be unusual. On the other hand, the wines were amazing and very thoughtfully selected. The choices were not what you would normally expect, but always spot on. For instance, a cru Beaujolais, a Moulin-a-Vent, to go with the beef course which had a huckleberry sauce. It was prefect. My husband & I were in the wine business before we retired, and loved all the wine selections; champagne from a small grower/producer, an amazing dry German rosé, a French Chenin Blanc, a California Rousanne, and a fortified dessert wine from Champagne.

    Great food. Elegant presentation. Great flavors and mix of ingredients. I made the mistake of eating a late lunch, but still opted for the 9-course tasting menu. Even on somewhat of a full stomach I still forced myself to get through all nine courses because it was so good. The meat dishes were cooked perfectly. Definitely deserves a Michelin star (or two).

    Aubergine more than lived up to its outstanding reputation as we had a most memorable dining experience. Four of us had the tasting menu and although we at first feared it would be too much food, the many dishes were small enough to allow us to eagerly anticipate the next offering but yet large enough to allow us to fully appreciate the delicious food and the artistry of the chef. We savored each of the many dishes. The service was impeccable and the overall atmosphere matched the high quality of the food. This is THE restaurant to enjoy a special occasion.

    This restaurant was wonderful! The service was impeccable and the food was wonderful. We opted for the four course meal ($110) with the wine pairings. The wines made the food "pop". The wines arrived on time. Since the menu changes daily, there is no point in discussing the details of what we had - but, the cheese choice is great. We will go back for sure.

    Having dined at other L'Auberge properties we were anxious to try another. We were in town for Monterey auto week and were disappointed to see that one of two tasting menus was available and no al a carte options existed. The experience started off poorly when the maitre d' saw we brought a bottle of our own wine. As avid wine collectors we are accustomed to paying corkage fees and do this frequently. We did purchase a bottle in addition to the one we brought but needless to say she was not happy. Ultimately the meal cost $250/person and automatically included a 20% service charge, despite marginal service. The food was good in many respects, a few highlights included the pate and the rib eye. I don't think we will return.

    This Beautiful small restaurant in the heart of Carmel knows what dining is all about. It's a tasting menu and the night we dined each course was better than the next! Can't begin to say how perfect it was from the amuse bouche to the chocolates at the very end. If this place was in Paris it would have 3 Michelin stars it's that good!

    I booked my reservation (as well as a room at the hotel - a must go place) two months in advance. Even though I was attacked by seasonal allergies, I felt the extraordinary combination of flavors and ingredients. The wine pairing, a must, was excellent. Service and attention was second to none.     We thoroughly enjoyed dining at Aubergine in Carmel, California. We purchased the wine pairing and the wines chosen complemented the food perfectly. The courses were beautifully presented as well as delicious and we left feeling satisfied but not overly full. Each touch, like the homemade rolls and the cookies to take with us, as well as the opportunity to step into the kitchen and meet the chef, was special and memorable. We definitely will try and return.

    Jamie from Coi in San Francisco recommended this place. She said Michelin hasn't been down to review the restaurant yet. But...they will. The food was delicious...Dan...our server, was terrific. The $55.00 corking fee is to much. The wagyu filet from the Hokkaido region of Japan was like nothing ever before...incredible and worth it!

    My wife and I celebrated our anniversary and was very pleased that we got to experience the outstanding food and service. This is a small but exquisite venue. The Executive Chief is Justin Cogley who previously worked at Charlie Trotter’s in Chicago. He has created a very unique and wonderful menu. In my opinion there are only 2 concerns. They are the small size of the portions on the Tasting Menu and the cost of the meal. But, to our surprise we were full at the end and totally enjoyed each course with the paired wine. It is a meal we will never forget.
