A word from Ad Hoc
Thomas Keller’s ad hoc, which literally means "for this purpose," was originally intended to be a temporary restaurant, open during the development of a very different concept. But, due to its loyal following, it was decided that it must be a permanent fixture in Yountville. ad hoc serves a prix fixe, 4-course chalkboard menu, changing daily. Food is served family style and reminiscent of the comfort food with which Chef Keller grew up.

    As a fan of Keller, I have sweated through many of his complicated Under Pressure sous vide recipes and was excitedly anticipating this meal. I had wanted the fried chicken (usually 1st/3rd Mon) and was disappointed when the entree was ribs and links as my hubby hates fat. Ribs were good but fatty and links were great with a smokey sweet paprika flavor. Beans had a bit too much tooth and greens/corn cake were not anything special but rounded out the dish. Salad and dessert were okay and I appreciate the veggies were grown at FL garden, but living in N CA, I assume most people grow their own veggies or at least get them at farmers markets. Opera cupcake cake component was dry but coffee buttercream frosting and roasted candied hazelnut was nice. Best pair was Humbolt Fog Cypress Grove cheese paired with a mineral 2011 Robert Foley Semillion. Crab cake was great-crispy and chock full of crab. Portions are huge and we had enought for next nights dinner.

    My husband and I had a late Saturday evening reservation. They ran out of the main course and add-on seafood and substituted sub-par meat. The couple next to us sent his meal back. We felt very rushed as we were asked if we'd like our salad before ordering a cocktail or glass of wine. Not being a red meat eater, I was able to have the fish option that wasn't communicated in the first place by the server. My meal of salmon was very good but my husband's tri-tip was really disappointing. Not the expected TK quality were were anticipating. Very unfortunate timing perhaps. Winengoodjunkies

    The one real restriction is the "community" menu - everyone gets the same thing. There is always an "added" item - this time, fried chicken livers with spicy jelly; last time, pork belly - and you can request special things if you have a dietary restriction. Overall, the food is good, if not great. The salad was terrific. The steak was a bit wonky - wasn't expecting red meat, and temperature wasn't what we requested. It gets expensive fast. Wine pairing is probably best shared rather than everyone gets their own. But based on the crowd, they're definitely not hurting for business.

    It was our first time to Ad Hoc. Four course meal served family style. Can't say enough good of our server, Alex. First round - salad was superb, very fresh diverse ingredients with lemon vinegarette dressing. Second round (Pt. A) - ordered the optional roasted bone marrow. Fabulous!! Rich, well presented with tasty croutons upon which to spread the marrow. Second round (Pt. B) - New York steak strips, onion rings, twice baked potato, and roasted beets. A lot of food! New York strips perfectly cooked! Potato, beets, i.r. ok, nothing spectacular. Third round - the wierd round of the whole meal - a small platter of cheddar cheese (very good quality), Virginia roasted peanuts (shelled), and miniature dill pickles. Just couldn't figure out the flavor rationale of the 3 together. Finally, fourth round - a pancotta custard with oreo cookie crumb. Delicious! Could've eaten 3 of them myself! Last word - our whole experience at Ad Hoc was very good. Main drawback was the ambiance. The piped in music was so loud that it almost made cross-table conversation impossible! Why? In my opinion, that was an easy remedy. Turn the music down! But, enough negative. Loved our server; great coffee service afterward; price reasonable; will hopefully come back.

    My husband and I had dinner at Ad Hoc for the first time on Monday night and were not disappointed. We could only get a 9pm which was a little late for all the delicious food we ate! I wanted to go on a Monday night as they served fried chicken. It has to be the best fried chicken we have ever had and I look forward to going back when next in Napa. The service is great and very friendly.

    Very good food, was a bit tricky to get into. The menu is fixed, but different, each night. So you have to roll the dice some when booking a reservation. Dinner was southern inspired the night I went. Fried chicken, collard greens, biscuits and gravy, with cheddar bacon grits. All in all the food was amazing. My one criticism was the quantity! The waiter commented each guest would get roughly half a chicken. Waaay too much, especially at a nicer place like this. Expectations will be the portions would be a tad smaller. I would suggest the throttle back the chicken and maybe go longer in another area.

    Came in very excited to hit one of the hyped up Yountville hot spots and turns out it is pretty regular. I usually like prix-fixe menus because they offer some inventive stuff that you most likely would not regularly choose. Turns out I would not have chosen this either. Bean soup was fine, bland as you always know it will be. Heavy heavy beef short rib - felt like it was mass produced where I would have thought a prix-fixe menu's main feature would have more attention paid to it. Regular cheese, honey is obviously nice but still, with all the great cheese in and around Napa you should be shown something more unique. All for the ice cream though, except for the fact that the meal was so heavy that it was tough to pile that on top. Meh.

