As others have said, the servers who are poor at English really can't explain the dish so I demanded that our head waiter explain each dish. We ended up with a phenomenal dinner as a result. Service, overall, still isn't the best of the best but it's not bad either. long waits on cocktail refills from a slow bar and refills on water weren't timely either.
All in all, next trip back to NYC, i'd love to eat there again.5/15/2013 12:00:00 AMGemThe new Nordic cuisine is all the rage nowadays, and surely thousands of New Yorkers would give an arm and a leg to go experience it there. I can't say how Aquavit compares to Noma, and Aquavit probably doesn't want to be - but they engage the same flavor profiles that everyone seems to love now - and should. Pickles, alliums, dairy and bitter herbs were all huge features of the Aquavit menu, and I loved the way they enhanced and/or countered the main component of the majority of the dishes I was served. To my mind, not enough people know how great this restaurant is. The food is eclectic, but amazing if you have a welcoming palate.

The 8 course tasting menu paired with wines is very expensive, but also very much worth it for a "once in a lifetime" gastronomic experience. Mini "surprizes" - tiny appetizers- are presented one after another before the meal, with unbelievable ingredient combinations and creativity we have never seen even at 5 star resturants. The tasting menu portions are just right, with all flavors complementing each other. Desert is fabulous- Artic Bird's Nest- (not real eggs), but frozen ice cream in a hand spun cracker web that is totally delicious. At Aquavit, each course was artfully presented and creatively conceived. This was somewhat expected as " Nordic foraging" seems to be the latest trend. What set this meal apart was that each and every item had a part to play not only in the presentation but to the tastebuds as well. The cocktails were a masterpiece in that each ingredient seemed to be measured to perfection. The bread was so hearty it could provide sustenance for a month in a Nordic winter. The broth surrounding the poached quail egg was heavenly. The foie gras was absolute perfection.

We shared two great apps, the herring which was very good and the stunning grilled gravlax which was astoundingly good. It includes shaved fois gras which was roasted, frozen, and apparently shaved or microplaned; It had a great flavor that really complemented the dish (not just a gimmick--it worked!). They also served an amuse bouche of white asparagus soup served over white asparagus that served with smoke(!). I had the squab which was one of the best I've had.
