Executive Chef Justin Cogley and Executive Pastry Chef Ron Mendoza prepare sophisticated modern California cuisine. With access to an array of outstanding local products as well as ingredients and artisan purveyors from around the world, Cogley and Mendoza focus on incorporating these elements into their ever-changing menus.The intimate 12-table Aubergine restaurant features an underground wine cellar that was constructed beneath the inn's courtyard to house the restaurant's 4,500 bottle collection. The wine list features great wines from around the world but especially wines from Monterey County.

The staff were attentive and gracious, the dining room is small but still airy and bright. Of course, the food is what you come for, and all we can say is that it was exquisite. The Tasting Menu is nine courses, each one a surprise. The attention to detail, flavor pairings and presentation were superb! Our dinner was complemented by the Sommelier wine pairings, a must! After dinner, we had the pleasure of meeting the Executive Chef, Justin Cogley so that we could thank him for a wonderful evening that we will never forget."

  • "We did a five course tasting menu at Aubergine with the matching wine pairing. Although all of the food dishes were beautiful to look at, some were not very satisfying. I felt the dishes were trying too hard to be unusual. On the other hand, the wines were amazing and very thoughtfully selected. The choices were not what you would normally expect, but always spot on. For instance, a cru Beaujolais, a Moulin-a-Vent, to go with the beef course which had a huckleberry sauce. It was prefect. My husband & I were in the wine business before we retired, and loved all the wine selections; champagne from a small grower/producer, an amazing dry German rosé, a French Chenin Blanc, a California Rousanne, and a fortified dessert wine from Champagne."

We were in town for Monterey auto week and were disappointed to see that one of two tasting menus was available and no al a carte options existed. The experience started off poorly when the maitre d' saw we brought a bottle of our own wine. As avid wine collectors we are accustomed to paying corkage fees and do this frequently. We did purchase a bottle in addition to the one we brought but needless to say she was not happy. Ultimately the meal cost $250/person and automatically included a 20% service charge, despite marginal service. The food was good in many respects, a few highlights included the pate and the rib eye. I don't think we will return."

The Executive Chief is Justin Cogley who previously worked at Charlie Trotter’s in Chicago. He has created a very unique and wonderful menu. In my opinion there are only 2 concerns. They are the small size of the portions on the Tasting Menu and the cost of the meal. But, to our surprise we were full at the end and totally enjoyed each course with the paired wine. It is a meal we will never forget."

Portions were a bit on the scarce side, however, and made the overall price--already pretty steep--feel a bit over the top. It was also a bit annoying to have additional up selling of special versions of some of the dishes (eg, special Japanese steak that was $32/oz with a minimum portion of 4 oz!) when the meal was already quite expensive. The wine list was extensive and excellent."

Yes it is expensive and the serving are small, but each one has incredible mix of flavor, texture and taste. The wine pairings are always right on. We have never left disappointed or feeling we had paid to much. Go and enjoy a unique dining experience."
