A word from Alchemy
Alchemy is already a success for Michael and Debi Matassa, who owned the popular Fusion Grille in Fallston. While Michael is the executive chef, Debi is the sommelier and pastry chef. Alchemy's setting is polished and sophisticated but comfortable and welcoming. The menu offers various twists to traditional dishes and other creative fare.   • "We left unhappy. When we arrived the table was not ready. We were told that half of our party could go to the bar, but not everyone because the bar was too small. The rest of us waited outside. We were offered drinks, by the hostess, while we waited. Four of us ordered a drinks and had to drink them in the small vestibule out front. We incorrectly assumed this was complimentary because of our wait. When our bill came we were charged 10 dollars each drink. We asked the hostess about this, but was told "I never said they were free." We asked to talk to the owner,but we were told that she was "busy working on a menu." It is hard to believe that the owner could not take two minutes to talk to patrons. We will not be back."

  • "Hello, I must say my boyfriend and I had our taste buds tantalized during dinner. The mussels were good. Totally enjoyed the snapper and scallops. Only negative was the dining area. Not sure what one could do to make it more in keeping with the wonderful food. Liked the silverware too. We were upstairs. To be honest I was thankful not to be downstairs. It was a bit close and loud. Although I might have like to try a booth. They probably don't want to "waste" a booth on two though. Love booths! I understand they take up more room. Anyhow it was a bit pricey but the food was great and the scene was ok. I would go back on a special occasion only. Thank you!"

  • "Had not been back to Alchemy for more than a year. They are far less busy since the Food Market opened nearby. They now have a $25 prix fixe menu. The waiter said that the portions are the same BUT that was not true. Some of the same dishes from when they first opened are still on the menu. That is good and bad. Service was friendly but not particularly attentive. We had to ask for water more than once and had to ask for serving spoons for communal dishes. We were a group of 6. Hence, they added 20% tip automatically. You would think the waiter should/would give us a lot of attention given that amount of money... Overall, it is a comfortable, friendly place, with very good food."

  • "I picked Alchemy at random from a list of great brunch places in and around Balrimore. It did not dissapoint! Our party of three was running about 10 mins late and we were greated with a smile and seated right away. After we got our menus and glasses of water we heard two amazing words, "Bottemless Mamosas" The crab in ever order was fresh. We also had an onion allergy in our party that there was confusion about. The chef came out to go over how something was made and the item was freunded and a new plate was brought. They were very understanding and tactfull."

  • "Lunch was quiet and delicious. Had told host that it was a birthday; at end of meal a complimentary glass of champagne was brought to table with a candle on the base of the glass. Had crab bisque and a salad with salmon. Couldnt have asked for a better lunch. Ambience is so-so but there are booths if you want privacy."

Good thing we had things to talk about, but we were starving once the food go there. It was good, but several schedules were inconvenienced, not having planned on a two and a half hour brunch."

  • "I went for dinner with a friend that i had not seen in some time. We had an excellent dinner and our server was really nice and professional. My friend and I were chatting so long that the staff had to politely ask us to free up the table-which they were very nice about and we were in complete agreement with their request. They offered to move us to the bar and have a glass of wine on them. I will return without a doubt-so happy to have a place like this so close to my home."

  • "Very enjoyable and happening spot in Hampden. We found the menu to offer good variety, from red snapper to lamb shanks and beef. I had a vegetarian dish of stuffed Acorn squash! which was delicious but not filling enough. Others raved about their food and its a sure bet we will return. Our Server was attentive and courteous, without being intrusive. Lovely evening."

  • "Very nice folks running the place. Only complaint from my friend was the size of the entree of the shrimp & grits which should have been an appetizer. Very good crab cakes and we liked the pulled pork appetizer and the crab dip had big lumps of crab in it. Nice wines also. My second time there and one of the more pleasant spots in Hampden."

  • "We came here before a late party to get appetizers, drinks, and dessert. The scallop appetizer was amazing, the pork flatbread was tasty and light, and the drinks were delicious. We finished with our favorite ice cream from Taharka brothers, which is Honey Graham, we were very excited that was the seasonal ice cream that day. Everything was great, we'll be back."