    Our meal was fantastic. We dined on a Sunday night and had the following, white bean soup, lamb shank, and a sundae. The soup, while I was at first suspicious was very good. But nothing could compare to the lamb shank. It was a very hearty meal and came out in an iron skillet pan. The sheer size of each shank was something to talk about... and then we tasted it. It tasted better than any review could have described... tender, flavorful, fall off the bone, accompanied with cut potatoes and a reduction sauce - top notch without a doubt. We were so full we couldn't even eat the cheese plate (they wrapped it up for us to take though), so we skipped right to the sundae. The sundae was good, but couldn't compare to the lamb shank.

    The restaurant was certainly lively. I though the noise level was very high and the temperature of the restaurant was too cool. It made our delicious food cold quickly. Those were the only negatives. The service was outstanding. I can't wait to visit Napa Valley and Ad Hoc once again!

    great concept with fixed price single option for menu of the day ... not cheap and wine pairing seemed expensive, though decent wine list had plenty of options and you got plenty of food (with most people seeming to take home the left overs).     Ad Hoc delivers wonderful, farm-to-table food in a pleasant, warm atmosphere. You feel like a local dining here. Best enjoyed slowly with a couple of bottles of wine - come hungry as there is an abundance of several delicious courses and you need to take time. Take a designated driver so you can do this! My friend is a chef and she raved about the courses.

    We had a wedge salad, spicy fried chicken, beef brisket, cheese course and pecan pie. We also did wine pairings which was only $40! Everything was so delicious and the service was outstanding. The only reason I didn't do 5 stars was because the brisket we had was very fatty.

    With the Thomas Keller name & the French Laundry connection its a shill restaurant. Can’t get into the French Laundry try ‘ad hoc’. That’s what I did. I found a Fodor review for Ad Hoc in its choice list. The first course iceberg lettuce with fried bits on top & forgettable dressing was silly. The main course and cheese and crackers 3rd course were ok – nothing memorable. The 4th pecan pie, tasted good but was informed by companion, a baker, the crust was store bought (she could not get over that). After spending $300 dollars with tip, it was a HUGE HUGE disappointment!!! Our lunch at –Market– in St Helena was the great food experience I was looking for! Say NO to Ad Hoc and Fodor’s for an uninteresting, dull, and boring dinning experience.

    What I like about Ad Hoc is the food and the service. I have been to the restaurant twice now and both times the food was absolutely delicious. However, the thing I dont like is you don't get a choice in what you eat. I am pregnant this time going to the restaurant so I had to tell them ahead of time all the food restrictions I have. The restaurant was very good about it and everything on the menu that day were things I could eat. I appreciated that very much. My little two year old went with us and we opted to get him the $8 butter cheese spaghetti dish instead of paying for him as a full adult. He loved the noodles and he tried a little bit of everything we ate (tender pork ribs, shrimp, rice, veggies, cheese, and dessert).

    Enjoyed the tasting menu with wine pairings. Our entrée was roast chicken...which both my wife and I said was the best chicken we had each ever had. Service was great, wine explanations were dead-on, and we just really enjoyed ourselves. This is not French Laundry, Jr.....but it doesn't need to be. It's a fantastic experience in the heart of Yountville. We loved it.

    We were a party of 4 and needed to add two unexpected guests. We were acomadated. Not easily. They are ridge at Ad Hoc. The restaurant is pretty and the food was very good. You have to make sure you like what's on the menu cause that's it, unless you are a vegaterian. Kind of like going to a friends house for dinner. The fried chicken was fabulous and the extra of lobster mac n cheese was delectable. The side of beans fair and the sausage pepper apple potato good, except the peppers were a little too hot. I like hot food. All in all it was a favorite and I look fward to dining there again.

    We were there for the Monday set dinner of the Buttermilk Fried Chicken! It was the best fried chicken I've ever had. We kept it in our cooler and had it for leftovers and it was still delicious!! I have his cookbook and will try and recreate it (though I doubt I can!) The sides were not to our liking. It was served with and black bean and rice and a squash, sausage, jalapeno side which was way too spicy. Also, the dessert was red velvet cupcakes. I was looking forward to it all dinner but was very disappointed when I tasted it. It was dry and just so-so :( My husband said my cupcakes taste better! The Caesar salad was good. Overall I would go for the fried chicken again.

    We were intrigued by the fixed menu and the offering for a particular day, and lucky to score a table. The food was incredible, everything was well explained and the service was perfection. We brought own bottle of wine, which with a small corkage was fine with them. We enjoyed the evening so much, we actually closed the place down. Talking to the manager on the way out we discussed the next evenings dinner and were so excited, Fried Chicken, lobster Mac and Cheese, we asked him to reserve for us the next evening. It was the same incredible experience. Will come back for sure next time we are in Napa Valley.

