A wine list with a reasonable selection of California wines is offered at low, medium and medium high price points. We started with the mushroom toast and seafood chowder. the mushroom toast was simply the best dish we had in Paso. The chowder, a white based chowder, was well balanced, rich and hearty.
For entrees we selected hangar steak and rabbit paella. Artisans take on Paella is complex and delicious. Highly recommended.
The wine list highlights the best of the best local wines. The mixed drink list reinvigorates drinks from the '30s and 40's. We had shrimp caesar salad, PB&J meatball and gnocci and pistachio cheese cake with cherry compote.
I really love how the shrimps are grilled perfectly in the salad and the meatballs were and veggies matched so nicely. Our server was knowledgeable about the entire menu and very patient (one of our party has several food allergies and she competently determined which entrees could most safely be eaten). Our party of three ordered Caesar and mixed green salads--a great mix of flavors/dressing. Our entrees included boar, scallops and steak--all cooked/presented to perfection. Desserts divine! I ordered the meatballs with gnocchi as an appatizer which was delightful. Our entrees were the Wild Boar fillet with pork cheeks and the Rabbit paella,both of which were exotic, delicious and totally amazing!!.
Topped off with a Blueberry Crisp that made me wished I hadn't cleaned my dinner plate. Service was terrific and attentive without hovering.

She was absolutely delightful, and even arranged our cab back to the hotel. Can always count on them to do something unusual. While my wife had halibut (done very well, but no surprise they do fish very well), I had a tenderloin of wild boar with pig's cheek. Never had either before, but both were excellent - tender and juicy and tasted wonderful. The prix fixe menu was very good (the regular menu was also an option), and the service was great. The food was very well prepared, with fresh flavors and excellent ingredients. Even though it was Mothers Day, the service was unhurried, friendly and professional. Heard some good things about Artisan from a relative. My husband and I were not disappointed. I had the Rabbit Paella, which was delicious, but my husband hit the jackpot with his Abalone Tostada starter and Wild Boar, Pig Cheek over Fennel Risotto entree. He put in the top ten meals that he's ever had, and we've dined in many fine restaurants internationally. We both paired our meals with wine tastings. A nice touch was an descriptive sheet under the three choices. We hadn't been to this wine country in a number of years. It was amazing then, and just as awesome when we returned. The mushroom toast small plate was absolutely unbelievable. The dessert alone is worth stopping in for. The s'mores are unlike any you've ever eaten, guaranteed! The pistachio cheesecake with cherry topping was great as well. I'm not crazy about the wine selection, but we split a bottle of Shramsburg Blanc de Blancs and were very satisfied with it. I'd recommend this place to anyone stopping in Paso Robles. At too often, the music got out of hand, both because of the volume and the choice of music. As I looked around the room, Black Sabbath didn't seem like it would have been the first choice of most of the patrons. To the credit of the manager, he did bring the overall level down when we asked.

ExceptThe food was beautifully presented except for a salmon entree, which was ordered "cooked through>" It looked burnt on the top layer. My husband does not complain so it was not sent back. The other entree, scallops and shrimp was divine!. The only negative for this restaurant is the noise level. It is very high to the point of being unpleasant. However, the restaurant is moving to a new location on the town square (a couple of blocks from its present location) in a few months. But the timing of the service seems to be their achilles heel. A first course will come out immediately, sometimes before a wine glass is even filled. And then there is a very long wait for the main course, easily 20 minutes. If you do not order a bottle of wine, you may or may not have a 2nd glass of wine in time to enjoy your steak. One thing that I have noticed is that the appetizers are smaller than most places, for the price anyway, most places you can share, not here... They are pretty good nonetheless. Another thing worth mentioning is that more than one time I have said, this looks nice, tastes good, but isn't easy to eat, so maybe that's something the chef should consider? Other than that, it's very good!