We're fans of Chef Michael's and Debbie's from their Fusion Grill days and will drive anywhere they own a restaurant. Debbie's mastery of the front of the house and of the wine list is amazing, and Chef Michael is a miracle worker - "Alchemy" pretty much sums up what he does with food in the kitchen."

  • "As a regular diner at Alchemy, I love inviting my friends to dine in this creative restaurant. Depending on the day and the crowd, service can be a little slow, HOWEVER, that is because Chef Michael is busy making sure each dish is perfect. Portions are sizeable and can be shared. I LOVE the fresh herbs used in the dishes. I recently had the pork tenderloin with a fried duck egg,( recommended by the chef) and was blown away! Just tasty,tender and I never knew duck eggs were that large. Make no mistake, this is not a Hamden bar and grille but rather an upscale, innovative dining experience. It is expensive, but you get what you pay for! PS leave room for the great desserts. ( add a scoop of the salted caramel ice cream on anything!)"

Turns out it was also restaurant week with the 3 course fixed prix menu having really great choices for $30. We added cocktails and also wine. Food was delicious - somewhere between very good and excellent. Great service. Fantastic value for our hard earned $. Will definitely go back."

  • "A friend and I went to alchemy for restaurant week and we were not disappointed! The food was great and the portions were nicely sized (something that doesn't always happen on a fixed menu). The service was awesome- our waiter was constantly refilling waters and making sure we were doing ok. He had a great grasp of the menu and was able to help solve our indecision over what to order. The restaurant is on the smaller side (upstairs at least) so it got very loud very quickly and it became hard to hear just across the table but other than that it was a great dining experience!"

  • "Made a reservation weeks in advance, only to be place at a table next to bar seating. And by next to, means on-top of. When we expressed that we'd be more comfortable at another table, they told us that was not an option and how it was their busiest night of restaurant week. Ok, understandable, but our table cloth was also dirty. When the party from the bar seating pushed back their high chairs, they shoved into my lower seat and table. After starting off rocky, the food was decent. On the way out, the hostess made a comment to the OWNER about how we were the people who "were unhappy about our table". That comment was said loud enough for us to hear, yet the owner did nothing. It's a shame, but I will not be returning."

The Restaurant week 3 course menu selection was fabulous and we took our server's recommendations for our main entrees and he was spot on, both dishes were delicious! He was very attentive, friendly, and very knowledgable of the food and drink menus. We enjoyed our cozy dinner by the window watching the bustling W. 36th street of Hamden buzz by.   • "I am not sure if they overbooked for restraunt week but our server was very pushy to get us to order and people next to us were forced to leave because they didnt order in time because their friends couldnt find a place to park. Despite being pushy for our order we then had to ask for more water etc. Like they just wanted to get our order and get us out. The food was good but there needs to be improvement in service quality especially since the prices are high. It was our first time there and I think they could have made a better impression. We were there for my bf birthday and they made me feel like I couldnt just relax and enjoy my meal and time with my bf."

  • "Came here for restaurant week. We wanted to dine somewhere we hadn't visited before. The menu caught my eye on line. The crab mac and cheese was good. The braised short rib was interesting, wasn't really feeling the mixture that accompanied the rib. The dessert was very smaill and it had to much icing on the cake. The place is very small! It was a good place, but not great!!!!"

  • "I went to this restaurant with 5 other coworkers. I guess I probably ordered the right items from the menu so I really liked my food, and yet the rest had split feeling about the food. I will go back if they can speed up their services. Foods did come up quickly but it took a while for them to notice that we'd finished eating like 30 minutes ago and no one came up to ask if we needed boxes or the check. However, THE FOOD IS GOOD."

Nestled in between lots of restaurants, Alchemy doesn't stand out from the street, but one look inside and one taste of the food, and you'll see why this is the place if you love a chef's appreciation for seasonal food and palate.   • "Alchemy is a great spot in hamden! Really fresh fish and some of the best crab bisque around. Tuesday prix fixe's for a three course meal for $25 is a bang-for-your-buck find. They also have this fun tradition of wine-sday's-mention it while there for dinner on wednesday's and get a complimentary bottle for the table. Relaxed, chill atmosphere, in the quirkiest of neighborhoods with some pretty sooooolid grub! Also--really friendly wait staff that will be patient and help your narrow down your options, suited to your expressed tastes."