    We live in Napa Valley, so we have we lots of great options, but when my husband asked where I wanted to go for our anniversary this year, I instantly chose AD HOC. We have been there several times, and it totally lived up to my high expectations once again. I love the excitement of not knowing what's for dinner until we get there.     Yountville is filled with wonderful food and wine, so be sure to try Ad Hoc for a casual evening of delicious and bountiful prix fixe fare. The food is exceedingly fresh, beautiful, and deliciously prepared-wonderful fall salad w/ walnuts, local cheese, and persimmons; fabulous smoked & flash-fried chicken wings w/ smoked & perfectly grilled brisket,miniature baked sweet potato w/ creme fraiche; local cheese course w/ housemade toasts and jam; and dessert=sundaes w/ homemade vanilla bean ice cream, 3 excellent sauces, & perfect toppings. Beer and wine selections are available, but we chose our own & all were delicious accompaniments. A great, warm atmosphere w/ excellent food and friendly, knowledgeable staff...now go, enjoy!

    We were excited to dine at Ad Hoc. We didn't realize the restaurant serves only prefix meal....I'm not a big fan of prime rib, which was featured that night. We ended up leaving. Nothing against the place, but they probably should be more clear how they work. Just FYI.

    You don't have to be adventurous to trust the chef's tasting menu here. The food is Sunday Sunday supper at it's best served family style and without attitude. We were there on prime rib night. It came served with horseradish mashed potatoes, wilted spinach and roasted carrots. I would never have ordered that on a menu where I had choices and it was straight up delicious. The service was friendly and knowledgeable and nice. We will definitely be back.

    The food was good, but was expecting more given it's pedigree. I was so cold in the restaurant, I wrapped a towel from the car around my shoulders. Many women had their jackets on. Wish I would have had mine. Redd, next door, was head and shoulders above in the taste department.

    Food was excellent. Prime rib was on the menu along with salad, roasted carrots, mashed potatoes, pots de creme for dessert along with a cheese plate. Servings were very plentiful. Great place to go if you enjoy the fixed menu. We enjoyed immensely and look forward to returning.

    This restuarant came highly recommended, but I was disappointed. The dining room was so loud we could not hear the waiter and when we asked him to speak louder he just gave up. For some reason we kept receiving enough portions for 5 people even though we were clearly a party of four. The warm potato salad was amazing, so I had high hopes for the chicken caccittore. The chicken was a little dry and highly salty, maybe it was brined? The best part of the experience was the company of great friends.

I don't know what kind of chef would want to put his/her name on this kind of food. only reason is if they are driven by the profit motive. food had no soul, technique or character. this is mass produced food at its worst. give me White Castle any day over this nonsense. This food is produced by someone who is so mired in technique snd food prep mechanics that they have lost track of what food should actually taste like...

    A relaxed, modern atmosphere; young, energetic staff; and wonderful, creative food served family style. The menu describes the evening's fare, no selection, other than beverages and, possibly, an add-on dish. The night we dined recently the menu included an add-on lobster risotto. Fresh crusty bread is from the Bouchon bakery. The opening course was a fresh Romaine chop salad with beets, radishes, crispy proschutto; the main course: tender pork loin on creamy calliflower mash with apple (+Calvado?) reduction, which combined exquisitely with the meat juices--all these flavors together: Magnificent! The risotto played second fiddle, despite a generous amount of lobster meat. A cheese plate followed and dessert closed out this memorable meal.

    We went to Ad Hoc to celebrate my wife's birthday. The service was very prompt and professional. The food was great, though not mind blowing. Since everything is served family style, it is sort of like going to your grandmother's house, if your grandmother is also a fabulous cook with an awesome wine cellar.

    The menu that night was New York strip with $18 lobster supplement. The steak was fine, nothing special though. The lobster was either overcooked or previously frozen -- it had lost most flavor and its texture was fading. Wine selection was good and the waiter pointed us to a small batch syrah that was excellent.

    Thomas Kellers other place is AdHoc. They have a 4 course Prix Fixe menu for each day and the only choice you have is whether to add the 1 or 2 side dishes. The day we went , it was Ceaser salad ( good, wiht extra dressing, but no anchovies) NY strip steak also good but not great, the blanched greens were good, but the polenta mash with mushrooms and parmesan cheese was just too mushy for me. We had ordered the extr side of veal sugo with noodles which was goo. After that we had cheese and crackers and a apple cupcake. Service was brisk and seemed rushed

    Had a great night at Ad Hoc. Fried chicken, lobster rolls on crispy brioche, Brussels sprouts, Mac n cheese, salad and cheese course. All food was awesome, perhaps specially so as Chef Keller was dining that night!
